Chewy M&M Cookie Bars

I feel complete now that I have my DSLR with me back down in Southern California. Taking pictures on a point and shoot is just not the same. Although, now with this heat wave, I don’t want to do anything since I’ve become so lethargic. It takes a lot more effort to do something when it’s 100 degrees outside vs when it’s a cool and breezy 65 degrees. This is about the only time I’d prefer to be in SF than LA.

I thought it was impossible to find mini M&M’s anywhere now and days, but then I stumbled across some at Target. Were they always there and I somehow overlooked them?

I have a love/hate relationship with Target (but really, it’s mostly love). Every time that I go shopping there with the intention of buying one item, I somehow wind up juggling six-seven things in my two hands and end up searching for a shopping cart nearby that I can throw everything into. You can never walk into Target and only buy one thing. It’s impossible.

I mean, have you seen all their new items recently? Cotton candy is my achilles heel, along with churros.

It’s kind of like the Costco disease. Who goes to Costco and spends under $50? No one. Buy five items and you’re already over your limit.

Oh, back to mini M&M’s. They’re the best… better than any regular sized M&M’s (except for Crispy, but those have sadly been discontinued). They’re much better for baking, too. Just take my word on it.

Some days, I just want a bit of something sweet, not an entire bar. I cut these into little strips so that there was plenty to share and just enough to satisfy your sweet tooth.

This recipe comes from Fantastic Family Favorites and are perfect for traveling. I’d throw them into a ziploc bag and take them on a trip with me for easy eating. The bars were sturdy, soft, colorful, and not at all greasy. Would I make them again? Definitely.

Chewy M&M Cookie Bars

Ingredients

  • 2 1/8 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 12 TBSPs butter (1 1/2 sticks), melted and cooled slightly
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsps vanilla extract
  • 1 12oz bag mini M&M's, divided

Directions

  1. Preheat the oven to 325 degrees. Line a 9x13 inch pan with foil, with the foil overhanging on the sides.
  2. Mix together the butter and sugars until combined. Stir in the egg, egg yolk, and vanilla.
  3. Fold the flour salt, and baking soda into the wet mixture until just combined.
  4. Stir in 1 cup of M&M's and turn the batter into the prepared pan, smoothing the top with the spatula.
  5. Sprinkle remaining M&M's on top and press in slightly.
  6. Bake until the top of the bars is light golden brown, slightly firm to the touch, and edges start pulling away from sides of pan, 25-28 minutes. Let cool before cutting into bars.

S’mores Fudge

I would eat s’mores everything if I could. It’s the easiest dessert with the most satisfying result. Essentially, all you need are graham crackers, marshmallows, and chocolate. This recipe is wonderful because instead of adding regular milk chocolate, you’re adding fudge. Brilliant! It’s not as messy as the s’mores by the fireplace and it’s portable. You can pack them in tupperware and take them with you anywhere your heart desires.

The fudge is also the right consistency. It’s smooth, creamy, and has crunchy bites of graham crackers mixed in. Another thing that I love about this recipe is that there’s no thermometer required. It’s practically a no-fail recipe. You don’t have to wait for the mixture to reach a certain temperature– just keep a timer handy.

This recipe comes every so slightly adapted from The Novice Chef and makes about 16 pieces of fudge.

S’mores Fudge

Ingredients

  • 1 (7 ounce) jar marshmallow creme
  • 1 1/2 cups white sugar
  • 2/3 cup evaporated milk
  • 1/4 cup unsalted butter
  • pinch of salt
  • 2 cups milk chocolate chips
  • 1 cup semisweet chocolate chips
  • 1 1/2 teaspoon vanilla extract
  • 8 graham crackers, chopped (save a piece to crush over the top)
  • 1 1/2 cup mini marshmallows

Directions

  1. Line an 8x8 inch pan with foil or parchment paper and set aside.
  2. In a large saucepan over medium heat, mix together the marshmallow cream, sugar, evaporated milk, butter and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.
  3. Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Add in the vanilla.
  4. Gently fold in graham crackers and pour into prepared pan. Top with mini marshmallows and crushed graham cracker. Chill in refrigerator for 2 hours, or until firm.

Microwave Brownie in a Cup

Lately, I’ve been lazy.

Too lazy to make meals, too lazy to go grocery shopping, too lazy to spend more than five minutes making lunch. It’s because I returned to work this month and it’s taking me a while to get back into the groove of things. I also had a wedding to go to, which means a lot of traveling back and forth when I’m not already traveling for work.

When I’m not in the air and spending time celebrating babies, engagements, birthdays, and weddings, the last thing I want to do is clean the kitchen. There are other household tasks that I have to do that are more important than cooking. What, you ask? Well, laundry’s one. I have to make sure that the DB has clean underwear (because God forbid he has to wear underwear two days in a row… gross!) and I need to have my uniform ready to wear for both workplaces.

But still, a girl’s gotta eat dessert. Even the lazy ones.

What do you do when you don’t want to wash a mixing bowl, measuring cups, whisks, and spoons? Use a microwaveable cup. It’s that easy. You mix a couple of ingredients into a mug, give it a little swirl, and throw it into the microwave to cook.

You get a fudgy chocolate dessert that’s ready to eat in a little over a minute.

Dump it out onto a plate, sprinkle some powdered sugar all over, scoop ice cream on top, and you’ve got yourself a gourmet sweet.

I was actually quite impressed with the brownie overall. It was a bit rubbery (what do you expect from a 70 second nuke?), but the taste was all there.

I topped mine with coffee bean ice cream from Trader Joe’s, getting the best of both worlds: coffee and chocolate. The next time you’re in a rush for something sweet, pull out your coffee mug and give this recipe from here a try.

Microwave Brownie in a Cup

Ingredients

  • 2 tbsp Vegetable oil
  • 2 tbsp Water
  • 1/4 tsp Vanilla extract
  • dash salt
  • 2 tbsp dark cocoa powder
  • 4 tbsp Granulated sugar
  • 4 tbsp Flour

Directions

  1. Mix together all of the ingredients in a microwavable mug.
  2. Microwave for 70 seconds.
