No Bake Energy Date Bars

Have you ever tried to make bars at home? It’s a cinch! All you need is a good food processor and some delectable ingredients.

It all starts with these wonderful Medjool Dates. I have such a soft spot in my heart for this big ol’ red box ever since my trip to Yuma last year. Honestly, those were some of the most giving and loving people I have ever met. I constantly reminisce about those days!

To my surprise, I received a special delivery on my doorstep for our Yuma trip anniversary (I told you they were awesome)! The dates were freshly picked and wonderfully juicy. I’ve been eating a date a day ever since.

Dates are key when it comes to making bars because of their nutritional benefits, taste, and texture. They’re sweet without adding any sugar and turn into a paste that can hold all of your ingredients together.

Just make sure to take out all of the pits before you eat them!

This is my food processor, by the way. It’s a little small, which is why I mix in the remaining ingredients by hand, but it’s perfect for now because of my apartment living.

It make not look very pretty, but I promise it tastes delicious.

This recipe is also easy to adjust to your tastes or whatever ingredients that you have on hand. You can replace pecans with walnuts or cashews, add in some peanut butter, or sub in different dried fruits. It’s up to you to create your dream bar!

No Bake Energy Date Bars

Ingredients

  • 1 1/2 cups pitted medjool dates
  • 1 cup pecans
  • 1/2 cup trail mix (any kind will do. make sure to use one that you like! mine had cranberries, pepitas, and sunflower seeds)
  • 1/4 cup chia seeds
  • 1 tsp cinnamon
  • pinch of salt

Directions

  1. Pulse the dates and pecans in a food processor until combined.
  2. Move the mixture to a mixing bowl and stir in the remaining ingredients by hand.
  3. Spread the mixture in between two pieces of wax or parchment paper until they're 1/2 inch thick. Cut into rectangles and enjoy! Keep the remaining bars in the refrigerator until ready to eat.

Mashed Avocado Toast

Things have been a bit crazy this past week on the count of I am now a married woman!

That’s right, folks! I married my boyfriend of the last 6 1/2 years on Saturday. How does it feel? Exactly the same as it did before. I don’t know why people think marriage changes so much. We’ve lived together for the past three years and after the wedding, we continue to do so. The only thing that really changes is my last name and that I have an extra ring on my finger now.

Our wedding day went by so quickly. You truly blink and the night’s over. We had such a wonderful celebration surrounded by the people we love.

I’ll fill you in on the details later, but for now, here’s some avocado toast!

I can eat this stuff on a daily basis. Thank you California for having an abundance of the best avocados available. It truly makes my heart happy.

Mashed Avocado Toast

Ingredients

  • 1 slice of bread
  • 1/2 avocado, mashed
  • 1 1/2 tsp red pepper flakes
  • 2 tsp lime juice
  • pinch of garlic salt, to taste

Directions

  1. Mash all of the ingredients together except for the toast.
  2. Toast the bread.
  3. Spread the avocado mixture on top of the toast. Sprinkle additional red pepper flakes on top (optional).

Sweet and Savory Bites

Some days, I can’t decide if I want something sweet or savory. To be honest, I usually eat something savory and then something sweet, making sure to repeat the process at least two more times. It’s a viscous cycle. With these little snack sized bites, you won’t be forced to choose one or another. You can have both in one bite! I’m going to be sharing two recipes with you that couldn’t be any more simple. Heck, they don’t even have official recipes since they’re so easy.

I used Farmer’s Garden® by Vlasic® pickles for my first snack. Have you ever tried having pickles and peanut butter? It might sound a little strange, but it works. It’s kind of like eating french fries with a milkshake (In-N-Out, anyone?). I used the Bread and Butter Chips since they are slightly sweet and have a wonderful crunch to them. They’re hand packed and made with honest ingredients without any artificial flavors.

The cute mason jars that they’re canned in may also be used after you’ve finished the product for crafts, weddings, or storage. I’ve never seen a mason jar that I didn’t like. If Bread and Butter Chips aren’t your thing, don’t fret, there’s also Zesty Garlic Chips, Kosher Dill Spears, Kosher Dill Halves and Dill Chips.

Pickles and peanut butter are similar to one another since I never what to categorize them. Would you say peanut butter is sweet or savory? What about sweet pickles? In this case, I’d definitely say that the pickle is the savory and the peanut butter is the sweet. I used honey roasted peanut butter for these snacks and it muted the tanginess from the pickles.

These bread and butter chips are much thicker than regular pickle chips. There’s no skimping here.

It’d be silly for me to write a recipe for these. All you do is take a cracker (I used whole wheat Ritz crackers), smother it with your choice of peanut butter, and top it off with a pickle chip. Repeat twenty five times and you’ve got yourself an appetizer for your summer party.

Now for my second snack, Ritz cracker s’mores! Usually s’mores are made with sweet ingredients– graham crackers, chocolate, and marshmallows. In this case, I subbed out the graham cracker for something a little more salty.

I melted some dark chocolate, spread about a teaspoon on each cracker, and then laid them chocolate side down on wax paper. I left them while I went to go do laundry. When I came back, the chocolate was hardened, smooth, and ready to work with.

Kraft made my life a lot easier when they created StackerMallows. They’re flatter, rectangle shaped marshmallows that are perfect for s’more making.

I toasted each marshmallow over some fire before sandwiching them in between two chocolate dipped crackers.

A torched marshmallow is a beautiful thing.

I LOVED the buttery, salted crackers with the sweet inside. I might just replace graham crackers in s’mores for forever.
