Day 6: Soft Gingersnap Cookies with White Chocolate Chips

Day 6 of my 12 days of cookies: Soft Gingersnap Cookies with White Chocolate Chips. I never liked molasses cookies when I was little, but it’s something that definitely grew on me with age… just like pickles, mustard, and jalapeños. Molasses is definitely a “grown up” food, don’t you think? There’s no molasses flavored baby food jars.

The white chocolate balances out the strong flavor of molasses by giving it a smooth, sweet taste. White chocolate is underestimated, if you ask me. People hype over the different percentages of milk, dark, and bittersweet chocolate, but no one ever bothers to look into the details of white chocolate.

Did you know that I couldn’t even eat chocolate when I was little? I was allergic to it! I used to get bloody noses from eating the smallest amount of chocolate, but that never stopped me from eating Crunch ice cream bars. I’d just pay for it later with a box of tissues. White chocolate, however, was fair game. Since it was the only “safe” chocolate I could eat when I was little, I ate a lot of it.

Now that I’ve grown up (just a little), I’ve outgrown my childhood allergy and can eat as much chocolate as I want without side effects. I often forget how much I take eating chocolate for granted. It sounds silly, but it’s true! I also almost always choose dark chocolate over white chocolate since I didn’t eat it when I was younger, but sometimes eating white chocolate takes me back to my wee elementary school days. Recipe comes from a B*tchin’ Kitchen.

Soft Gingersnap Cookies with White Chocolate Chips

Yield: 3 dozen

Ingredients

  • 1 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1/2 cup Grandma's molasses
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 2 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 1/4 teaspoons cinnamon
  • 1 1/4 teaspoons ground cloves
  • 1 teaspoon ground ginger
  • 2 large eggs
  • 3 1/2 cups all-purpose flour
  • 1 1/2 cups white chocolate chips

Directions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, cream together butter and sugar. Add in the molasses, canola oil, vanilla extract, baking soda, salt, and spices, and beat until well combined.
  3. Mix in the eggs one at a time, beating well after each addition.
  4. With the mixer on low, gradually add in the flour until just combined. Stir in the white chocolate chips. Using a cookie scoop, form the dough into balls.
  5. Place on cookie sheet and bake for 7-9 minutes.

Day 2: White Chocolate Snickerdoodle Pudding Cookies

We’re on Day 2 of my 12 Days of Cookies! I can’t believe how fast this month is going. I’m busy trying to stay on top of all of the projects and posts that I’ve got coming up for you guys this month. It’s no easy task when working with the frantic, holiday-traveling crowd!

I’m still currently hunting for the right wedding dress. I’m not even picky– I just haven’t found one that fits me right (and I’ve only been dress shopping once so far at a second-hand bridal shop). I have two more dress appointments this month so I’m crossing my fingers that something catches my eye without breaking the bank!

Cookies are my way of escaping from all the chaos. Just one bite from a scrumptious cookie and it’s like I’ve traveled to another place where I can take a quick breather. I will always say yes to a cookie. Always.

These classic cookies are revamped with a box of vanilla pudding and white chocolate chips. That creates quite the holiday cookie, if you ask me. I really love all of the desserts available this time of year.

If you like snickerdoodles, then you’ll fall in love with these. They would also be a great cookie for kids because they’re simple and there aren’t any crazy ingredients. Because of the pudding in the batter, the cookies will remain soft for a couple of days. I don’t think that I’ve ever met a child who doesn’t like a soft cookie.

White Chocolate Snickerdoodle Pudding Cookies

Ingredients

  • 1 cup unsalted butter, at room temperature
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 3.4 oz. package white chocolate instant pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups white chocolate chips
  • 1 tsp. cinnamon
  • 1/3 c. cinnamon sugar for rolling

Directions

  1. Preheat oven to 350º.
  2. Cream together the butter and sugars.
  3. Add in the eggs and vanilla. Gradually stir in the pudding mix, flour, baking soda, and salt until just combined.
  4. Stir in the white chocolate chips.
  5. Shape the dough into balls and roll in the cinnamon sugar mixture.
  6. Place on baking sheet about 2 inches apart.
  7. Bake for about 10 minutes, until just browned. Let cool completely on baking sheet.

