Sriracha Turkey Meatballs

Occasionally, I’ll wing dinner in the kitchen. There’s only one thing that always turns out well, no matter what I add in to the mix. That would be meatballs! It’s so easy, guys. If I can do it, you can do it. IMG_3832

Thanks to Rodelle’s Sriracha Seasoning, my turkey meatballs just got a whole lot better without any extra effort. I use this seasoning in and on almost all of my meats.

Just look at how pretty it is! It’s got everything you need to make a flavorful meal. When I went to visit Rodelle back in May, they used this seasoning for breakfast in their eggs! That reminds me that I should do that tomorrow morning.IMG_3842

For meatballs, you can always mix in what you have on hand. I love adding some chopped spinach to the mix because it adds a little green and I’m a fan of making my DH eat some veggies.

Sriracha Turkey Meatballs

Ingredients

  • 1 package lean ground turkey (about 1 LB)
  • 1 cup panko bread crumbs
  • 2 eggs
  • 1/2 cup finely chopped spinach
  • 1 tbsp Rodelle sriracha seasoning
  • 2 tbsp Sriracha
  • 2 tsp olive oil

Directions

  1. Mix all ingredients together until thoroughly mixed.
  2. Roll into golf sized balls and cook in a large pan over medium heat with olive oil, making sure to turn the over every couple of minutes.
  3. Cook until the meatballs are cooked all the way through-- about 15 minutes.

LA County Fair 2015

Who’s excited about the 93rd edition of the LA County Fair? It kicks off tomorrow and lasts throughout this month of September! I’m waiting for my DH to heal a little bit more from surgery before we head to Pomona to explore this year’s fair, but don’t worry, we’ll definitely be going! I’ll be posting all about it on my Instagram.

The folks over at the LA County Fair sent me the most adorable package in the mail last week to get me pumped up. Just looking at the colorful box was fun enough for me.

But of course, they one upped everyone. The moment I opened the top flap of the box, a balloon floated out to the ceiling! Seriously, who thinks of these things? Brilliant!IMG_7875

Some things to look forward to this year include:

“New this year is Popnology, a hands-on destination attraction making its world premiere at the LA County Fair. Among the 33,000-square-foot  exhibition are the coolest tech and science gadgets influenced by popular culture, ranging from the Batmobile, Hal 9000 computer from “2001: A Space Odyssey” and Oculus Rift virtual reality technology to R2D2 from “Star Wars” and the famous DeLorean from “Back to the Future.”

Back by popular demand is the larger-than-life Luminasia handcrafted lantern display, expanded for its second and final year at the LACF. Once again, visitors can stroll through massive, animated colorful replicas of iconic L.A. landmarks and never-before-seen images.”

There will also be plenty of rides, music, animals, entertainment, and my most favorite part…. FOOD! There are “more than 1,200 deep-fried, on-a-stick, ooey, gooey, barbecued, dipped-in-chocolate and just plain delicious menu options.” Some of those include Bacon-Wrapped Chicken and Waffles, Deep-Fried Guacamole and Spicy Peanut Butter & Jelly Burger made with Sriracha sauce. My pregnant belly cannot wait!

Mint Oreo Cookies

Happy September! I can’t believe it’s already September. This year is flying by! My DH and I just celebrated our first year anniversary. It feels like we just had our wedding yesterday. And I’m 16 weeks preggers today! Keep following Hello Militello for my pregnancy updates.

Have you guys seen these new Oreo Thins? I was sent a package of them a couple of weeks ago and I instantly made some cookies. My DH, on the other hand, ate the entire bag of golden Oreos. I was amazed at how fast the package disappeared. I didn’t even get to try one!IMG_7800

These Oreos are  crispier and have a better crunch than the normal Oreos. They’re a little dangerous since I can eat way more of these in one sitting. Be warned! They’re addicting.

Did you know that they’re vegan? My sister and brother in law can enjoy Oreos with us! It’s a happy midnight snack that we can all share.

The mint flavor didn’t come off as strong in these cookies, so I’d recommend adding a teaspoon of mint extract to the dough if you want something a little stronger.

This recipe is the same as my favorite chocolate chip cookies. I just replaced the chocolate chips with Oreos and they’re still as tasty as ever! It’s seriously the best base for any cookie you make. Add in whatever you want: dried fruit, pretzels, candy, or even cereal! It’ll turn out perfect every single time. Soft, not too overly sweet, and golden brown.

Mint Oreo Cookies

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 2 cups Mint Oreo Things, crushed

Directions

  1. Sift together the flour, baking soda and salt; set aside.
  2. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the crushed Oreos by hand using a wooden spoon.
  3. Refrigerate the dough for at least an hour. When it’s time, Preheat the oven to 325 degrees F.
  4. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
  5. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
