Garlic Cauliflower Breadsticks

I’m always looking for quick and semi-healthy snacks to make. Snacking is probably my favorite activity of the day. These garlic cauliflower breadsticks fit the bill.

People use cauliflower to make pizza crust all of the time, so why not turn it into breadsticks? It only makes sense.

Garlic Cauliflower Breadsticks

Ingredients

  • 1 cup cooked, riced cauliflower
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup bread crumbs
  • 1 egg, beaten
  • 1 tsp dried oregano
  • 1/2 tsp crushed garlic
  • 1/2 tsp garlic salt
  • For Topping:
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely minced
  • 1/2 cup Mexican blend cheese
  • *Optional Marinara sauce for dipping

Directions

  1. Preheat oven to 450 degrees. Line baking sheet with parchment paper.
  2. Mix together cauliflower, cheese, bread crumbs, and egg. Stir in the oregano, crushed garlic and garlic salt.
  3. Transfer to baking sheet, and using your hands, pat out into a large rectangle.
  4. Bake for 15 minutes. Remove from oven.
  5. Mix olive oil and garlic in a small bowl and spread the mixture over baked cauliflower. Top with cheese blend.
  6. Place back into the oven until all of the cheese has melted.

Crockpot Quinoa Chicken Chili

House of Cards Season 3 is officially on Netflix today and I’m doing everything in my power not to start watching it before my DH comes home from work. It’s like a Pringles can, “once you pop, you can’t stop!” …or something like that.

Anyways, working and making dinner at the same time is no easy task. I hardly have any time since my hours at work are so sporadic and by the time I get home, I’m exhausted. That means more crockpot recipes for you guys!

I’m sill trying to be a quinoa lover, but it’s just not happening. I don’t think quinoa will ever be a staple in our household. Don’t get me wrong, this is a tasty recipe. It’s just too… quinoa-y for me.

Crockpot Quinoa Chicken Chili

Ingredients

  • 1 cup of quinoa, rinsed
  • One (1) 28 oz can of diced tomatoes
  • One (1) 14 oz can diced tomatoes with green chilies (Rotel)
  • Two (2) 16 oz cans of black beans, rinsed, drained
  • One (1) 15 oz can of corn, drained
  • 3 cups chicken stock
  • 2 large chicken breasts, frozen or thawed (cook longer if frozen)
  • 1 tsp garlic powder
  • 2 tsp cumin
  • 1 tsp crushed red pepper
  • 2 tsp chili powder

Directions

  1. Mix all of the ingredients into your crockpot.
  2. Cook for 6-8 hours on low or 4-7 hours on high.
  3. Once done, remove the chicken and shred it with two forks. Return it back to the pot.
  4. Top with cheese, cilantro, sour cream... whatever floats your boat!

Pizza Hut’s Gluten Free Pizza

IMG_4476 I was invited to try Pizza Hut’s® “Gluten-Free Pizza” made with Udi’s® certified gluten-free crust and of course, I said yes. I’ve never said no to pizza  (nor will I ever!). I grew up eating Pizza Hut because it’s my parents’ favorite store to order pizza from, so I was familiar with their pizzas already. I was excited to try a new product! Since I had a Pizza Hut only a couple of miles from my place, I decided to order it for carryout. I pulled out my computer, went to pizzahut.com, and started personalizing my pizza. There was only one size gluten-free crust pizza to choose from, a small ten inch. I went with that option and added some chicken and went light on the cheese. You could also opt to go plain cheese, pepperoni, or personalize it however you’d like. Fifteen minutes after I submitted my order, my pizza was ready for pickup. IMG_4471 Sure enough, my pizza was right there waiting for me when I showed up. I love when stores have the food ready when they say it’s going to be. My total was just over $12 because I added an extra topping. The Udi’s Gluten Free Pizza starts at $9.99. IMG_4473   I had no idea what to expect because I’ve never had gluten-free pizza before. The crust was very flat and crispy, which reminded me of bruschetta or a cracker. IMG_4475   The rest of the toppings were great as usual, but it did take me a while to get used to this pizza. I felt like it was more of an appetizer than a meal because of how light it was to eat. I didn’t feel sluggish or overwhelmed after eating a couple of slices. That’s a good feeling. IMG_4478     Pizza Hut partnered with the Gluten Intolerance Group (GIG) to make this “Gluten-Free Pizza” preparation possible. The pepperoni and cheese-only pizzas are the only pizzas certified by the GIG. All of the Pizza Hut team members are trained in order to take specific precautions when making these pizzas. IMG_4483   Although Pizza Hut does offer gluten-free ingredients, their entire kitchen is not a gluten-free environment. That means that they cannot assure that every menu item will be completely free of gluten. Still, they’re taking a huge step ahead by offering those Gluten-Free ingredients.
