Something crazy happened last week. You see, Chobani tweeted my blog! Not once, but twice! I nearly smacked my DB in the head when I woke up in the morning and saw the tweet. No, I don’t have any affiliation with them and no, I’m just as surprised as you are that they found their way over to my little ol’ blog.

But I’m so happy they did! Greek yogurt is like Windex, people. You can use it for everything. Thank you internet Gods for making my blog easily accessible.

Whoa mama, tomorrow’s already Valentine’s Day! While everyone’s busy posting recipes of heart shaped cookies and red velvet everything, I’m here posting something a little more universal– Sprinkles!

It’s more than just red and pink, it’s multi colored to remind everyone to cheer up! This holiday isn’t meant to discourage anyone. It’s about celebrating love for the people you have in your life.

Now that my whole lovey-dovey schpeal is over, let’s be honest. Valentine’s day isn’t really a holiday. It’s an excuse for stores to make money. As if there weren’t enough events in a year to get presents for your significant other (birthdays, anniversaries, Christmas…), they threw in Valentine’s Day for you to spend some more.

I will admit that Valentine’s Day was one of my favorite holidays as a child, though. Giving out Valentines and getting candy in my homemade “mailbox” was the highlight of my academic career back in grade school.

You could get away with sneaking love notes into your crushes “mailbox” without them knowing who you were. It was awesome. Thick, card stock paper with pictures of your favorite cartoons and pop stars attached to sweets… what could be better?

This cake batter fudge isn’t. Just telling you the truth here. It doesn’t really taste like fudge. The consistency is off— it’s a bit dry and crumbly. There’s no smooth, fudgy texture. It’s also extremely sweet. I’m all about the sweet tooth, but this was like eating sugar mixed with cake batter.

White chocolate is already sweet on its own, so adding things that are even sweeter to it doesn’t make it any better. White chocolate should be tamed down with saltier items such as pretzels, popcorn, and nuts. This recipe is pretty popular on Pinterest, so let me know if you’ve had better luck with it than I did. Cake Batter Fudge

Ingredients

  • 2 C + 2 Tbsp cake mix
  • 2 C powdered sugar
  • 1/2 C (1 stick) butter, cut into 4 pieces
  • 1/4 C milk
  • 2/3 C white chocolate chips
  • 1/2 C sprinkles

Directions

  1. Line an 8x8 pan with foil, wax, or parchment paper.
  2. Mix together the cake mix and powdered sugar in a large bowl. Add milk and butter (don't stir) and microwave for 2 minutes.
  3. Mix the batter IMMEDIATELY from the microwave. The batter will be VERY thick.
  4. Fold in white chocolate and sprinkles and pour evenly into prepared pan.
  5. Refrigerate for at least two hours and cut into bars.

Malt Chocolate Chip Pudding Cookies

You know how certain songs always flashback to a certain time or event in your life? Like your first kiss or your first break up? I was listening to Songza and Craig David came on. Instantly, I thought of my freshman volleyball year. My coach had asked everyone to say little facts about themselves as an icebreaker, including your favorite artist/musician. When my turn came around, I said that my favorite artist was Craig David and he thought I was crazy because he had no idea who he was. It became an inside joke for the rest of the season, and it set the tone for a fun volleyball season.

R. Kelly’s “Ignition” was the first song I heard when I put the keys in my car for the first time. Ironic, isn’t it? Now whenever I hear it, I remember how excited and surprised I was to get my Cameron the Camry. My parents had surprised me with a car after I came home from a boy’s volleyball game in high school. I opened the garage and there was a brand new car parked inside. Oblivious to it (I figured I had a cousin spending the night and they got a new car), I didn’t fully understand what was going on until my dad handed me the keys to the car. I wanted to sleep in my car that first night I got it.

As for heartache, nothing beats Carrie Underwood’s “Starts with Goodbye.” I must have looped that song a hundred times a day with tears running down my face. It sounds dramatic, but it’s true. I’m pretty sure that Carrie Underwood song put every emotion I was feeling into words at the time. It was like that song was made for me. Listen to it. It’s the best break up song. Oh, and let’s not forget Paula DeAnda’s “Walk Away,” which is a bit more upbeat than the latter.

