MorningStar Farms Buffalo Chik’n Patty
 Burger

With my DF’s picky palate, my cooking is pretty limited. I stick to the same meats with the same ol’ seasonings. We eat quite a bit of meat in my household, so I decided to change it up a bit with MorningStar Farms. They are always introducing new flavors and products, including Spicy Black Bean Burger, Mediterranean Chickpea Burger, Roasted Garlic & Quinoa Burger, Buffalo Chik Patty, and Original Veggie Sausage.

I started off with the Buffalo Chik Patty because I wanted my DF to eat the food without me having to convince him first. He’s very… stubborn when it comes to trying new foods. The best way to disguise it was to use it in a burger since it looks exactly like a chicken patty. Little did my DF know that his “burger” was actually meat free, vegan, and gluten free!

He took a bite and I questioned him what he thought. Since I was staring at him the entire time he was chewing to see if he noticed anything strange, he finally asked me what was in the burger. I told him that there was, in fact, no meat in the burger that he just swallowed. He was so surprised! The meat-only eater liked eating a meatless burger. Imagine that.

These Buffalo Chik Patties would be great in place of chicken parmesan. You could also cut them into strips and use them to top a salad or on a bowl of pasta. Actually, I would love using these in a spring roll and dipping them in a buffalo-mayonnaise sauce. I’m coming up with plenty of ideas just sitting here typing! Imagine all of the other possibilities that you could come up with.

I could slowly replace the meat in our meals and my DF wouldn’t even notice! That’s how close they are to the real thing. Since they’re so tasty, MorningStar Farms makes it easy to eat smart. Plus, all twelve MorningStar Farms veggie burgers have a great source of protein, just like meat.

MorningStar Farms Buffalo Chik’n Patty
 Burger

Ingredients

  • 1 MorningStar Farms Buffalo Chick'n Patty
  • 1 sandwich bun
  • half of a tomato, sliced
  • mixed greens
  • 1 slice of pepper jack cheese
  • couple dashes of Frank's Buffalo hot sauce

Directions

  1. Toast your bun and cook the chick'n patty as directed.
  2. Create your burger as desired, stacking all of your ingredients. Serve immediately.

Balsamic Bacon Grilled Cheese

I’ve always had a soft spot for grilled cheese sandwiches, no matter what time of the year it is. They’re simple to make, great to eat on the go, and tasty.

I’ll eat them as is, but I’m a sucker for dipping the ends in a creamy tomato soup.

This month’s hatchery box seemed a teeny bit different than the last two. It was packed in a smaller box (don’t worry, the contents haven’t changed.. they’re still wonderfully consistent).

Then, I read on their Facebook page that after months of testing, Hatchery has come out with a box that’s made from 100% post-consumer fibers! No trees were harmed in the making of your Hatchery box. The crinkle paper tucked away inside the bright red box is also fully biodegradable.

Not only does Hatchery support local artisans, they support the earth with environmentally-conscious materials. I can definitely support a brand like that.

In this month’s Hatchery Box, we have (from top to bottom, left to right):

  • Organic Blueberry Fruit Spread from Delta Blue Blueberries
  • Glicco’s Arrabbiata Pasta Gravy from Elbow Foods
  •  Motherlode from Murphy’s Mustard Company
  • Maple Flakes from Tonewood
  • Salmon Chemise Spice Blend from Two Snooty Chefs
  • Fig Balsamic Vinegar from O Olive Oil

I chose to use the fig balsamic vinegar for today’s lunch.

It added a wonderful sour taste that balanced out the creaminess of the cheese. Since balsamic vinegar is great for dipping breads in, it only makes sense that it would taste just as good drizzled on top of a sandwich.

The sample that I used had plenty for making one sandwich. In fact, I’m sure you could use one packet from your Hatchery Box to top off four sandwiches.

Balsamic Bacon Grilled Cheese

Ingredients

  • 2 slices of wheat bread
  • 1 teaspoon butter
  • 1 slice of muenster cheese
  • 2 slices of bacon, cooked
  • about 1 teaspoon Fig Balsamic Vinegar (or more, if desired)

Directions

  1. Spread butter on one side of both breads.
  2. In a skillet over medium heat, place one slice of bread with the butter side facing down. Layer the cheese and bacon on top, followed by the last slice of bread (butter side up).
  3. Let cook until brown, about 2 minutes.
  4. Carefully use a spatula and flip your sandwich, allowing the other side to brown as well.
  5. Once down, slice in half and drizzle balsamic vinegar on top.

Buffalo Chicken Pizza

Sometimes, miracles happen. In this case, it’s called buffalo chicken pizza. Oh lordy. It’s easy to finish this is one sitting (or maybe that’s just me?), but you should probably share with a friend or two.

I used Pillsbury’s Pizza Crust for the first time and was very impressed with how easy it was to roll out onto my baking pan. There was no tossing, stretching, or pulling. The dough didn’t stick together and I didn’t have to worry about punching holes through it with my claw like fingers. Simply unroll the dough and add on your desired toppings.

Frank’s buffalo sauce has always been around in our kitchen for every kind of meat, vegetable, or bread that you can imagine. My DF likes to douse it on practically everything. When you mix buffalo sauce, chicken, and pizza together, you’ve got my DF’s favorite foods in one dish. It’s a dinner that he’s guaranteed to love.

You basically just heat up chicken with hot sauce over the stovetop, let it cook together for a bit, and then throw it on top of your dough.

Add a little cheese.

And some chopped onions for color (and health).

And throw it into the oven to let it melt together.

Rectangle pizzas are far superior than circle pizzas. You get more manageable slices and extra crust on four pieces. That’s what I’m talking about!

It also reminds me of elementary school because we always got our class party pizzas from Little Caesar’s. I never ate that brand of pizza at home, so it was a treat every single time. Little pieces for my 6 year old hands. I was ecstatic to have a pizza slice that I could comfortable hold way back in the day.

I’m all about the edges and my DF prefers the middle… Another reason why we’re just two peas in a pod. Are you more of a crust or middle kind of pizza eater?

Recipe from Inspired Taste. Remember.. you have to cook the pizza dough for a bit prior to adding all of the toppings!

Buffalo Chicken Pizza

Ingredients

  • 1 (13.8 oz) roll Pillsbury Classic Pizza Crust
  • 3/4 cup buffalo wing sauce
  • 2 cups shredded cooked chicken
  • 3/4 cup grated cheddar cheese
  • 3/4 cup grated mozzarella cheese
  • 2 green onions, thinly sliced

Directions

  1. Preheat oven to 400 degrees F. Then, spray a baking sheet (with sides) with cooking spray.
  2. Roll out the pizza dough into a rectangle on the baking sheet and bake for 8 minutes.
  3. While the pizza crust bakes, add buffalo wing sauce and shredded chicken to a medium saucepan over medium heat. Cook, stirring occasionally, 3 to 5 minutes or until thoroughly heated.
  4. Evenly spread the buffalo chicken over the baked pizza crust then scatter the cheddar cheese, mozzarella cheese and sliced green onions on top.
  5. Bake pizza an additional 8 to 10 minutes.