White Chocolate Chip Oatmeal Cookies

I worked a flight a while ago with an unaccompanied minor that was unbelievably comfortable flying. She was six years old and was more prepared for flying than I had ever been in my life. She had three books to read, paper and crayons to color, and her own personal DVD player tucked into her rolling backpack.

When she sat down, she stretched out like she knew the whole routine. Her hot pink princess backpack went completely underneath the seat in front of her and her books went into the back pocket of the chair, while she starting nibbling on her goldfish crackers that she brought onboard. All of this was, of course, after she had buckled herself in.

Apparently, she was a frequent flyer since her parents lived in two different states and she would go back and forth between the two. I can’t imagine being six years old and knowing where and what to do on an airplane.

In fact, the first time I ever took a flight by myself as an unaccompanied minor was when I was in 5th grade. That’d make me ten years old. I remember the entire experience like it was yesterday because it was one of the scariest things I’d ever done.

My parents escorted me all the way to the gate and passed me along to the flight attendant. It was only a short flight, from Burbank to San Jose (about an hour flight) to go to Stanford’s volleyball camp for the summer with my cousin. I’ve flown on planes before, so I was always familiar with the atmosphere, but I never did it by myself. My mom always ordered the apple juice for me when the flight attendant came around.

I followed this stranger up the air stairs and took an aisle seat near the front of the plane. The flight attendant asked if I was okay and then left to finish her boarding duties. After a couple of people boarded, a monk happened to find a seat right next to me. I’m not entirely sure I even knew what a monk was in 5th grade, but there he was to my right.

After the flight took off, the monk started chatting with me. He asked me if I was Vietnamese, and when I gave him a positive response, I found out that he was too. He then followed up by asking if I could read Vietnamese and handing me a Vietnamese newspaper. Sorry man, I grew up in a 90% Caucasian city so it was hard enough to keep my speech let alone learn how to read Vietnamese.

He kept speaking to me in Vietnamese, asking if I was Buddhist and if I’ve ever been to a temple. He then gave me his business card to his temple and told me that I should come visit. Looking back on it now, that’s really creepy for a child. Like… really creepy.

The flight attendant only checked on me one other time to ask me what I wanted to drink, but besides that, she pretty much ignored me the rest of the flight.

As for the monk, he must have gotten tired of my yes/no answers because he put on sunglasses and went to sleep. I’m not joking you. Sunglasses! He didn’t talk to me again for the rest of the flight because he was out cold. No noise or turbulence could wake him up.

I was pretty traumatized from that experience and now that the roles are reversed, I ALWAYS check on my unaccompanied minors (UM)’s and make sure there are no creepy people sitting next to them. I talk to them and get to know the UM’s so they’re comfortable with me and letting me know if they have a problem. Kids are young, they won’t speak up for themselves so you have to protect them! Otherwise they’ll get an experience like mine and judge monks for the rest of their lives.

AllRecipes has never steered me in the wrong direction, and these cookies are proof of that. They’re a great staple cookie recipe for one without chocolate. I added pecans to mine, but you can feel free to omit it if you’re not a nut lover. It’d still be a great cookie without the pecans.

They look like hard cookies, but don’t fret. They’re nice and soft, like all the cookies I love so much.

White Chocolate Chip Oatmeal Cookies

Ingredients

  • 1 cup butter
  • 1 cup light brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups rolled oats
  • 2 cups white chocolate chips
  • 1 cup chopped pecans

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter and both sugars until smooth. Mix in the egg and vanilla.
  3. Gradually add in the flour, baking powder, baking soda and salt.
  4. Finally, add in the rolled oats, white chocolate chips and pecans.
  5. Drop by rounded tablespoons onto baking sheets. Bake for 10 to 12 minutes.
