Natural Delights Medjool Dates Part I

Last week (has it really already been a week?!), I had the pleasure of flying down to Bard Valley thanks to Natural Delights Medjool Dates. They hosted a summit where seven other food bloggers and I got to truly experience the delight of Medjool date production and meet the people behind it all.

I have A LOT of pictures from the trip, so I’m breaking it down into two posts. You may have even already seen a sneak peak from the trip through Instagram! I flew into Yuma, Arizona, where I was welcomed by the piercing sun and gut wrenching heat. Lucky for us, the temperature we experienced was considered tame compared to the week before.

For my first summit ever, I couldn’t have asked for a better group of gals to be surrounded by for three days. I am so grateful to have met such an influential and genuine group of people. Do check out their blogs when you get a chance!

Now for part one… we got to pick our own dates from a date garden!

It truly is a labor of love. Every single date branch is wrapped in a bag to keep the birds and insects away from the fruit. It’s also effective in catching ripened dates that fall off before they get a chance to pick them. Not only do they have to climb up each tree individually and harvest the ripened dates from each bag, they have to do it multiple times a season in order to gather them all.

The pickers spend ten hours a day in the sun going up and down trees, gathering only the best.

We were put into a cherry picker to the very top of the date tree and got to pick our very own dates.

You may ask, “Why Bard Valley?” Well, the high water table from the Colorado River and the low humidity create a perfect environment for the growth of a Medjool date.

To harvest the dates, you have to untie each bag, grip the bottom, use your other hand to swirl the top of the branch around, and then catch all the dates that fall off. Then, you retie the bottom of the bag and move on to the next batch.

The dates are never treated with pesticides or preservatives, so you don’t have to worry about ruining their natural goodness.

Date gardens are an impeccable sight in person. Doesn’t it just look like a king’s backyard? Each date tree grows about a foot a year, so you can judge how old a tree is just by looking at their height.

We were then fortunate enough to go see “The Big Six.” “The Big Six” are essentially the mothers of Bard Valley since the other 250,000+ Medjool date trees sprouted from these six. You can tell just how big they are by looking at this next picture for comparison:

Chewy Monster Granola Bars

Folgers has created a program called The Best Part to help you with little pick me ups that’ll not only help you get through the day, but give you a boost of positiveness whenever you need it. In other words, it’s an online community that’s made for sharing your random acts of kindness or words of inspiration. I’ll start out with sharing a bit of my “best part.”

Let’s be real here. There are days at work where you want to pull your hair out, days where you’d rather be anywhere but here. All it takes is one person (or in this case, one kid!) to completely change your outlook and get you out of that negative mood.

At after school day camp the other day, I was walking the kids from their school to the center when one of the boys exclaimed, “We’re almost home!!” Confused, I corrected him, “You mean, we’re almost at day camp, right?” His response just about made me melt into a puddle.

He looked up at me and said, “Oh yeah, but I love day camp here just as much as I love being home.”

I realized that camp counselors affect kids a lot more than they realize. Sure, it may be work to some, but to the kids attending the camp, it’s almost as if you’re there for them. You’re there to give kids a place to go after school where they can learn, have fun, and be safe. You’re not there for yourself. A camp counselor should never go to work for themselves because there are so many little eyes on them at all times. Your mood and your behavior affect all of the kids around you, whether you realize it or not. They’ll pick up on your bad days in a second, and they’ll make a comment that can make you laugh just as fast.

Here are just a few of my conversations with kids from work:

Kid: But why? You don’t work.
Me: What? I’m working right now! And I also work somewhere else.
Kid: Where?
Me: In the skies.
Kid: YOU WORK IN HEAVEN?! FOR GOD?!?

I walk up to two boys at work and catch the middle of their conversation..
Boy: If they mate, then…
Me: EXCUSE ME?! What are you two talking about?!
Both boys: POKEMON!

Kid 1: If you tell me a really funny joke, you’ll be my first best friend.
Kid 2: I already told you a lot of funny jokes, I don’t want to tell you any more.
Me to kid 1: What?! You’ve never had a best friend?
Kid 1: I have a 2nd, 3rd, 4th, and 5th best friend, but he’ll be my 1st best friend if he tells me.

Girl: I can’t wait til i’m 18! .. or 12.
Me: What? Why 18.. or 12?
Girl: Because that’s when I can get a dog!
Me: Why can’t you get a dog until you’re 18.. or 12?
Girl: Because that’s when my guinea pig will die. I think they live for like 8 years.

