Big Soft M&M Cookies

Okay, so these are called “Big Soft M&M Cookies,” but I didn’t make them so big. I actually made them a little on the smaller side because I wanted my M&M’s to be a good chunk of the cookie. Every kitchen should always have M&M’s on hand because they’re so versatile! I stock up when they go on sale (the ones pictured are Super Bowl M&M’s. Can you even tell after baking them?).IMG_5047These cookies taste exactly as they look. I hate when I bite into a deceiving cookie. You think it’s going to be soft and after your first nibble, the cookie is crumbling into a million pieces like a Nature Valley bar. The. Worst. Or how about when you pick up a cookie that looks like oatmeal raisin, only to find out there’s coconut and chocolate chips instead? I don’t like surprises when it comes to my dessert. I want everything to taste exactly how it looks.

Big Soft M&M Cookies

Ingredients

  • 1 cup packed brown sugar
  • ½ cup white sugar
  • 1 cup shortening
  • 2 eggs
  • 1 tablespoon vanilla
  • 2½ cups flour (+ 2-3 tablespoons)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1½ cups M&M's

Directions

  1. Preheat the oven to 350 degrees. Line baking sheets with silicone mats.
  2. Cream together both sugars, shortening, eggs, and vanilla.
  3. Gradually mix in the 2½ cups flour, baking soda, and salt until just combined. If the dough is still wet, add in the tablespoons of flour until the dough is no longer sticky. Stir the M&M's into the dough.
  4. Use a large cookie scoop to place balls of dough 2 inches apart onto baking sheet.
  5. Bake for 8-10 minutes.

Oven Fried Parmesan Crusted Chicken

How is time going by so quickly lately? I feel like I just updated my blog and when I check, it’s already been a week! Holy moly. Someone’s pressing the fast forward button.

We all know how I’m a fan of cooking in the oven rather than the stovetop. This chicken came out juicy with a crunchy crust. It was very aromatic and went great with mashed potatoes.

Sorry for the terrible pictures. I actually cooked for dinner rather than for my blog, so the sun was long gone by the time I finished making this meal. We can’t always be good bloggers.

Recipe from Cinnamon Spice and Everything Nice

Oven Fried Parmesan Crusted Chicken

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 4 splashes of Tabasco
  • freshly grated pepper
  • 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
  • 4 tsp. Italian seasoned dry bread crumbs

Directions

  1. Preheat oven to 425 degrees.
  2. In a bowl, mix together the mayonnaise, parmesan cheese, tabasco, and pepper.
  3. Place the chicken on the baking sheet. Evenly spread the mayonnaise spread on top of each chicken breast.
  4. Sprinkle the bread crumbs on top.
  5. Bake for 30-35 minutes.

Award Winning Soft Chocolate Chip Cookies

I woke up way too early this morning. 4:30 AM, to be exact. Actually, I don’t even have a day to sleep in this week. Womp womp, welcome to adulthood. I’m usually a morning person, but today was rough! I’m currently sipping on some decaf coffee hoping that’ll warm me in this freezing hospital.

My DH went in for a microdiscectomy this morning and I’m killing time waiting for him to come out. He had a herniated disc that was causing him a lot of pain. Not only that, but it grew 50% in the last couple of months, which was extremely alarming to the doctor because of his age. IMG_4230

It’s a fairly minor surgery, but it’s still nerve wracking not knowing what’s going on. So let’s talk about cookies instead to put my mind at ease.

Here’s another chocolate chip recipe for you. I know I have a couple on my site, but I’m always up for trying new recipes. This one had a lot of reviews on All Recipes, so I thought I’d give it a try. IMG_4232

Although these cookies are good (not to mention they baked beautifully), it’s not as good as my favorite chocolate chip cookies. They can’t all be the winner.

Award Winning Soft Chocolate Chip Cookies

Ingredients

  • 2-1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups semisweet chocolate chips
  • 1 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350 degrees F.
  2. Cream together the butter and both sugars. Beat in the instant pudding mix. Stir in the eggs and vanilla.
  3. Gradually mix in the flour and baking soda. Stir in the chocolate chips and nuts, if using.
  4. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
  5. Bake for 10 to 12 minutes.
