Goji Berry White Chocolate Chip Cookies

I think the worst part about planning a wedding is waiting for the RSVP’s to come back in. Whenever I receive a wedding invitation, I usually send it back within the first week after receiving it. Well, mine have been out for over three weeks and I only have 50% of them back! The longer it takes, I’m sure the more likely they’ve been forgotten about.

I’m not one to stress about wedding details, but I think I’ve just become more impatient than anything. I still have to put together the seating arrangements! So far, this whole wedding this has actually been quite laid back. We’re more focused on the bar than anything. The countdown to the bar is only two weeks!

While my DF is studying, I’m baking. I’m in the kitchen all day trying to figure out what to make with the new ingredients that come in the mail. This time, I was sent some goji berries from Oh Nuts! This was the first time I’ve ever had goji berries and I was a bit caught off guard with the taste.

You’d think that since they were berries, they’d be sweet like strawberries, blackberries, and blueberries. Nope! They’re actually quite bitter and have a strong aftertaste. They start out okay, but then have such a strong taste afterward that leaves you feeling tricked.

I threw them into some cookies to see if the the dough and white chocolate chip could help with the goji flavor. No such luck. Baking them in the oven in cookie dough doesn’t change or mute the berry taste at all.

Let’s just say goji berries are an acquired taste, kind of like pickles and mustard. You have to enjoy eating goji berries alone in order to like these cookies. Otherwise, it’s a lost cause.

The cookie itself, however, is wonderful. Sub the goji berries with craisins, raisins, nuts, or just about anything else and you’ve got one solid cookie.

Recipe adapted from Averie Cooks. The only thing I did differently was sub the cranberries for goji berries. Stick with the cranberries. 🙂

Goji Berry White Chocolate Chip Cookies

Ingredients

  • 1/2 cup unsalted butter, softened (1 stick)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 2 tablespoons cream or milk
  • 1 1/2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup bread flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt, optional and to taste
  • 1 cup dried goji berries
  • 1 cup white chocolate chips

Directions

  1. Cream together the butter and sugars
  2. Add the egg, cream, vanilla, and beat on medium-high speed until light and fluffy, 4 to 5 minutes. Gradually mix in the flours, baking soda, salt, and mix until just combined.
  3. Stir in the goji berries and white chocolate chips. Cover the dough and refrigerate for at least 1 hour.
  4. Preheat oven to 350°F.
  5. Roll cookie dough into tablespoon sized balls and bake for 8 to 10 minutes.

Root Beer Float Cookies and a Giveaway

Whoa mama… These cookies taste exactly like root beer floats in cookie form. Thanks to McCormick and their root beer concentrate for making this cookie possible!

Did you know that root beer extract was one of Willoughby M. McCormick’s first products that he sold door to door way back in 1889? Yup, that’s right.. you read that correctly. There are no typos there. McCormick is celebrating its 125th anniversary this year!

In order to celebrate their anniversary, they started a program called Flavor of Together. It’s a yearlong initiative to share 1.25 million stories about how flavor both unites and defines people across the globe.

If you’ve never tried McCormick’s root beer concentrate before, you should know that the consistency is a bit thicker than say, vanilla extract. The moment you pop open that seal, the aroma of root beer floats lingers into the air and you are instantly taken back to popping open a glass bottle of root beer to pour over your cup filled with scoops of vanilla ice cream. It’s amazing how spot on it is.

These cookies are tame at first and it will get your guests wondering what that familiar taste is, but the after bite is where you’ll taste it. There will be no doubt in your mind that the cookie you just ate is a root beer float. The creaminess of the white chocolate chips are reminiscent of vanilla ice cream.

Root Beer Float Cookies

Yield: 2 dozen cookies

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 1 egg yolk
  • 1 tbsp vanilla soy milk (plus more, if needed)
  • 1/2 vanilla extract
  • 1 tbsp McCormick's root beer concentrate
  • 1 1/2 cups all purpose flour
  • 3/4 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • pinch of salt
  • 1 1/2 cup white chocolate chips

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter and both sugars.
  3. Add in egg yolk, soy milk, vanilla, and root beer concentrate.
  4. Gradually stir in the flour, cream of tartar, baking soda, baking powder, and salt until the dough comes together. Use more soy milk (sparingly), if necessary.
  5. Add the white chocolate chips.
  6. Use a medium cooke scoop and place rounded dough balls onto your cookie sheet. Bake for 12-14 minutes.

Day 10: Chocolate Cherry Chip Cookies

Day 10 of my 12 days of cookies: Chocolate Cherry Chip Cookies. Cherry chips are kind of hard to come by, but I found mine at Target during Valentine’s day. I bought a couple of bags to last me throughout the year. In case you can’t find it anywhere by you, you can also buy them online at Amazon.

I love how festive these cookies look. The white and red chips remind me of a candy cane, without the peppermint taste. Just like ninety percent of cookies on my blog, they’re extremely soft and chewy. I’m all about getting that perfect cookie wrinkle on top.

I don’t have to tell you again that this is my favorite cocoa powder. This is the Costco-sized jar now, folks. Things are getting serious.

Recipe from Picky Palate

Day 10: Chocolate Cherry Chip Cookies

Yield: 3 dozen

Ingredients

  • 1 cup butter
  • 1 cup white sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 3/4 cups flour
  • 1 1/4 cups cocoa powder (I used Rodelle)
  • 2 tsps. baking soda
  • 1/4 tsp. salt
  • 1 bag of Log House Cherry Chips
  • 1 1/2 cups white chocolate chips

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter and sugars until light and fluffy. Slowly add eggs and vanilla until well combined.
  3. Gradually mix in the flour, cocoa, baking soda and salt.
  4. Fold in white chips and cherry chips.
  5. Using a medium cookie scoop, drop by rounded spoonfuls onto the prepared cookie sheet.
  6. Bake for 9-11 minutes.
