BLT Sandwich with Avocado

Some days, you just can’t get yourself together to make a real meal, despite the fact that you’ve been starving for the past two hours. Enter the BLT– the solution to that problem. It takes a whole 5 minutes to make and you have a hearty, mouth watering sandwich.

You can add more of, take out, and include any ingredient that you want without being judged for it. Don’t really like lettuce? Change it to spinach. How about that meat? Bacon’s just not satisfying your manly cravings? Throw in some turkey, ham, and roast beef.

This is my version of the perfect BLT. I like having a lot of veggies and just a tad bit of saltiness from the extra crispy bacon. Everyone’s is different.

The ingredient list for this sandwich isn’t very specific, so feel free to adjust any way you want. Seriously, the possibilities are endless.

BLT Sandwich with Avocado

Ingredients

  • 2 slices of bread
  • butter or margarine
  • mozzarella
  • 2 slices of bacon, cooked
  • half of an avocado
  • handful of spinach
  • cherry tomatoes, cut into halves

Directions

  1. Heat a pan (one big enough that will hold your sandwich!) over medium heat.
  2. Butter both sides of your bread and put them on the pan to warm.
  3. Flip the pieces of bread over and add all of your ingredients to one side. I like to put the cheese as the first layer so it's thoroughly melted. Put the other piece of bread on top of your ingredients to close the sandwich.
  4. Using a spatula, gently press down so that the bread becomes a nice, golden brown. Once the level of crispiness has been reached, flip the entire sandwich over and repeat for the other side of bread.

The Marlboro Man Sandwich

I did something crazy yesterday. I stayed awake for 30 hours. That’s nearly impossible for me, since I’m a “be in bed by 9 and sleep for 10 hours” kinda gal. I didn’t plan for it to happen, it just did. I worked a redeye to D.C. and then turned around and jumped on the first flight back instead of having day rest at a hotel.

I couldn’t fall asleep on the airplane (hello, middle seat!) and have no idea how I drove home. I was borderline delusional by the time I said hi to my DB. Sleep is a beautiful thing, my friends. When I finally did fall asleep in my own bed for a couple of hours, I woke up feeling like a car had pinned me against a cement wall.

Bottom line? Sleep! It’s so important for your body. My sleeping schedule and body are thrown off by all the flying and awkward shut eye moments that I managed to catch. I’m so glad I have a day off tomorrow to catch up.

Also, I’m pretty sure I had four dinners since I skipped a night’s rest. At 8AM, I had chips and guacamole from Chipotle while people looked at me like a crazy person with their cups of coffee and bagels in hand. Who eats chips and guac before 9AM? Me, when I have no sense of time.

Just know that when you stay up all day and night, you’ve got to eat more meals. The last thing I wanted to do when I got home was cook, but a home cooked meal sounded glorious after three days on in the skies.

Man, what I would have done for one of these sandwiches when I finished my trip. What makes it so dang delicious? The butter! Yes, it’s a decadent way to cook meat, but it’s all worth it. Believe me. Recipe from The Pioneer Woman. I used these multigrain rolls from Trader Joe’s and they were perfect with the meat.

The Marlboro Man Sandwich

Ingredients

  • 1 whole Large (or 2 Small) Onions, sliced
  • 2 sticks Butter (lots And Lots Of Butter)
  • 2 pounds (to 3 Pounds) Cube Steak (tenderized Round Steak That's Been Extra Tenderized)
  • Lawry's Seasoned Salt (or Similar Seasoned Salt)
  • 1/2 cup (approximately) Worcestershire Sauce
  • Tabasco Sauce, To Taste
  • 4 whole French/deli Rolls (earthgrains Are Best!)

Directions

  1. Cook the onions with 1/4 stick of butter until light brown. Remove and set aside.
  2. Cut the steak against the grain and season with the salt.
  3. Using the same pan, melt 2 tablespoons of butter in high heat. Add in the meat, keeping it in a single layer. Cook until brown, about a minute or two for each side.
  4. Add 1/2 cup (at least) Worcestershire sauce, 5 to 6 shakes Tabasco, and 2 tablespoons butter. Add cooked onions. Stir to combine.
  5. Butter your rolls and lightly toast on the skillet. Place your meat in between the rolls (don't forget the juices!) and enjoy!

Pretty sure it doesn’t get any better than this. This recipe comes from one of my favorite bloggers, The Pioneer Woman, and she has yet to fail me on a recipe. Everything that I’ve made from her blog so far is fairly simple and extremely mouthwatering. Just look at these pictures. It’s surely a meal to please the man of your life.

I served the meatballs on fresh ciabatta bread from Costco (LOVE them). You can change it up to any kind of bread you prefer– rolls, sourdough, wheat, etc. The real star is what’s in between the layers of bread. This meal would also be perfect for a lunch with friends or a kid’s party. Eat up!

Meatball Sandwiches

Ingredients

  • 1 pound Ground Chuck Or Ground Beef
  • 1/2 cup Panko Or Other Bread Crumbs
  • 1 clove Garlic, Minced
  • 1/2 teaspoon Salt
  • Freshly Ground Black Pepper
  • 1/2 cup Milk
  • 2 Tablespoons Olive Oil
  • 1/2 whole Medium Onion, Diced
  • 1 jar (large) Marinara Sauce
  • Ciabatta bread (or whatever you prefer)
  • 4 slices Provolone Cheese, Cut Into Four Wedges Each

Directions

  1. Knead together the meat with bread crumbs, garlic, salt, pepper, and milk and roll into desired size balls.
  2. Pour olive oil into a skillet and turn the heat to medium. Add the diced onions and sautee for about a minute before adding in the meatballs. Cook until just browned, about another minute.
  3. Pour in the jar of marinara and shake the pan slightly to coat the meatballs. Simmer for 20 minutes, covered.
  4. When done, cut your bread in half and place a piece of cheese. Pour some of the meatballs and marinara on top of the cheese. Serve hot!
