Crock Pot Pork Chops

Soooo my dearest Macbook Air has decided to go cray cray on me, which makes it a bit difficult for me to blog on the road or really just blog in general. My keyboard types out random symbols like bitten apples and infinity signs. It’s pretty much the worst thing that a blogger can ask for. Even my ex-Apple employed DB can’t fix it… *gasp* What’s a girl to do now when her boy can’t fix her gadgets?

Shame on me, I forgot to renew my warranty on it (Apple never emailed me a reminder!) so I’m pretty SOL unless I want to shell out a couple of Benjamins to get to fixed. I’m debating what to do… should I try and get it fixed or just buy an Ipad instead? Still, that won’t be until I save up some money for it. It’s funny how electronics play such a huge part in your life without you even realizing it.

While I ponder about my dilemma, why don’t you throw some things in the crockpot and make dinner? I have another seriously easy recipe that would taste just as good with chicken. Three ingredients… that’s all you need. No complaining anymore, just do it.

Crock Pot Pork Chops

Ingredients

  • 5-6 pork chops, thinly sliced
  • 1 can (10.5 oz) of cream of mushroom soup
  • 1 packet of dry ranch dressing seasoning

Directions

  1. Place pork chops on the bottom of the crock pot.
  2. Sprinkle ranch dressing and pour the cream of mushroom on top.
  3. Cook on high for 4 hours or low for 6.

Honey Garlic Chicken Slow Cooker Recipe

I’m home from vacation and it’s now back to regular programming. It was so nice to get away from everything with my DB and be able to eat whatever you want. That’s the best part about vacation…. food. You guys, you need to go visit Epcot in Disneyworld if you haven’t already. There is food galore and you step into different “countries” within a matter of blocks. It’s great! I’ll be having foodie guide posts for each park in Disneyworld soon. I just have to upload all of the pictures!

Here’s a simple dinner recipe that you can throw into the crockpot. I served it over plain white rice, but you can even shred it and throw it into wraps or sandwiches served with vegetables. Recipe slightly adapted from A Year of Cooking.

Honey Garlic Chicken Slow Cooker Recipe

Ingredients

  • 3-4 chicken breasts or a pound of thighs/tenderloins (mine were frozen)
  • 1 tablespoon minced garlic
  • 1 teaspoon dried basil
  • 1/2 cup soy sauce
  • 1/2 cup ketchup
  • 1/3 cup honey

Directions

  1. Place the chicken into your cooker.
  2. Mix together the rest of the ingredients and evenly pour it on top of the chicken.
  3. Cook on low for 6 hours or high for 3-4 (the time will be less if using a larger crockpot).

Slow Cooker Beef Stew

May’s going to be a busy month for my DB and me. It’s his 25th birthday, he’ll be finishing up his first year of law school, it’ll be our 4 year anniversary, we’re traveling to Disneyworld, and amidst all of that, we’ll be trying to find new tenants and a new apartment at the same time. A lot of pleasure and a lot of work equals one. hectic. month. Eeeeep!

Here’s another crockpot recipe for you. It has the basics– potatoes, onions, and carrots. I loved using the broth to dip fresh french bread in. I’m not sure where the original recipe came from so if anyone knows, please fill me in so I can give credit. Thanks!

Slow Cooker Beef Stew

Ingredients

  • 2 - 2 1/2 pounds beef stew meat, cut into 1 inch cubes
  • 1/3 cup all-purpose flour
  • pinch of salt
  • couple grinds of fresh black pepper
  • 2 tsp minced garlic
  • 1 tsp Worcestershire sauce
  • 1 onion, chopped
  • 1 1/2 cups beef broth
  • 1/3 cup water
  • 3 potatoes, diced
  • 1 cup of baby carrots
  • half a bag of Lipton's onion mix

Directions

  1. Place meat in slow cooker. Toss with the flour, salt, black pepper, and garlic.
  2. Pour the worcestershire sauce, beef broth, water, potatoes, baby carrots, and onion mix on top of the beef.
  3. Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.
