Crockpot Easy Flank Steak

I have a question for you guys: Have you ever picked up hitchhiker or given a ride to a stranger you met somewhere? No judgment here.

My DB and I flew to Vegas for the day yesterday since we have a long weekend. We took the first flight out in the morning and the last flight back in. I always wanted to do that. My parents and aunts were also in Las Vegas for the weekend, so it worked out perfectly. My dad picked us up from the airport and we spent the day eating and walking around.

We had dinner in Chinatown before leaving, and as my dad came to pick us up, he said, “We have plenty of time before your flight, right? We’re going to drive a girl to Circus Circus. She needs a ride.”

TIMEOUT.

What?!? My DB and I watched a movie the night before called Vile on Netflix about this situation. In the movie, a girl comes up to a bunch of teenagers at a gas station and asks for a ride back to her car because she ran out of gas. She seems like a cougar, so the boy driving happily gives her a lift despite his disapproving girlfriend. She ends up smoke bombing them in the car, kidnapping them, and then they all wake up locked in a house. Can you guess the ending? I’ll give you a hint: there are no survivors.

So naturally, I’m freaking out. My mom, my DB, and I bombarded my dad with questions. Who is this girl? Why are we giving her a ride? What is she doing by herself? Where did you find her?

You have to understand, my dad has the biggest heart out of anyone I know. Whenever he sees someone in distress, he’ll come to the rescue. He’s that guy. He’ll help all of our neighbors with any fix-it problem they have. He’ll pull over to help people push a car to a gas station when they’ve run out of gas. He’ll happily jump your car when your battery dies.

He saw a tiny, Asian girl standing in the middle of the dark parking lot in Chinatown with a rolling luggage and offered her a ride because that’s what he does. We all squeezed into the car and off we went.

It was extremely awkward at first. Why would this girl get in a car with a random stranger she doesn’t know? My dad doesn’t look that friendly. We found out that she was waiting for a taxi and that she was here on a meeting with a “client.” My dad immediately asked her what kind of business she was in, oblivious to the situation. My heart was about to beat out of my chest. “Meeting” a “client” in Vegas?!?! I’m pretty sure I died at this point.

She responded that she sold clothes and was meeting with the buyer to show her products (hence the luggage). This was her first time in the states. She graduated last year from a University in China and was here alone. She had an accent, but we were all surprised at how well her English was for a first timer in the US. You could tell that she didn’t understand everything we said or asked because she’d just laugh and nod at times. That totally works, by the way. If you don’t understand someone, just laugh and nod.

We dropped her off at Circus Circus and all was well. There was no secret gang waiting for us, no smoke bombs, and no surprises. I commend this girl for having so much bravery. She traveled to a country by herself, not knowing anyone, and trusted in complete strangers. You go, girl. But next time, don’t hop into a car with people you don’t know. You never know who you’re going to be with. My parents would kill me if I ever did that.

Have I told you guys how much I love flank steak? It’s wonderfully priced and you can do so much with it. It cooks fast, too! My kind of meat. This recipe is from Get Crocked and is basically a lazy person’s way of cooking an easy meat.

Crockpot Easy Flank Steak

Ingredients

  • 1/2 c. ketchup
  • 3 T.. Worcestershire sauce
  • 3 T. soy sauce
  • 1/2 c. lemon juice
  • Garlic powder or fresh garlic (1 clove or 1 tsp.)
  • Flank steak, cut into serving sizes

Directions

  1. Place all of the ingredients in the crock pot.
  2. Cook on high for 5-6 hours.

White Chocolate Chip Oatmeal Cookies

I worked a flight a while ago with an unaccompanied minor that was unbelievably comfortable flying. She was six years old and was more prepared for flying than I had ever been in my life. She had three books to read, paper and crayons to color, and her own personal DVD player tucked into her rolling backpack.

When she sat down, she stretched out like she knew the whole routine. Her hot pink princess backpack went completely underneath the seat in front of her and her books went into the back pocket of the chair, while she starting nibbling on her goldfish crackers that she brought onboard. All of this was, of course, after she had buckled herself in.

Apparently, she was a frequent flyer since her parents lived in two different states and she would go back and forth between the two. I can’t imagine being six years old and knowing where and what to do on an airplane.

In fact, the first time I ever took a flight by myself as an unaccompanied minor was when I was in 5th grade. That’d make me ten years old. I remember the entire experience like it was yesterday because it was one of the scariest things I’d ever done.

My parents escorted me all the way to the gate and passed me along to the flight attendant. It was only a short flight, from Burbank to San Jose (about an hour flight) to go to Stanford’s volleyball camp for the summer with my cousin. I’ve flown on planes before, so I was always familiar with the atmosphere, but I never did it by myself. My mom always ordered the apple juice for me when the flight attendant came around.