You can’t deny that every significant person in your life has a song that reminds you of them. I can tell you a song for every boy that had a piece of my heart at a time.  “I Will Follow You Into the Dark” by Deathcab… “Promiscuous Girl” by Nelly Furtado… “The Ponytail Parades” by Emery…

Listening to old songs is just as good as pulling out old yearbooks and scrapbooks. What songs make you think of a certain time in your life?

These cookies from chef-in-training came out the perfect shape and texture, but the malt powder wasn’t very strong. I was hoping for a strong malt taste, but no one could guess the secret ingredient after trying a cookie. After I told them they had malt powder in them, they all had the lightbulb face, as if they were thinking, “ahhhhhhh.. THAT’S what it is!” Nevertheless, it’s a good staple for the kiddos that won’t touch any cookie that has a million add-ins. In other words, it’s a safe cookie.

I chose to use chocolate chips instead of chopped Whoppers like the original recipe because in my past experiences, Whoppers are just not meant for baking.

Malt Chocolate Chip Pudding Cookies

Ingredients

  • 3/4 cup butter softened
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 small box instant vanilla pudding dry, do not prepare
  • 1/4 cup malt milk powder
  • 2 eggs
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 2 1/4 cups flour
  • 1-2 cups chocolate chips

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter and both sugars. Stir in vanilla instant pudding mix and malt milk powder.
  3. Add in the eggs and vanilla. Gradually mix in the flour and baking soda until combined.
  4. Stir in chocolate chips.
  5. Roll dough into 1" balls. Place on baking sheet and bake for 8-10 minutes.

Baked Garlic Brown Sugar Chicken

Back to regular programming! I took a mini break from blogging to celebrate with my family for Chinese New Year. Being Vietnamese, my family doesn’t really celebrate any holidays except for Christmas. That’s right, there’s no such thing as Thanksgiving dinner in my family. We do, however, do a little something for Chinese New Year. My whole dad’s side of the family comes down for the weekend and we eat ALL. DAY. LONG.

Seriously, I’m pretty sure I ate from 3PM-9PM. I’m still recovering from this past weekend. Do you guys celebrate Chinese New Year? Do you still get little red envelopes? I may be in my mid twenties, but my parents still give us li xi (red envelopes). I think our cut off point from that is when we’re married. Or maybe I’ll get little red envelopes until I die. Who knows.

My pops made his usual banh chung for the occasion and they were devoured. He gave most of them away, but we kept a good amount at home for us to nibble on.

Family gatherings are always a bit hectic and every bit entertaining. I was able to see some of my aunts and uncles that I haven’t seen in years! Our family gatherings now have the next generation of kids. We were the “babies” for so long that it’s about time we’ve been replaced. Although we’re only at three kiddos right now, I’m sure that number will be increasing over the next couple of years.

This chicken is an easy recipe to throw together for dinner. With only a couple of ingredients, I’m sure you have everything in your pantry ready to go. Even though it’s baked uncovered, the inside stays plump and juicy.

The result was a sweet, garlic-y chicken from Daydream Kitchen. Try this recipe if you’re tired of bland, boring, and tasteless chicken. I served it over a bed of white rice, but it’d also be great over some pasta!

Baked Garlic Brown Sugar Chicken

Ingredients

  • 4 boneless skinless chicken breasts
  • 4 garlic cloves, minced
  • 4 tablespoons brown sugar
  • 3 teaspoons olive oil
  • salt and pepper, to taste

Directions

  1. Preheat oven to 450°F and lightly grease a casserole dish.
  2. In small pan, sauté garlic with the oil until tender. Remove from heat and stir in brown sugar.
  3. Place chicken breasts in a prepared baking dish and cover with the garlic and brown sugar mixture.
  4. Add salt and pepper to taste.
  5. Bake uncovered for 20-30 minutes.
