Carrot and Kale Juice

Did you guys ever jump onto the juicing bandwagon? I did for about a week before I decided it took too much time. I preferred to have my juice fresh daily, so making a ton and then storing it in the fridge wasn’t going to cut it for me. Not only that, but my machine was pretty bulky to be left on the kitchen counter all the time. For reference, I own the Omega J8006 masticating juicer.

It surely is a wonderful machine that only leaves dry pulp behind. It’s very easy to clean, but there were a lot of parts. It’s also pretty darn heavy, but that could also mean I’m just weak. I think it’s a fun machine to pull out every once in a while as long as you have the storage space for it.

The juices that I normally drink tend to be on the sweeter and fruitier side, so I wanted this one to be more vegetable heavy. Since vegetables don’t really taste delicious on their own, I added some lemon to cut down the bitterness and apples for the sweetness. Kale is really hard for me to keep down, so covering up the taste worked for me. How do people drink that stuff on its own? Blech! If the kale taste is still too strong for you, throw in some ginger to the mix. This one was a winner, winner, chicken dinner!

Just make sure to thoroughly wash all of your fruits and vegetables before cutting them up and putting them into your machine. I did a half white vinegar/half water wash to make sure I got rid of all the bacteria. Or something.

Carrot and Kale Juice

Ingredients

  • 5 oz kale
  • 3 carrots
  • 2 apples
  • 1 lemon
  • 1 cucumber

Directions

  1. Cut each fruit/vegetable into manageable pieces and put them into your juicer.
  2. Make sure to stir the liquid before drinking!

Coffee Ice Cream Float

You guys know how much I love my Nespresso VertuoLine machine, right (and it’s on sale right now for $199!)? It makes coffee for me and espresso for my DH with the touch of a button. It’s just a tad too hot for me to drink coffee these days, so I decided to add a little spin and make it cold! It’s quite simple, really.IMG_7569   All you do is brew a cup, stick it in the fridge, and voi-la! You’re done! If you’re me, though, you know that’s not enough. Three scoops of ice cream should do it.IMG_7584

Mix it up with your straw and you’ll get that frothy goodness on top.IMG_7613There’s nine different coffee flavors and four different espresso flavors to choose from, so don’t let my flavor choice stop you. Mix it up with different coffee and ice cream flavors!

Coffee Ice Cream Float

Ingredients

  • 1 Vanizio pod
  • 3 scoops of coffee chocolate chip ice cream

Directions

  1. Brew your vanizio pod in the Nespresso Vertuoline machine. Refrigerate your cup for at least an hour.
  2. Once the coffee is cold, remove from the fridge and put in the three scoops of ice cream.
  3. Enjoy!

Overnight Coconut Mango Chia Pudding

Summer is among us, which means there’s plenty of fruit to be consumed! More fruit equals more summer recipes. My personal favorites are watermelon and mango. IMG_2891

As for the overnight coconut mango chia seed pudding, it surely is a beauty. Can you imagine diving in with a huge spoon? I loved using coconut milk and mixing it with fresh mangoes. I saved some for decorating on top, but let’s be real here…. the more mangoes, the better. The chia seed consistency is definitely an acquired taste and I’m still working on getting my taste buds there.

Overnight Coconut Mango Chia Pudding

Ingredients

  • 1/4 cup chia seeds
  • 1 cup coconut milk, light
  • 1/2 cup unsweetened almond milk, vanilla
  • 1 cup fresh mango, chopped

Directions

  1. Mix all ingredients together and store sealed in the refrigerator overnight.
