So, it’s finals week. Not a lot of time for anything but studying… But I still have the urge to bake at 10:30 at night. What to do? Funfetti cookies! A really simple, DELICIOUS cookie in less than 15 minutes. How can you beat that? These cookies remind me so much of Jeremy. He LOVED these, and I helped him make them once on his own. Let me tell you.. that boy and baking? Not a good combination. hahahah. This recipe only has three ingredients, too.. and he put too much oil. Greasy cookies it was! Ah, how I miss that kid.

Ingredients:
1 Box of Funfetti Cake Mix
2 eggs
1/3 cup oil

Directions:
Preheat oven to 375 degrees. Mix all the ingredients, roll them into 1 inch balls, and bake for 8 minutes. Ta-da!

Still working on that perfect vegan CCC recipe.

Alright so I’ve realized vegan recipes are wayyy harder to get down than normal recipes. This is my second attempt at getting a legitimate chocolate chip cookie that’s vegan. I have my perfect non-vegan chocolate chip recipe already, though. The first attempt at cookies turned out too thin and didn’t hold together. These are a great consistency (a little bit puffier wouldn’t hurt), but the banana stood out too much for me. Chocolate chip cookies shouldn’t taste like banana. ::sigh:: Oh well, I guess that leaves me with more experimenting to do…

Ingredients:
2 1/4 cups all-purpose flour
1 tsp. baking soda
1 cup margarine
3/4 cup white sugar
3/4 cup brown sugar (packed)
vanilla (I never really measure vanilla)
1 banana
2 cups chocolate chips

Directions:
Mix flour and baking soda. Beat margarine, sugars, and vanilla in larger bowl, add mashed banana; add flour mixture. Stir in chocolate. Drop onto ungreased baking sheets. Bake for ~11 minutes (or until golden brown) at 350.

Big Soft Ginger Cookies

I never really liked molasses or ginger cookies, but they kind of grow on you. I think if you keep eating molasses little by little in baked goods, you acquire the taste for it. The texture of this cookie is amazing.. I wish all cookies had this texture– just perfectly soft and chewy. If you like ginger cookies/molasses cookies, then I would definitely recommend you trying these. I got the recipe from allrecipes.com and they had over 850 reviews and five stars, so I had to give it a go. Of course, I played with recipe like always.. Here it is!

Ingredients:
2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
1/4 cup butter, softened
2/3 cup shortening
1 cup white sugar
1 egg
1 tablespoon water
1/4 cup molasses
2 tablespoons white sugar

Directions:
1.) Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.

2.) In a large bowl, cream together the butter, shortening, and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.

3.) Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.
