Crock Pot Original Chili

Since it’s starting to get colder everywhere else in world except for LA, I figured now would be a good time to share some warm recipes! I’m such a sucker for hot soups. Even when we go out to eat, I’ll often choose a big bowl of soup rather than an entree because it hits the spot. Note to my DH, you got lucky because I’m a cheap date.

When it comes to cooking, I will gladly use any shortcut available. A package of all of the necessary seasonings already pre measured? Great. Microwave and it’ll be done in a minute? Even better.

These seasoning mixes from Crock Pot make my life so much easier. Plus, they fool my DH into thinking that I actually can cook! They have packets for other Crock Pot meals, too.

The result was mouth watering. I also baked some cornbread to go with it, but it tasted wonderful alone.

Crockpot Original Chili

Ingredients

  • 2 lbs lean ground beef or turkey
  • 2 cans (14.5 oz each) diced tomatoes, undrained
  • 2 cans (15.5 oz) kidney beans, undrained
  • 1 can (15.5 oz) tomato sauce
  • 1 package Crock Pot Chili Seasoning

Directions

  1. Brown meat in skillet and drain fat.
  2. Place cooked meat and remaining ingredients in slow cooker. Stir well.
  3. Cover and cook for 8 hours on low or 4 hours on high. Do not remove cover during cooking.

Caramelized Onion, Prosciutto, and Goat Cheese Pizza

Surprise! It’s National Pizza Month. That gives you the perfect excuse for eating pizza every day this month. Thanks to the Cuisinart Alfrescamoré Outdoor Pizza Oven, you can have a freshly baked pizza any time you want. It gives the environment of a real brick oven, without taking up all of the space!

Isn’t it cute? It’s perfect for your backyard BBQ’s. Since all we have in our place is a teeny tiny outside patio (I’m talking like 3 x 7 feet small), we don’t have a lot of room for cooking outside. This outdoor pizza oven solved our problems. It allowed us to enjoy the nice Los Angeles weather while making a delicious meal.

Plus, it’s portable! Take it with you when you’re going over to someone’s house for a tailgating party. It weighs 35 pounds and assembles in less than ten minutes, so I’m not afraid to do it myself since I usually rely on my DH for of the grunt work. The pizza oven retails for $249.99 and you can find it online at BedBathBeyond.com, Amazon.com, HomeDepot.com and Cuisinart.com.

The caramelized onion, prosciutto, and goat cheese pizza came looking perfect. My pizza dough never gets those beautiful air bubbles in it like the ones at the restaurant. In this particular pizza, I had two!

I chose to make a pizza with goat cheese since my DH started working today and I wanted to make him something that he loved… a little surprise to come home to. I knew he was a sucker for goat cheese, so it was the perfect opportunity to combine it with the pizza oven.

It’s definitely a winner in my book. The pizza oven advertises to cooking pizzas in as little as five minutes, but mine took a little longer than that. Just make sure to keep an eye on it so it doesn’t burn!

Caramelized Onion, Prosciutto, and Goat Cheese Pizza

Ingredients

  • 1 recipe of pizza ball dough (store bought also works)
  • 1/2 onion, sliced, leaving rings whole
  • 2 tsp olive oil
  • 1 tsp brown sugar
  • 1 tablespoon olive oil
  • 4 oz goat cheese
  • 3 slices of prosciutto, torn into pieces
  • 1 tsp dried basil

Directions

  1. Roll out your pizza dough as far as it will stretch, approximately 12" round. Place on your pizza stone.
  2. In a medium saucepan over medium high heat, cook the onion slices, 2 tsp olive oil, and brown sugar until evenly browned (about 7 minutes). Set aside.
  3. Drizzle the olive oil on the dough. Add the goat cheese, prosciutto, caramelized onions, and dried basil.
  4. Bake in pizza oven for 7-8 minutes, keeping an eye on it.
  5. Serve immediately.

Chicken Avocado Lime Soup

I’ve never tried making soup on the stove before. I know, I know… it’s so simple. It’s just that I’m not that much of a cook. The Pampered Chef® sent over some of their Nourish bowls and the moment that I saw them, I knew soup was meant for the middle.

The Pampered Chef has teamed up with Feeding America® through The Pampered Chef’s Round-Up From the Heart® campaign. Did you know that 1 in 6 Americans face hunger? It’s an issue that is easily looked over, yet affects so many of us today.

According to Google, nourish means to “provide with the food or other substances necessary for growth, health, and good condition.” The word “nourish” is fitting for these bowls because $2 from every bowl bought goes to Feeding America, which provides 18 meals for those in need. The thing that I love most about Round-Up From the Heart is that the funds collected are used in the community where the donations came from. You get to support your local community through this campaign by buying your own Nourish bowl here (I have four!).

This soup is easily made in half an hour. I had no idea that this much flavor could come from so few ingredients. I was afraid that the soup would be bland, but the jalapenos and lime came together beautifully. I liked the level of spiciness from adding the whole jalapeno, seeds and all.

I used Pampered Chef’s 1 cup prep bowls to place all of my chopped cilantro, tomatoes, green onions, jalapenos, and lime juice. It made cooking a breeze. Everything was prepared ahead of time and all I had to do was toss them in at the right time. Make sure your pot is big enough to hold all of that liquid. I’d recommend using the Rockcrok Dutch Oven since it has a lid as well.

I chopped up my chicken prior to throwing them in the pot to cook, but I think shredding them would have been better. Either way, it doesn’t matter. Recipe from Cooking Classy.

Chicken Avocado Lime Soup

Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts (I used 4)
  • 1 Tbsp olive oil
  • 1 cup chopped green onions, including the whites
  • 2 jalapeños, minced (leave seeds if you want soup spicy, omit if you don't like heat)
  • 2 cloves garlic, minced
  • 4 (14.5 oz) cans low-sodium chicken broth
  • 2 Roma tomatoes, diced
  • 1 tsp ground cumin
  • Salt and freshly ground black pepper
  • 1/3 cup chopped cilantro
  • 3 Tbsp fresh lime juice (I used one whole lime)
  • 3 medium avocados, peeled, cored and diced
  • Tortilla chips, shredded cheese, sour cream for serving (optional)

Directions

  1. In a large pot heat 1 Tbsp olive oil over medium heat. Once hot, add green onions and jalapenos and saute until tender, about 2 minutes, adding garlic during last 30 seconds of sauteing.
  2. Add chicken broth, tomatoes, cumin, season with salt and pepper to taste and add chicken breasts.
  3. Bring mixture to a boil over medium-high heat. Then reduce heat to medium, cover with lid and allow to cook, stirring occasionally, until chicken has cooked through 10 - 15 minutes (cook time will vary based on thickness of chicken breasts).
  4. Reduce burner to warm heat, remove chicken from pan and let rest on a cutting board 5 minutes, then shred chicken and return to soup. Stir in cilantro and lime juice.
  5. Add avocados to soup just before serving (if you don't plan on serving the soup right away, I would recommend adding the avocados to each bowl individually, about 1/2 an avocado per serving).
  6. Serve with tortilla chips, cheese and sour cream if desired.
