Berry Nut Oatmeal

I’ve been eating a lot of oatmeal recently. The packets are easy to pack, a cinch to make (all you need is some hot water!), and it’s nutritious. Not only that, but it tastes good! It took me a while to jump on the oatmeal train, but I’m glad that I finally did. Start your kids off early and introduce oatmeal to them at a younger age. They’ll appreciate it when they’re older. I know I would have! I change up my flavors quite a bit. Depending on my mood, I’ll add bananas and honey or cinnamon and apples. Today, I was feeling berries and nuts. The great thing about oatmeal is that you can adjust it to your liking. Some like it sweet, some like it hearty. I’m all about the sweet.

I was so excited to try C&H® Pourable Golden Brown Sugar and C&H® Quick Dissolve Superfine Sugar, which are perfect for mornings. Light brown sugar is usually clumped together and harder to separate, so it was wonderful to use a brown sugar that’s made for pouring. You can pour them onto your oatmeal, fruit, or even into your coffee without worrying about chunks of brown sugar coming out thanks to the convenient dispenser. 1 packet instant oatmeal 1 tablespoon crushed walnuts 2 tablespoons assorted berries (I used frozen) 1 teaspoon C&H® Pourable Golden Brown Sugar Prepare the oatmeal according to the packet directions. Add the walnuts and berries on top. Sprinkle the sugar over the toppings and enjoy!

French Toast

We haven’t done a breakfast recipe in a while, so here’s an easy french toast recipe. There are no frills here, just good ol’ fashioned bread dipped in batter and perfectly browned on both sides.

The best breads for french toast are challah and french bread. They soak in all of the liquids while maintaining their structure. If you try to use normal sandwich bread, they tend to break down a lot easier. You want to use a hearty and thick bread.

Nothing says “I love you” like the smell of breakfast in the morning. It’s also my favorite meal to cook. On days that I work and leave the house before my DH, I even make him breakfast and leave it in the fridge for him to warm up when he wakes up.

French Toast

Ingredients

  • 1/4 cup AP flour
  • 1/2 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • pinch of salt
  • 1 tsp ground cinnamon
  • 1 tsp white sugar
  • 4 slices of thick bread

Directions

  1. Whisk together the flour, milk, egg, vanilla, salt, cinnamon, and sugar until smooth.
  2. Pour a little oil in a pan over medium heat.
  3. Soak bread in egg mixture until absorbed.
  4. Cook bread on each side until browned. Serve warm with maple syrup.

Homemade Egg McMuffin

Breakfast is probably my favorite meal of the day. It’s also probably the one that I spend the least amount of time on. One of my New Year’s Resolutions is to change that. I want to be more involved with preparing a decent breakfast.

It’s not hard to do so. Making breakfast mcmuffins at home is much easier than you think. It helps when you have this pan from Chicago Metallic. I own a couple of Chicago Metallic pans and I can vouch for each and every one. They’re great! And no, there’s no sponsorship here… just some good ol’ real talk.

This pan is known as a “muffin top” pan, but the cavity makes it ideal for our eggs.

You can even make the eggs ahead of time for the week and then warm them up every morning.

These are the ingredients that I used, but feel free to change them to your liking! Want something simple with just meat and cheese? Or how about adding some bell peppers and making it vegetarian? Go for it.

Homemade Egg McMuffin

Ingredients

  • 2 english muffins
  • 2 eggs
  • 1/4 cup sautéed mushrooms
  • 1/2 cup spinach, cooked and wilted
  • 2 pieces of bacon, cooked
  • 2 slices of turkey breast
  • shredded cheddar cheese
  • pepper, to taste

Directions

  1. Preheat oven to 350 degrees. Spray two cavities of your baking pan.
  2. Crack and egg into each cavity. Use a fork to lightly scramble the eggs. Grate some pepper on top.
  3. Bake for 15-17 minutes.
  4. Toast your english muffins. I like to add the cheese on while doing so.
  5. Assemble your sandwich as you'd like. Enjoy!
