Day 4: Double Chocolate Chip Cookies

Day 4: Double Chocolate Chip Cookies, because one chocolate is never good enough. It’s truly Christmas over at my house.. the Christmas tree is lit, I’m bundled up in blankets, and “Love Actually” is playing on my T.V. Oh, I’m such a sucker for this movie. The people, the love stories, the scandalousness, the heartbreaks… I can’t handle it. I’ve seen it at least twenty times and it’s still good.

A plate of cookies and a tall glass of milk are the perfect addition to Christmas movie watching. I ate a cookie the size of my face yesterday and couldn’t have been happier. Cookies can do that to you, you know. Calories don’t count in December (or the end of November).

I admit that I cheated a bit on these cookies because I used the recipe from my favorite chocolate chip cookies and added white chocolate chips to the mix. A brand new cookie with an old recipe, so you know these are already good.

You could sub all of the milk chocolate for white for those that are anti-chocolate. Yes, those people exist and I totally don’t judge! There are a lot more white chocolate lovers out there than you think.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 1 cup semisweet chocolate chips
  • 1 cup white chocolate chips

Directions

  1. Sift together the flour, baking soda and salt; set aside.
  2. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon.
  3. Refrigerate the dough for at least an hour. When it’s time, Preheat the oven to 325 degrees F (165 degrees C).
  4. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
  5. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Double Chocolate Cake Mix Cookies

November 30, 2014 by kim 1 Comment

It’s officially time for holiday baking! I la-la-love all of the extra holiday items that pop up on the shelves at the end of the year. There are so may desserts just begging to be made. I’ve always been a fan of the Pillsbury® products and they certainly don’t disappoint in the holiday department.

IMG_2955

Just look at their adorable sprinkles from the Funfetti Vanilla Frosting. The red and green are vibrant, wonderfully shaped, and hold up well in a 350 degree oven. I love the contrast that the bright colors bring against the Devil’s Food Cake Mix. Wouldn’t they look great on a plate for Santa?

IMG_2979

You can doctor up this cake mix into cookies and no one will ever know that they’re not 100% homemade! It’ll be our little secret. After all, we need all the time we can get during the holiday season.

IMG_2986

These cookies are full of chocolate flavor. I’d recommend using an oil that you like the taste of. I used extra virgin olive oil and the taste came through pretty easily. Perhaps a vegetable oil would be more tame? Or a coconut oil if you’re a fan of coconut flavor?

IMG_2989

I just rolled the tops in the sprinkles since decorating the bottom of a cookie seemed pointless to me. Who looks at the bottom of a cookie? I’m too busy gobbling it down. Here are some of the other Pillsbury products that you can find this holiday season:

Triple Chocolate Chunk Cookies #sundaefundae

August 10, 2014 by kim 40 Comments

smuckers-8

So there I was, just baking away in my kitchen one day. I had one cookie become extremely crispy since it was the last cookie of the batter. You know what I’m talking about… the one that has all of the extra creamed butter that didn’t quite mix in with the rest of the batter. It wasn’t pretty enough to give away with the rest of the cookies, so I decided to crumble it and put it on top of my sundae. Ohhhhh yeah. Best decision ever.

smuckers

These are what the cookies look like when they’re not burned. Soft, chewy, and truly lovely.

smuckers-14

But when they’re crumbled on a sundae? That’s perfection.

smuckers-13

Smucker’s® has a couple of new ice cream toppings to help you with your #sundaefundae. There’s Simple Delight™ Toppings in Salted Caramel, Chocolate Coconut, Dark Chocolate and Hot Fudge, Magic Shell® Chocolate Pretzel and Rainbow Sherbet, and Microwavable Hot Dark Chocolate Topping.

I used the Magic Shell Chocolate Pretzel and watched the topping harden in front on my eyes as I slowly poured it on top of my mint chocolate cookie crunch ice cream.

smuckers-10

All of these toppings are great for an ice cream social this summer. There are plenty of flavors to choose from so everyone can take their pick. I also added a bit of whipped cream on top because no sundae is complete without whipped cream.

smuckers-7

Some other great sundae toppings include crushed peanuts, sprinkles, M&M’s, cut candy bars, chocolate chips, and even fresh fruit!

smuckers-3

You could even use these cookies and cut them into fourths for dipping into your sundae and hot fudge.
