MorningStar Farms Buffalo Chik’n Patty
 Burger

With my DF’s picky palate, my cooking is pretty limited. I stick to the same meats with the same ol’ seasonings. We eat quite a bit of meat in my household, so I decided to change it up a bit with MorningStar Farms. They are always introducing new flavors and products, including Spicy Black Bean Burger, Mediterranean Chickpea Burger, Roasted Garlic & Quinoa Burger, Buffalo Chik Patty, and Original Veggie Sausage.

I started off with the Buffalo Chik Patty because I wanted my DF to eat the food without me having to convince him first. He’s very… stubborn when it comes to trying new foods. The best way to disguise it was to use it in a burger since it looks exactly like a chicken patty. Little did my DF know that his “burger” was actually meat free, vegan, and gluten free!

He took a bite and I questioned him what he thought. Since I was staring at him the entire time he was chewing to see if he noticed anything strange, he finally asked me what was in the burger. I told him that there was, in fact, no meat in the burger that he just swallowed. He was so surprised! The meat-only eater liked eating a meatless burger. Imagine that.

These Buffalo Chik Patties would be great in place of chicken parmesan. You could also cut them into strips and use them to top a salad or on a bowl of pasta. Actually, I would love using these in a spring roll and dipping them in a buffalo-mayonnaise sauce. I’m coming up with plenty of ideas just sitting here typing! Imagine all of the other possibilities that you could come up with.

I could slowly replace the meat in our meals and my DF wouldn’t even notice! That’s how close they are to the real thing. Since they’re so tasty, MorningStar Farms makes it easy to eat smart. Plus, all twelve MorningStar Farms veggie burgers have a great source of protein, just like meat.

 Burger

Ingredients

  • 1 MorningStar Farms Buffalo Chick'n Patty
  • 1 sandwich bun
  • half of a tomato, sliced
  • mixed greens
  • 1 slice of pepper jack cheese
  • couple dashes of Frank's Buffalo hot sauce

Directions

  1. Toast your bun and cook the chick'n patty as directed.
  2. Create your burger as desired, stacking all of your ingredients. Serve immediately.

Blackout Smoothie

I was never one to get into the logistics of smoothie making. Apparently, the order in which you blend your ingredients makes a difference. Usually, I just throw everything into a blender and pulse until I don’t have any more chunks. Is that not the right way to do it?

I don’t have a fancy blender or anything, so smoothie making is kind of a hassle for me. There’s a lot of shaking, moving, swirling, and banging going on in my kitchen. Lucky for us, our apartment has cement walls so I don’t wake anyone up while making my morning smoothie.

My future MIL and abuela found out that we don’t have a very good blender and actually gifted us a compact blender for Christmas. I can’t wait to give it a try!

This smoothie didn’t have a very pretty color, which is why I called it the “blackout smoothie.” Who cares what it looks like as long as it tastes good, right? 🙂

Blackout Smoothie

Ingredients

  • 1 1/2 frozen bananas, sliced
  • 1 1/2 cups vanilla soy milk
  • 2 cups spinach
  • 1 cup frozen blueberries
  • 1/8 cup slivered almonds
  • 1 tsp ground flaxseed

Directions

  1. Mix all ingredients in a blender until desired consistency.

Pumpkin Pie Oatmeal

So here I was, just sitting at my desk uploading pictures to my computer. The next thing I knew, I saw a little stream of smoke appear in front of my eyes. As the smoke started to rise to the ceiling, I looked down to see where the source was coming from– my camera!!

Before I could even think, I quickly grabbed it and the smoke stopped immediately. What the heck? I first examined the screen, the lens, and the battery compartment to see if that’s where it was coming from. No such luck. I glanced at my desk to see if something else could have caused the smoke. Nothing looked abnormal. Confused, I picked up my camera and that’s when I noticed it.

There was a tiny part on the rubber grip that had started to melt. It wasn’t anything major, but it was there. I put my hand out to where my camera had been sitting and that’s when it all clicked together. My cosmetic mirror had reflected the light coming in from my window and slowly burned my dear camera. It was totally a Sid moment from Toy Story. My poor, poor, camera. Mirrors are dangerous, people! Especially ones with 16x magnification power! Don’t leave them unattended.

Now that you’ve got my lesson for the day, this oatmeal recipe falls under one of my least used categories on my blog: vegan goods. In my opinion, it’s really difficult to make vegan stuff that tastes good. This oatmeal was just okay. The part that ruined it for me was the sweetener. I don’t think I’ll ever be able to get over that sweetener flavor (which is why I sprinkled sugar in the raw on top). I’d use real sugar the next time I made this, but if sweetener doesn’t bother you, then by all means stick to the recipe posted.

Pumpkin Pie Oatmeal

Ingredients

  • 1/2 Cup Whole Grain Oatmeal
  • 1 Cup Water
  • 1/4 Cup Unsweetened Almond Milk
  • 1/2 Cup Pure Pumpkin Puree
  • 1 Packet Sweetener (Truvia)
  • 1 Tsp Ground Cinnamon
  • 1 Tsp Pumpkin Pie Spice
  • 1 Tbsp chopped pecans

Directions

  1. Microwave the water and oatmeal together for two minutes. Stir in the almond milk.
  2. Mix in the pumpkin puree and sweetener.
  3. Top with cinnamon, pumpkin pie spice, and chopped pecans.
