Six Banana Banana Bread

I’ve always been curious as to what would happen if I kept adding bananas into the batter for banana bread. It doesn’t really seem to change or make a difference if I use 3 or 4 bananas, as indicated in each recipe. Lucky for me, Averie must have read my mind because she did it on her blog with six bananas in one loaf! Alright, I’ll give it a try.

I took six bananas and mashed them up. My bowl was practically overflowing with banana goo. I poured them into my mixing bowl and kept going. There was no looking back now.

Once I was done mixing in the dry ingredients, I noticed that the dough wasn’t too different from normal banana bread dough. Sure, it smelled a lot more banana-y, but that was probably the only real difference. I poured all of it into one loaf pan, sprinkled some cinnamon on top, and waited patiently for the bread to be done baking.

The result was one heavy banana bread. It was dense, moist as can be, and full of banana flavor.

One slice is enough to fill you up because they’re packed with bananas. Seriously. This one loaf of bread can probably feed 8-10 people.

It’s just not my kind of banana bread, but maybe it’s for you. There is no crispy edge in sight. It’s almost as it the loaf was sitting in banana juice overnight, soaking in all of the liquid. I’m more of a fan of the subtle banana bread that’s light enough to eat four slices in one sitting. Recipe from Averie Cooks.

Six Banana Banana Bread

Ingredients

  • 1/4 cup unsalted butter (half of 1 stick), melted
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/4 cup sour cream or thick Greek yogurt
  • 1 tablespoon vanilla extract
  • 6 medium/large very ripe bananas, mashed (2 1/2 cups mashed bananas; if your bananas are huge you may only need 4 or 5; if they're small, you may need more)
  • one 3.4-ounce box vanilla instant pudding mix (not Cook 'n Serve)
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • pinch of salt

Directions

  1. Preheat your oven to 350 degrees.
  2. Mix together the butter and both sugars. Add in the eggs, vanilla, yogurt, and mashed bananas.
  3. Stir in the vanilla instant pudding mix, flour, baking soda, cinnamon, and salt until just combined. Do not over mix!
  4. Pour the batter into greased mini baking pans and bake for 25-30 minutes, or until toothpick comes out clean.

Banana Waffles with Caramelized Bananas

Bananas are a no brainer for breakfast items. There are banana muffins, banana pancakes, sliced bananas on oatmeal, banana bread, bananas on yogurt, and banana french toast. Well, I took it a step further and made bananas waffles with caramelized bananas so you can add another goodie to that breakfast list.

Don’t forget that you can always eat them as is. That’s usually how my DF prefers them.

As for me, I’ll take them caramelized or flambéed any day.

This dish is definitely restaurant worthy. If I ever open my own breakfast spot, these waffles would be on the menu.

Instead of using whipped cream on top, Cool Whip would make it even better since it could stand up to the heat of the waffle without melting. I had to take these pictures quickly before I had a puddle of whipped cream dripping down the sides of the waffles.

The caramelized bananas were sweet enough on their own, so you don’t need to add any maple syrup. A little sprinkling of powdered sugar would be sufficient if you really needed that something extra. I chose to use cinnamon.

Another tip when it comes to making waffles is that when you remove the waffle from the waffle maker, don’t put it on a plate immediately after. Place it on a cooling rack so that the bottom can cool a little and crisp up. If you place the waffle on a plate straight from the grill, the bottom will get soggy from the heat having no where to escape.

You can also place them in the oven to keep them warm while you’re making another batch.

Banana Waffles with Caramelized Bananas

Ingredients

  • 1 1/4 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • pinch of salt
  • 1/2 cup milk
  • 1/2 cup vanilla greek yogurt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 bananas, mashed
  • For the topping:
  • 1 banana, sliced
  • 1 tablespoon butter
  • 1 tablespoon honey
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • sprinkle of sea salt

Directions

  1. Mix together the flour, baking powder, cinnamon, salt, milk, yogurt, egg, vanilla, and banana until smooth. Make sure not to over mix.
  2. Pour 1/2 cup of the batter into your waffle maker and cook as instructed.
  3. Meanwhile, to make the topping, place the butter, honey, sugar, cinnamon, and salt in a small saucepan over medium heat while continually whisking.
  4. Once the mixture bubbles, turn the heat down to low-medium and add the sliced bananas. Cook on each side for 3-4 minutes, until lightly browned. Immediately pour over waffles and serve.

Matcha Green Tea Avocado Smoothie

With summer coming up, I’m all about making and drinking ice cold smoothies. I was thrilled when Tribest sent over a mason jar personal blender for me to use. Talk about perfect timing! Since we’re limited on space in our kitchen, this personal blender wasn’t too big for me to store in my cabinets. It’s small, yet powerful.

Not only that, but it’s quite versatile! It comes with lots of jars and lids for you to store your drinks in. You can blend them directly in your cup so there are less dishes to wash.

I’m still in shock at how all of these pieces fit into that one box.

I decided to make a matcha green tea avocado smoothie using DoMatcha powder. Have you ever used matcha powder before? My DF was dependent on it when he was studying for his LSATs. It’s great for focusing since it promotes health in mind and body. It also provides sustained energy without the jitters that coffee induces.

You can tell that they take time in packaging their matcha. There’s a foiled, air-tight package inside of a pop top can that has a twist cap. We’re sealing in all of the goodness, people.

Matcha powder is really a thing of beauty. It’s bright green color and fine texture is absolutely mesmerizing.

You can buy it online here. I know, I know.. it’s a little pricey but believe me, it’s worth it! The can may seem small, but you only need about a teaspoon of matcha for each cup of tea you make so a little goes a long way. Plus, there are a lot of health benefits that come with it!

This little blender whipped my drink up in no time, thanks to its 200 watt motor.

The blender may have only one setting, but that’s what I like about it. It’s simple. No point in trying to figure out what speed you need for what, just pop everything in and twist.

If you don’t want to drink it right away, there’s also a cap that you can put onto your jars and store in the fridge for later.

Ingredients

  • 1 banana, sliced and frozen
  • 1/2 avocado
  • 1/2 cup vanilla soy milk
  • 1 teaspoon honey
  • 1/2 teaspoon DoMatcha powder
  • 4-5 ice cubes

Directions

  1. Blend all of the ingredients until smooth.
