Cream cheese swirl brownie cake.

Well that was a mouthful. I wanted to make cream cheese swirl brownies, but couldn’t find an 8×8 or 9×9 pan handy. So instead, I used a springform pan and turned it into more of a cake. I need to work on my swirling technique, though. People make it look so easy! I thought I put it in for too long, but the inside was still moist as ever. The one thing I would have done differently is make the cream cheese mixture sweeter by adding more sugar. That would’ve made it perfect!

I rushed to take pictures of this before the sun set since I hate taking pictures with flash. I really need/want to buy of those Lowel Ego Lights. If only I could scrounge up a hundred bucks. 🙁

Red Velvet Cheesecake Bars.

Yes, you heard me right… Red velvet bars. Whoever thought that there was something more to red velvet than just cupcakes? These bars are just as portable and delectable as those cupcakes. The bottom layer is made of a thicker, brownie like consistency of red velvet while the top is a cheesecake layer. Red velvet cupcakes are normally topped with cream cheese frosting, and that combination is unbeatable, so why change it? This top layer is similar to that on top of cream cheese brownies… basically cheesecake, but no refrigeration required. We watched the premiere of Dexter at a friend’s house tonight (which was amazing, btw), and I baked these for the host because red velvet cupcakes are his favorite. His reaction? He was absolutely delighted and couldn’t stop eating them. This recipe is a keeper, that’s for sure.

Blondies

Really, that Dorie Greenspan is brilliant. She has the best recipes and they appeal to everyone.. especially me! :] I never really liked blondies, but maybe that’s because I’ve never tried these ones. They remind me of the chocolate chip pizookie at BJ’s, believe it or not. Anyways, I added walnuts to these because chocolate and nuts have to be one of the greatest combinations ever created. Just in case you didn’t pick it up, blondies.. brownies.. get it? Blondies are a cookie in brownie form, basically. Everyone that’s tried it so far loves it! Now I know what to bake for big events.
