Chocolate Chocolate Chunk Cookies

I try to never show up empty handed when I go to an event. Cookies are usually with me, but when I don’t have time to bake things, UncommonGoods is a wonderful resource for gifts!

Have you heard of them before? They encourage sustainability and are extremely pro environment. They sell handmade, recycled, and organic products. None of their items contain leather, feathers, or fur since they don’t want to harm any humans or animals. Not only that, but they created the Better to Give Program in 2001, which allows you to select a non-profit organization to receive a $1 donation from them at checkout.

They have gifts for everyone: your mother-in-law, teacher, best friend, neighbor, nephew, boss…. you get the picture. I admit, I even picked up a couple of items for Ellie from the “kids” category. I just couldn’t resist! I got her these foreign blocks in Spanish, mini happy mat for eating, and All Aboard books, just to name a few.

Chocolate Chocolate Chunk Cookies

Ingredients

  • 2½ cups all-purpose flour
  • ¾ cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1½ cups semi-sweet chocolate chunks (or chips)

Directions

  1. Preheat oven to 325°F. Line baking sheets with silicone mats.
  2. Cream together the butter and sugars. Add in the eggs and vanilla.
  3. Gradually stir in the flour, cocoa powder, baking soda, and salt until just combined.
  4. Stir in chocolate chunks/chips and mix until they are distributed.
  5. Scoop about 1½ tablespoons of dough per cookie onto your baking sheets, spaced about 2 inches apart.
  6. Bake for 14 minutes.

Avocado Chocolate Cookies

I am so excited to be living in California. That means I have access to the best avocados since they practically grow in our backyard!

I normally eat avocados with savory foods, but have you ever tried incorporating them into baking? This was my first attempt and it won’t be my last! The avocado replaces butter in normal cookies, creating a healthier way to eat dessert.
IMG_6423Rodelle‘s cocoa powder is a key ingredient in this recipe for the beautiful dark color and chocolate flavor of these cookies. My cookies turned out a little too gooey and wet, so I’ll have to give them another try to get a more cookie texture. Recipe from The Smoothie Lover

Avocado Chocolate Cookies

Ingredients

  • 3/4 cup avocado flesh (I used 1 1/2 medium Hass California avocados)
  • ½ cup honey
  • 1 egg
  • ½ cup Rodelle dark cocoa powder
  • 1/4 cup dark chocolate chunks
  • ½ tsp. baking soda

Directions

  1. Preheat oven to 350° F. Line a baking sheet with a Silpat.
  2. In a mixer, cream together avocado and honey on high speed until smooth. Add in the egg.
  3. Mix in the cocoa powder and baking soda.
  4. Stir in chocolate chunks.
  5. Use a medium sized cookie scoop to scoop out the dough onto the baking sheet.
  6. Bake for 8-10 minutes.
  7. Store in an airtight container in the fridge.

Thick and Soft Chocolate Peanut Butter Cookies

Happy New Year! Whoops, I let the time slip away from me and have completely forgotten to post! I’ll just blame it on pregnancy brain for now since I have a month left to use that as an excuse.IMG_6445

These cookies have no butter and no flour. I brought these to work and my co-workers ate them up! They loved that they were butter-less and flourless. It’s a healthier cookie that you can make to kick off your New Year Resolutions.

I have 0 resolutions for this year. As long as everyone is healthy, that’s all I’m hoping for!

Thick and Soft Chocolate Peanut Butter Cookies

Ingredients

  • 1 heaping cup creamy peanut butter
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1/2 cup dark cocoa powder
  • 1 teaspoon baking soda

Directions

  1. Cream together the peanut butter and brown sugar. Mix in the egg and vanilla.
  2. Gradually stir in the cocoa powder and baking soda. The dough will be a little crumbly, but should hold when pushed together.
  3. Refrigerate the dough for at least two hours.
  4. Preheat oven to 350 degrees. Line a baking sheet with a Silpat.
  5. Use a cookie scoop and place the balls of dough on baking sheet. Use a fork to gently press down each cookie and create a criss-cross pattern. Bake for 8-10 minutes.
