Sour Cream Apple Bars

I just look at these pictures and think of how much I took my life for granted when I enjoyed these bars. Now, I’ve been quarantined from my room and am living out of two laundry baskets. I even had to deal with no running water for a night… pouring buckets of water into the toilet to help it flush. Here’s the door to my room:

Why? Well, a water pipe burst in my house. It just so happens that my room is the only one downstairs, so it was the only one that got slightly flooded. I walked into my room and noticed my carpet was damp. Then, I saw a water stain on the wall in my bathroom. No bueno. I told my dad and then had to leave to go to a law fair at UCLA with the DB. When I came home, a chunk of my wall had been punched out. Straight up, punched out with a hammer.
My dad had shut off all the water for the night and wouldn’t turn it on until we got the pipe checked the next day. It turns out that the pipe was underneath the cement in my floor. They had to rip out my carpet, drill a hole in the cement, and temporarily fix the pipe until the insurance company could come and look at it. So, this is what my room looks like when you walk in:

There are three huge fans constantly running– one in my closet, one in my room, and one in my bathroom. The other half of my bedroom was sealed off (as you can see) so that it wouldn’t be affected. You can’t even walk on the other side of that plastic sheet because everything is crammed over there. My bed, my desk, my nightstand, everything in my closet, entertainment stand…. everything.
If you were to go into my room now, your hair would be flying into your face and your shirt would be drenched with sweat from the heat. It’s like that to keep mold from growing. After the insurance sees it tomorrow, it’ll take an additional four weeks to do the drywall, fill the cement, fix the baseboard, and repaint. Until then, I’ll be dreaming of my bed and baking out my eagerness to get my room back.

This recipe is best out of the oven. I’ve had it cold from the refrigerator, and although it’s not bad by any means, nothing beats an apple dessert straight from the oven. I haven’t baked anything with oatmeal in a while because my DB’s not a fan, but these babies just refreshed my memory. Oatmeal is delish! I forgot that I can bake for myself, sometimes.
The sour cream melts into the middle layer and you never would’ve guessed it was sour cream. The crust is crunchy and strongly resembles granola. Ummm.. LOVE! The recipe is slightly adapted from Your Home Based Mom.

Crust:

  • 1 C butter, softened
  • 1 C firmly packed brown sugar
  • 2 C uncooked quick cooking oats
  • 1 C flour
  • 1 C chopped pecans
  • 1 tsp baking soda
  • 2 tsp ground cinnamon

Filling:

  • 1 C sour cream
  • 3/4 C sugar
  • 2 Tbsp flour
  • 1 egg
  • 4 apples, unpeeled and diced
  1. Heat oven to 350 degrees. Cream together the butter and brown sugar. Add the remaining crust ingredients and beat until well mixed.
  2. Press HALF of crust mixture onto bottom of ungreased 9 x 13 pan. Bake for 8-10 minutes or until light golden brown.
  3. While crust is baking, combine the filling ingredients; mix well. Gently pour the filling over the hot, partially baked crust. Crumble the remaining crust mixture over the top of the fill and press down lightly.
  4. Bake for an additional 25-30 minutes or until the top is golden brown and the center is set. Cool & cut into bars. Store refrigerated.

Apple Streusel Bars slash Send Me to NY for the Martha Stewart Show, please? :)

Okay before I go on with the pictures, I should probably explain the title of this post. The Martha Stewart Show is filming a food bloggers special in NY on May 12th, and I was invited to go! Just to make note so there’s no confusion, I was invited to be in the audience because they wanted to target food bloggers, not as an
actual guest on her show. That would be SUPER amazing!!… and I’m sure they would’ve taken care of my traveling expenses if that was the case.


Anyways, I really really really want to go because it’d be such a great experience, especially for networking! Who knows who I’ll meet and maybe I can even get hooked up in the baking world. Oh wait, that’s just me dreaming again.


BUT (of course, there’s always a “but”)… I just can’t afford to fly to NY from LA right now. I have to RSVP for the show by April 28th, which gives me a solid week to raise funds. I know this is asking a lot, but I’m asking for any donations, small or big, to help me fund this short NY trip! In return, if I get enough donations for the trip, I promise to post 5 recipes a week for the month of May. Trust me, that’s A LOT! I’d do that just for you guys, it’s true. Of course, I’d post tons about the trip and the show as well so I can share my entire experience with you all.

