IMG_9540Day 11: Cookies ‘n Cream Peanut Butter Cookies. Whew, that was a long title. That’s because there’s a whole lot in these cookies: peanut butter, Oreos, white chocolate chips, and regular chocolate chips. IMG_9543

These cookies are a little more crumbly than I’d like, but they still taste great. Not all cookies can be as chewy and soft as the ones I love, right? IMG_9551

I guess I have to be fair to all the cookie lovers out there. Everyone favors a different kind of cookie. I’m keeping it versatile on my blog to please all the cookie lovers!

Day 11: Cookies ‘n Cream Peanut Butter Cookies

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup peanut butter
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 tablespoon milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 cups flour
  • 1/2 cup white chocolate chips
  • 1/2 cup chocolate chips
  • 10-12 Oreos, chopped (about 1 3/4 cups)

Directions

  1. Preheat oven to 350°F. Line 2 cookie sheets with silpat baking mats.
  2. Cream together the butter, peanut butter, and both sugars. Mix in egg, vanilla, milk, salt, and baking soda.
  3. Gradually stir in the flour until just combined. Stir in both kinds of chocolate chips and chopped Oreos.
  4. Scoop 2 tablespoon sized balls of dough. Use a fork to make a small criss-cross pattern on the top.
  5. Bake for 8-10 minutes.

Day 9: Cranberry Delight Cookies. I actually made these for my DH’s work because they were doing an event to make cookie mix jars and needed someone to bake the actual recipe so people could test the cookie before they made the jar. I was actually very impressed with this recipe and am probably adding these to my cookie gifts this Christmas.

My DH even enjoyed them even though they have oats! Shhhhhh no one tell him there are oats in the cookie. He won’t eat it if he knows.

I made them bite-sized and I think they’re perfect like that.

Cranberry Delight Cookies

Ingredients

  • 1/2 cup softened butter

  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter and both sugars. Mix in egg and vanilla.
  3. Gradually stir in the flour, baking soda, and salt until just combined.
  4. Mix in the oats, cranberries, white chocolate chips, and walnuts.
  5. Drop by rounded tablespoons onto your baking sheet.
  6. Bake for 8-10 minutes.

Blueberry Breakfast Cookies

Let’s talk about breakfast for dinner, shall we? I will happily have eggs, bacon, hash browns, and toast for dinner. It has to be one of the easiest meals to make, but it’s always so satisfying. For dessert, I’ll eat a waffle doused in cinnamon sugar.

Breakfast for dinner is a lot more common than you think. Did you know that nine out of ten Americans say that they eat breakfast for dinner, with more than half of respondents enjoying breakfast night dinners once a month or more? Even when you eat a bowl of cereal in the evening, that counts as breakfast for dinner!

The folks over at Krusteaz have “Breakfast Night” every Wednesday night for National Breakfast Month (it’s September, by the way). It’s so easy to do with all of their tasty pancake and waffle mixes. I actually ended up using their Wild Bluberry Muffin mix to make one night’s dessert.   IMG_7726

I tweaked it just a bit to the ingredients that I had on hand. Instead of using almonds and cranberries, I threw in walnuts and white chocolate chips. I’m sure the original version is delicious, but man, mine were kick-butt-good.

You have to give them a try! Each bite just screams “breakfast.” The best part is they’re made using a mix, so it’s beginner friendly and great to make with kids. I made mine bite-sized, but you can also make massive ones if you only want to eat “just one.”

Recipe adapted from the back of the Krusteaz blueberry muffin box.

Blueberry Breakfast Cookies

Ingredients

  • 1 package Krusteaz Wild Blueberry Supreme Muffin Mix
  • 3/4 cup quick cooking oats
  • 1/2 cup white chocolate chips
  • 1/4 cup chopped walnuts
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 egg
  • 1 can blueberries (enclosed in the muffin mix), drained

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large mixer, stir together the muffin mix, oats, chocolate chips, walnuts, butter, and egg until well blended.
  3. Gently stir in the blueberries by hand.
  4. Scoop into rounded tablespoon sized balls of dough and place at least two inches apart on a lined baking sheet.
  5. Bake for 9-11 minutes.