I curled my hair for the day when I usually wear it straight..
Girl: You look like a lion!!!

Did any of those make you smile just a little bit? The innocence and honesty of kids are a constant reminder for me of the optimism that still exists in the world. It is so easy to keep a positive outlook around them for me because of their carefree and easygoing personalities.

If I could read conversations like that every day, I would. In fact, I’m pretty sure I tell all my friends all the silly conversations with kids as it happens. Now, the only difference is that I can do it online in a community where others have the same kind of stories and photos to share. The Best Part is dedicated to making you smile every day. It’s a place where people can share their heart warming stories and spread happiness. We can all use a little happiness in our lives, right? There’s enough negativity in the news and online that The Best Part will be somewhere where you can escape from it all. Nothing bad, all good.

To celebrate how gosh darn cute kids are and spread even more cheer, I’m making a dessert that screams elementary school: chewy monster granola bars. They’ve got peanut butter, chocolate, and oats. It doesn’t get more elementary than that. They’re the perfect sweet surprise to hide in their lunch boxes. The M&M’s peaking out will be sure to make them smile. Pass that smile forward!

Chewy Monster Granola Bars

Ingredients

  • 2 1/2 cups quick rolled oats
  • 3/4 cup Rice Krispies
  • 1/4 cup butter, softened
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup mini M&M candies
  • 1/2 cup chopped walnuts
  • 1/2 cup brown sugar
  • 2 tbsp ground flaxseed meal
  • 1 tsp cinnamon

Directions

  1. Preheat oven to 350 degrees. Line a 8x8 pan with foil or parchment paper.
  2. Mix all of the ingredients together in a large bowl.
  3. Press the mixture into the pan and bake for 18 minutes. Cool completely before cutting.

Parmesan and Spinach Orzo

Have I told you guys that my DF and I have booked a venue for our wedding? I’m SO excited because this means I’m no longer venue hunting, emailing a million people for price lists, and comparing what exactly each place gives us. My DF and I are pretty easy going and aren’t very picky, so to find a place that is mostly all inclusive is perfect for us.

Next step: Wedding dress hunting. I actually went by myself last weekend and hated it. The salesperson was great and I couldn’t have asked for anyone nicer, but for every dress that I tried on, I couldn’t take it off fast enough. I tried a variety of styles, too. Ball gown, sheath, sweetheart, v neck, straight across, mermaid… it was all just too much for me.

Maybe it was because I went alone, maybe it’s because I should have tried on dresses that were actually in my size, maybe I should’ve tried them on in heels. Who knows.

Either way, I’m thinking I want more of a “white dress” than a “wedding dress.” Plus, why would you ever spend a thousand dollars on a dress that you wear once? That’s a whole lotta dinero.orzo-5

I’ll keep you posted on how that goes.

Meanwhile, this orzo dish is a perfect side for dinner. It pairs well with meats and vegetables. It’s also good cold (maybe that’s just me), but I do have a thing for day old, cold food… orzo-6

Next time, I’d toss is some more spinach since it shrivels so much when cooked and practically disappears. Recipe from Life as a Strawberry.

Parmesan and Spinach Orzo

Serving Size: 4

Ingredients

  • 8 oz orzo, uncooked (half a box)
  • 2 Tbsp. Extra Virgin Olive Oil
  • 2 green onions, chopped
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 2 tsp. flour
  • 1 cup milk (I used skim!)
  • 1 cups spinach, chopped
  • 1/2 cup parmesan cheese, shredded, plus extra for garnish

Directions

  1. Cook orzo according to package directions. Set aside.
  2. Heat olive oil in a medium-sized pot over medium heat. Add onions, garlic, salt and pepper and saute for 1 minute or until onions are translucent. Add flour to form a roux and cook for an additional minute.
  3. Add about 1/4 cup of the milk to the pot and whisk to work out any lumps from the roux. When lumps are worked out, add the remaining milk and whisk to combine. Bring to a simmer and cook until sauce has thickened, about 8 minutes.
  4. Add chopped spinach to sauce and cook an additional 2 minutes or until spinach has cooked down. Remove sauce from heat.
  5. Stir parmesan cheese into sauce. When cheese has melted, add cooked orzo to sauce and toss to coat. Garnish with extra parmesan cheese and serve immediately.
