Turkey Sloppy Joes

When I was little, I always wanted to try a sloppy joe. Remember the movie It Takes Two with Mary-Kate and Ashley Olsen? And that one scene where she rubs the sloppy joe all over her face after having the first bite? Well, it looked delicious to me when I was 8 years old. All I ever ate were Happy Meals and home made Vietnamese food. I had no idea what a sloppy joe was.

Ironically, I think I had my first sloppy joe at summer camp. It must be a common camp food. I’ve probably only had two sloppy joes in my twenty five years of living. Is that normal? Do people make sloppy joes at home on a daily basis? I’ll never know.

Actually, I just asked my mom right now since I’m currently at home and she claims that she’s made it before when we were little. She was curious at the grocery store and bought the premade packets that you just mix in with the meat. When I told her that I never remembered eating sloppy joes at home, she said it’s probably because the meal wasn’t very successful.

We normally just stick to Vietnamese dishes in my parent’s household. It’s the safest bet.

I have yet to try making any Vietnamese dishes in my kitchen, though. I’ll need to remember to write a few pointers from my mom.

This recipe comes from the The Pioneer Woman. The only difference is that I subbed ground turkey for ground beef since that’s what I had on hand and it’s healthier. The buns that I used were from Trader Joe’s and went great with the dish. They were fresh and fluffy, perfect for the tangy spoonful of turkey that was going to be shoved in between it. I did find that using an entire green bell pepper was a bit much, even for me. My DB probably would have liked it even better if I completely omitted it, but hey, you have to eat your greens somehow.

Turkey Sloppy Joes

Ingredients

  • 2 Tablespoons Butter
  • 2-1/2 pounds Ground Turkey
  • 1/2 whole Large Onion, Diced
  • 1 whole Large Green Bell Pepper, Diced
  • 5 cloves Garlic, Minced
  • 1-1/2 cup Ketchup
  • 1 cup Water
  • 2 Tablespoons Brown Sugar
  • 2 teaspoons Chili Powder (more To Taste)
  • 1 teaspoon Dry Mustard
  • 1/2 teaspoon Red Pepper Flakes (more To Taste)
  • Worcestershire Sauce, To Taste
  • 2 Tablespoons Tomato Paste (optional)
  • Tabasco Sauce (optional; To Taste)
  • Salt To Taste
  • Freshly Ground Black Pepper, To Taste
  • Kaiser Rolls (I used burger buns)
  • Butter

Directions

  1. Add butter to a large skillet or dutch oven over medium high heat.
  2. Add in the ground beef and cook until brown. Drain most of the fat and discard. Toss in the onions, green pepper, and garlic, cook for a few minutes.
  3. Add ketchup, brown sugar, chili pepper, dry mustard, and water. Stir to combine and simmer for 15 minutes, adding salt and pepper to taste. Also add tomato paste, Worcestershire, and Tabasco if using.
  4. Taste and adjust seasonings as needed.
  5. Spread rolls with butter and brown on a griddle or skillet. Spoon meat mixture in between the rolls and serve hot!

Peppermint Chocolate Chip Ice Cream

The kind folks over at McCormick sent me some goodies. All of the these are things I would have bought on my own, but it’s always nice to get something in the mail! I’ve used McCormick food coloring, extract, and spices for as long as I’ve been baking. Their products are top notch at an affordable price (and they’re easily accessible, which is a huge plus!).

Immediately, I chose the green food coloring and pure peppermint extract to make something festive for the upcoming holiday– St. Patrick’s Day!

There are a ton more recipes and ideas over on their site that include green ombre cake, green velvet cupcakes, and Irish cream swirl brownies, if ice cream doesn’t tickle your fancy.

But let’s be real here. When does ice cream not tickle your fancy? Especially one with chocolate chips?

The peppermint extract is strong. A little goes a long way! This isn’t the time to eyeball something… you don’t want to accidentally put in two teaspoons instead of one. If you’re sensitive to the taste, you can even cut back the one teaspoon to a half teaspoon instead. You can also sub the peppermint extract for mint extract to really make it match the color.

The green food coloring turned out even more beautiful than I imagined. I just kept adding drops until I got a color that I liked. That’s the beauty of it. It’s art!

Since this mixture is made of half and half rather than the normal whipping cream, it’s not as heavy as normal ice cream. That also affects the texture when frozen. It takes a little longer to firm up and a little longer to soften. I had to leave the tupperware at room temperature for 5-10 minutes before I could actually scoop it.

I used a Cuisinart ice cream maker for this.

Peppermint Chocolate Chip Ice Cream

Ingredients

  • 2 cups half and half
  • 1/2 cup sugar
  • 1 teaspoon peppermint extract
  • 11 drops green food dye
  • 1 cup chocolate chips

Directions

  1. Mix all ingredients together in a mixing bowl, except for the chocolate chips.
  2. Pour the mixture into your ice cream maker and let it run for 20-30 minutes.
  3. Fold in the chocolate chips. Serve immediately or freeze in a tupperware until desired consistency.

Acai Berry Smoothie

I really need to invest in a good blender. I always walk by the Vitamix blender at Costco and linger for a while. Right now, I’m using a cheap $20 blender that I picked up for convenience from Target or someplace. It’s the loudest thing ever and takes ten minutes for me to crush four ice cubes. Not to mention that I may or may not have cracked the glass while putting it away and now it has a huge line going down the side.

I’m pretty sure one day it’s just going to burst and all the contents of my smoothie will be covering my walls and ceiling. I’ll keep pushing it until that day comes. Why? Well, it’s hard to have so many appliances when you’re moving every year. I can’t wait until the day comes where I will be living in a house that I own. No more renting, no more moving. Just a permanent space to really call my own personal kitchen.

Until that day comes, I’ll be making simple smoothies. Nothing fancy, nothing too hard to blend down. Who has $500 dollars to spend on a blender, anyways? Ouch.

I bought this acai juice from Costco and it comes in a double pack. It tastes great as is, but even better when you thicken it up with some ice and yogurt. You can replace this brand with any other acai juice you can find in your grocery aisle.

Again, this is just a base smoothie recipe. Feel free to add more ice, juice, or yogurt depending on your desired consistency. You can even throw in some real berries if you’re so lucky!

  • 1 cup acai juice
  • 1 cup ice
  • 3/4 cup vanilla yogurt (can also use greek yogurt)

Directions

  1. Blend all ingredients until smooth.
