It’s been a while, but I needed to post this recipe for me to refer back again and again. It’s arguably one of the easiest dessert I’ve ever made and the best part is there’s no turning on your oven involved over the hot summer! It’s a dessert that you can make ahead of time and serve whenever needed.

As you can tell, I’ve already made this recipe a couple of times (hence the different pans). I’ve made it for us, for gatherings, and even another time since the girls requested it. I’m actually surprised how much Ellie and Thea love it. There’s coffee, just a tad of rum, and all the things I did not care for as a child. Coffee was an acquired taste for me and I didn’t like the taste until I was in high school. Apparently, our kids are not the same as me.

It’s a dessert that the kids can easily help with. They helped dip the ladyfingers in coffee, spread the filling, and sprinkle cocoa powder on top. There’s really no wrong that you can do with this recipe.

I use Rodelle Gourmet Cocoa Powder with any recipe that asks for cocoa powder. The Dutch Processed, rich chocolate flavor is what makes my desserts. There’s nothing better.

Day 12: Flourless Chocolate S’mores Cookies

Day 12 of my 12 days of cookies; Flourless chocolate s’more cookies. I’m squeezing this last cookie in right in the nick of time. I made these today, but I was a little short on powdered sugar so my cookies didn’t come out quite as tall.

The taste was all there, though. I have to add confectioners sugar to my grocery list and remake these cookies ASAP.

Day 12: Flourless Chocolate S’mores Cookies

Ingredients

  • 3 cups confectioners' sugar
  • 2/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 2 to 4 large egg whites, at room temperature
  • 1 tablespoon vanilla extract
  • 1 1/2 cups bittersweet chocolate chips
  • 1/4 cup graham crackers, broken into pieces plus extra for topping cookies
  • 1/4 cup mini marshmallows, cut in half plus extra for topping cookies (I didn't cut mine)

Directions

  1. Preheat oven to 350 degrees F. Line two baking sheets with Silpats.
  2. Using a stand mixer, whisk together confectioners' sugar, cocoa powder and salt. Add two egg whites and vanilla. If batter seems too thick, add another egg white until batter is thick, but moist. If it's too runny, add more powdered sugar.
  3. Gently fold in chocolate chips, graham cracker pieces, and mini marshmallows.
  4. Place about 1 1/2 tablespoons of batter per cookie on the prepared baking sheet. Top each cookie with additional graham cracker pieces and marshmallows.
  5. Bake for 10 minutes. Let cookies cool completely before removing from the cookie sheet.

Day 6: Chocolate Sno-Cap Cookies

Day 6 of my 12 days of cookies is a special one since it’s part of Rodelle’s “Cookies with Rodelle!” They’re featuring lots of other cookie recipes this month, so make sure to check them out with the badge/link at the end of this post. These chocolate sno-cap cookies are made with Rodelle’s vanilla extract (as with all of the recipes on my blog) and their baking cocoa powder.

Instead of the usual chocolate chips, I found a bag of sno-caps in the baking aisle and decided to go with those. They’re basically chocolate chips with white nonpareils on the bottom, hence the name “sno-caps.” They look like snowy mountain tops!

Although, to be honest, they all kind of meshed into the dough and it looks like I just added some sprinkles into the batter.

These cookies are rich and chewy, with a whole lot of chocolate. 

As I was photographing these photos, I noticed a hand jumped into my frame and a cookie was stolen. Ellie is so quick and quiet that I didn’t even hear her come up behind me!

She was so happy that she successfully stole a cookie off of my photography plate.

After she took a bite, she realized that they were still warm out of the oven and yelled, “HOT!” Ah, kids. Maybe one day she’ll learn. 

Recipe slightly adapted from Cookies and Cups

Chocolate Sno-Cap Cookies

Ingredients

  • 1 cup butter, room temperature
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 2 tsp Rodelle vanilla
  • 2 eggs
  • 2 1/3 cup flour
  • 1/3 cup Rodelle cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 10 oz bag Sno-Caps

Directions

  1. Preheat oven to 350°
  2. Cream together butter and both sugars until light and fluffy.
  3. Mix in vanilla and eggs.
  4. Gradually stir in the flour, cocoa powder, baking soda and salt until just combined.
  5. Mix in sno-caps.
  6. Form dough into 2 tsp sized balls and drop on baking sheet.
  7. Bake 7-8 minutes until puffed and just set.
