Chocolate Chip Banana Bread

Are you guys tired of baking banana bread yet? I saw this on Instagram from Chelsweets and knew I had to try it immediately. When people claim and make something else “banana,” it ends up looking exactly like banana bread in different shapes. This one actually looked different.

Oh boy, it is different. These are dense, flavorful, and chewy. They’re much more of a bar than a bread. It’s what it claims to be!

I let them cool completely before digging in since I baked them at 10PM at night. They were so good in the morning! I bet they would have been better warm, but I’ll never know. Half of the pan is already gone since my DH and children (mostly DH) devoured it.

This is the first recipe I’ve tried from Chelsey, but I’ve been a long time follower of her on Instagram. She makes the most beautiful cakes!

Whole Grain Sweet Potato Banana Pancakes

I started searching for easy meals that I could make ahead of time for Ellie since I didn’t want to keep giving her pre-made or frozen foods. I wanted more fresh and nutritious foods. That’s when I stumbled across these baby pancakes. Ellie LOVES sweet potato, so I knew these were right up her alley.

I left my sweet potato as chunks instead of mashing them completely, but I’ll probably mash them the next time around.

Make sure your banana is very ripe! The one I used was pretty much browned 80% on the outside, which made the pancakes wonderfully and naturally sweet.

I served them to Ellie with just a drop of maple syrup and she couldn’t get enough.

She never finishes one pancake completely. She likes to nibble at all three until they’re gone, hence the bites taken out of each piece. Such an indecisive child.

This was her asking me for more pancakes after she took all the pancakes off of her plate.I froze the majority of the pancakes for later. They’re easily heated up from the refrigerator for 10-15 seconds in the microwave. From the freezer, I’d probably add another 5-10 seconds as they heat up pretty quickly. Whole Grain Sweet Potato Banana Pancakes

Ingredients

  • 1 small purple or orange sweet potato, finely chopped
  • 1 cup whole wheat flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 very ripe banana, mashed
  • 2 eggs
  • 1/4-1/3 cup milk

Directions

  1. Place the chopped sweet potato in a microwave safe bowl and fill about 2 inches with water. Microwave for 6-7 minutes. Let it slightly cool and then drain. I left my chopped, but you can cook and mash it more if you wish.
  2. In a mixing bowl, stir together the flour, cinnamon, baking powder, vanilla, banana, and eggs. Add the sweet potato and stir to combine.
  3. Mix in enough milk to make a pourable batter.
  4. In a griddle over medium heat, melt a sliver of butter.
  5. Pour about 2 tablespoons of batter at a time and cook each side until lightly browned.
  6. Add more butter and repeat for the rest of the batter.

Chocolate Chip Pumpkin Banana Bread

You either fall in the “love pumpkin” or “hate pumpkin” category. I never cared for it growing up (do any Asian households even eat pumpkin?!), but you can definitely count me in the first group now. Since one can of pumpkin is enough for two recipes, you bet that there will be more pumpkin coming your way.

I baked these mini loaves and sent them to work with my DH. Thank goodness for co-workers! They’re the best at making more kitchen counter space. Since I’ve been working from home, I don’t have any co-workers to give these to. Sorry, DH. You’re just gonna have to take things to work for… forever. Hah.

Pregnancy wise, I’m just over the half way mark! Can you believe it?! It seriously flew by. I’m 21 weeks tomorrow and finally starting to show. Every time I walk by my reflection, I have to do a double take because that baby bump throws me off. Is that really me? It’s crazy.

We got this dish as a wedding present from one of our friends. It came straight from France and is the most beautiful plate in my cabinet! The colors and detail are a stunning presentation for this banana bread.

Sprouts helped me kick off the pumpkin season with a wonderful package that they sent me. I went straight to the kitchen with a can full of pumpkin and turned it into this chocolate chip pumpkin banana bread. Yum! It’s the first pumpkin recipe for this year and it was a winner. Thank you Marla Meridith for the recipe!

Chocolate Chip Pumpkin Banan Bread

Ingredients

  • 1/2 cup unsalted butter (1 stick) room temperature
  • 3/4 cup white sugar
  • 2 large eggs
  • 1/2 cup canned pumpkin
  • 3 very ripe bananas
  • 1 teaspoon pure vanilla extract
  • 2 cups unbleached all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup chocolate chips + 1/3 cup for topping
  • cinnamon/sugar for sprinkling (optional)

Directions

  1. Preheat oven to 350 degrees F. Grease or spray a (8X4 or 9X5) loaf pan (I used 4 small pans).
  2. Cream together the butter and sugar. Mix in the eggs, pumpkin, banana, and vanilla.
  3. Gradually stir in the flour, baking soda and pumpkin pie spice until just combined.
  4. Add 1/2 cup of the chocolate chips and mix again.
  5. Pour batter into the prepared loaf pan. Top with the extra 1/3 cup chocolate chips and cinnamon/sugar mix, if using.
  6. Bake uncovered for 60-70 minutes or until toothpick comes out clean. (I baked my 4 small pans for 33 minutes)
