Chewy Coconut Cookies

Happy New Year! We brought in the new year with a relaxing vacation in Kauai. It was Ellie’s first time on the plane and she did great! As nice as it was being on an island for a couple of days, nothing beats sleeping in your own bed.

Nothing also beats baking in your own kitchen and knowing where everything is located. Am I right? IMG_7542

These cookies are subtle, but not too subtle. My dad loved them the most. He’s a coconut fiend. They’re chewy and strong, meaning they won’t break apart if you stack them or put them in a ziploc bag. I like cookies that can hold their own. I also like that they didn’t have any “chips” in them. There are enough cookies out there with chocolate chips, white chocolate chips, butterscotch chips, etc. Sometimes, you just want something simple and delicious.

Chewy Coconut Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/3 cups flaked coconut

Directions

  1. Cream together the butter and both sugars. Stir in the vanilla, coconut extract, and egg.
  2. Gradually mix in the flour, baking soda, and salt until just combined.
  3. Stir in the flaked coconut. Cover and refrigerate the dough for 2 hours.
  4. Preheat oven to 350 degrees.
  5. Spoon balls of dough onto lined baking sheet and bake for 11-12 minutes.

Day 7: Coconut Oatmeal Cookies

Day 7 of my 12 days of cookies: Coconut Oatmeal Cookies. I don’t bake with coconut enough. These were a hit with my family. My parents loved them!img_0249

There’s no chocolate in these cookies– just coconut and oatmeal. It’s simple enough, right?img_0253

Coconut Oatmeal Cookies

Ingredients

  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 cups flour
  • 2 cups oats
  • 1 cup shredded sweetened coconut

Directions

  1. Preheat oven to 350.
  2. Cream together the butter and both sugars. Mix in the eggs and vanilla.
  3. Gradually stir in the salt, baking powder, baking soda, and flour until just combined.
  4. Mix in the oats and coconut.
  5. Drop by rounded tablespoons onto lined cookie sheet.
  6. Bake 8-10 minutes.

The Best Lactation Cookies

IMG_1442This recipe is a little different, but they’re just as good as any other cookie. They’re different because they have ingredients that will help promote milk production in breastfeeding moms (that’s me!). I’ve always been curious about lactation cookies and wonder if they really work.

For me, I did see an increase in production overnight, but it could have also been the fenugreek or brewers yeast pills that I was also taking that day. Who knows.

Honestly, no one would be able to tell any difference in these cookies vs chocolate chip oatmeal cookies. They taste great, have a wonderful consistency, and don’t have any weird aftertastes. My DH didn’t dare try them, though, because he doesn’t like oatmeal. Shame, shame.

This recipe makes a lot for one person, so I froze some and bake a dozen a week so I can munch on them whenever I please. They bake wonderfully out of the freezer. Thanks How Sweet Eats for the great recipe!

I bought this brewers yeast powder for the recipe.

The Best Lactation Cookies

Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 6 tablespoons brewers yeast
  • 3 tablespoons ground flaxseed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 4 tablespoons unrefined organic virgin coconut oil
  • 1 1/2 cups sugar
  • 2 tablespoons almond butter
  • 1 large egg + 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups dark chocolate chips/chunks

Directions

  1. Preheat oven to 350 degrees F.
  2. Cream together the butter, sugar, and coconut oil. Mix in the almond butter, egg, egg yolk, and vanilla until well combined.
  3. Gradually stir in the oats, flour, brewers yeast, flaxseed, baking powder, baking soda, cinnamon, and salt until just combined.
  4. Mix in the dark chocolate chips.
  5. On a lined baking sheet, drop dough by 1 inch rounds. Bake for 10-11 minutes.