I followed this stranger up the air stairs and took an aisle seat near the front of the plane. The flight attendant asked if I was okay and then left to finish her boarding duties. After a couple of people boarded, a monk happened to find a seat right next to me. I’m not entirely sure I even knew what a monk was in 5th grade, but there he was to my right.

After the flight took off, the monk started chatting with me. He asked me if I was Vietnamese, and when I gave him a positive response, I found out that he was too. He then followed up by asking if I could read Vietnamese and handing me a Vietnamese newspaper. Sorry man, I grew up in a 90% Caucasian city so it was hard enough to keep my speech let alone learn how to read Vietnamese.

He kept speaking to me in Vietnamese, asking if I was Buddhist and if I’ve ever been to a temple. He then gave me his business card to his temple and told me that I should come visit. Looking back on it now, that’s really creepy for a child. Like… really creepy.

The flight attendant only checked on me one other time to ask me what I wanted to drink, but besides that, she pretty much ignored me the rest of the flight.

As for the monk, he must have gotten tired of my yes/no answers because he put on sunglasses and went to sleep. I’m not joking you. Sunglasses! He didn’t talk to me again for the rest of the flight because he was out cold. No noise or turbulence could wake him up.

I was pretty traumatized from that experience and now that the roles are reversed, I ALWAYS check on my unaccompanied minors (UM)’s and make sure there are no creepy people sitting next to them. I talk to them and get to know the UM’s so they’re comfortable with me and letting me know if they have a problem. Kids are young, they won’t speak up for themselves so you have to protect them! Otherwise they’ll get an experience like mine and judge monks for the rest of their lives.

AllRecipes has never steered me in the wrong direction, and these cookies are proof of that. They’re a great staple cookie recipe for one without chocolate. I added pecans to mine, but you can feel free to omit it if you’re not a nut lover. It’d still be a great cookie without the pecans.

They look like hard cookies, but don’t fret. They’re nice and soft, like all the cookies I love so much.

White Chocolate Chip Oatmeal Cookies

Ingredients

  • 1 cup butter
  • 1 cup light brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups rolled oats
  • 2 cups white chocolate chips
  • 1 cup chopped pecans

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter and both sugars until smooth. Mix in the egg and vanilla.
  3. Gradually add in the flour, baking powder, baking soda and salt.
  4. Finally, add in the rolled oats, white chocolate chips and pecans.
  5. Drop by rounded tablespoons onto baking sheets. Bake for 10 to 12 minutes.

Korean Turkey

We eat a lot of meat at our house, but I try to keep things semi healthy by cutting back on red meat. Instead of ground beef, I’ll substitute ground turkey instead. It’s leaner and just as tasty. I’m not really sure why this recipe is called titled “Korean”… Is there a Korean dish similar to this? Or is the base of the sauce used in something else? Does anyone out there have an answer to this question?

Who knows. All I do know is that my DB loved this simple dish and I’d make it again. I’ll have to try using ground beef and see if it makes a huge difference in the taste. Whatever you do, don’t omit the green onions! They bring a lot to the dish.

I’m always on the hunt for quick, tasty recipes that don’t require a lot of work. I have no problem admitting I’m a lazy cook. Any shortcuts? I’ll take it. With baking, it’s a different story. I don’t mind spending the extra time to get the finished product if it’s coming out of the oven. Don’t ask me why, perhaps I’m just a strange sole.

Hope everyone had a great Valentine’s Day! I spent mine working with the kiddos, where they had goodie bags filled to the rim from their classmates. Valentine’s Day is way better than Halloween. Not only do you get more candy at school, but you get personalized notes! Kids are much more creative where I work than I ever was back in elementary school. They literally made their own Valentine’s Day cards. I’m talking hand cut each one, write a little note inside of it, decorate, and fold. Amazing.

Recipe from Lizzy. The only thing I did differently was use ground turkey instead of beef. Besides that, I followed the recipe to a T.

Korean Turkey

Ingredients

  • 1 pound ground turkey
  • 1/4 - 1/2 cup brown sugar
  • 1/4 cup soy sauce (I use low-sodium)
  • 1 Tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon fresh ginger, minced
  • 1/2 - 1 teaspoon crushed red peppers
  • salt and pepper
  • 1 bunch green onions, diced

Directions

  1. Heat a large skillet over medium heat.
  2. Brown ground turkey with garlic in the sesame oil.
  3. Drain most of the fat and add brown sugar, soy sauce, ginger, salt and pepper and red peppers.
  4. Simmer for a few minutes to blend the flavors.
  5. Serve over steamed rice and top with green onions.