This recipe comes from Our Best Bites— that blog never fails me. Actually, most apple desserts never do. I baked this in a 9″x9″ dish rather than a 9″x13″ that the recipe calls for because I, personally, enjoy thicker bars. This means I had to bake it about 10 minutes longer. The ratio of crust to apples to crumb topping was perfect. I wouldn’t change a thing about it… or maybe I’d add more apples next time because that’s the best part of the whole thing. My sister and I always end up picking out the apples to eat first.

The only thing I would change is to maybe leave off the glaze because the bars were sweet enough without it. Or if you wanted it to look pretty, you could use 1/4 of the glaze instead of the whole recipe. Here’s the recipe with my adjustments in green italics:

SWEET PASTRY:
  • 2 c. flour
  • 1/2 c. sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. real butter, softened (no substitutions!)
  • 1 egg, beaten
APPLE FILLING:

  • 1/2 c. white sugar
  • 1/4 c. flour
  • 1 tsp. cinnamon (I used about 3 teaspoons.. I LOVE cinnamon)
  • 4 c. (about 3 medium) sliced, peeled baking apples (I used 4 Braeburn apples)
GLAZE:
  • 2 c. powdered sugar
  • About 3 Tbsp. milk (whole milk is best)
  • 1 tsp. almond extract (I used vanilla extract)
To prepare crust, mix flour, sugar, salt, and baking powder in a medium bowl. Cut in butter with a pastry blender or two knives until you have pea-sized crumbles. Gently mix in beaten egg.

Spray a 9×13 baking dish (I used a 9×9) with non-stick cooking spray. Gently pat about 2/3 of the crumb mixture onto the bottom of the dish. Preheat oven to 350 and set aside.
To prepare apple filling, combine flour, sugar, and cinnamon. Toss with apples and spread apples out on prepared crust. Sprinkle reserved crust mixture over apples evenly and bake in preheated oven for 40 minutes
(mine took just less than 50 minutes). When finished, allow to cool completely.

To prepare glaze, whisk together powdered sugar, almond extract, and enough milk to achieve desired consistency. Place glaze in a Ziploc bag and cut off a very small portion of one of the corners. Drizzle glaze over cooled pastry and allow to harden (you can place it in the freezer to hurry things along). Cut into bars and serve.

Apple Dapple Cake

I’ve been a blogging addict as of late. With this one and my other one, I have the need to update one or the other every day. When I’m not updating, I’m always thinking of what I could bake/what outfit I could put together to update. It’s terrible with finals just around the corner. Just think.. I graduate IN A WEEK! Oh my goodness.


By the way, has anyone seen the movie UP? Umm best pixar movie ever! (actually I love monsters inc and toy story a heck of a lot). But UP was amazing! I’m a sucker for old people and old people love just makes my heart melt. I was crying within the first 5 minutes of the movie. Sad, I know… but if you haven’t seen it yet, I’d highly recommend it for all ages.


Yup, I’m still on that apple kick, getting rid of all the apples in my house. When I saw this cake, I knew I had to make it because 1.) there are apples in the recipe and 2.) just look how moist it is! I actually LOVED this cake. My dad thought it was best warm, right out of the oven and I thought it was the best after it had cooled for a couple of hours. It wasn’t very sweet, even with the glaze, which makes it perfect for an afternoon/morning snack. Original recipe can be found from A Southern Grace HERE.


Cake:
3 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 large eggs, beaten
1/2 cup vegetable oil
1 cup applesauce
2 teaspoons vanilla
2 teaspoons cinnamon
3 cups finely chopped apples

Glaze:
1 cup brown sugar
1/2 cup butter
1/4 cup milk

1.) In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt. Make a well in the center and set aside.
2.) In a medium bowl, combine eggs, oil, applesauce, and vanilla. Add the wet mixture to dry ingredients and stir just until moistened. Stir in apples.
3.) Spread the batter in a greased and floured 9 x 13-inch pan. Bake at 350°F for 45-50 minutes.
4.) For the glaze, combine the brown sugar, butter, and milk in a small saucepan. Cook and stir until bubbly and all of the sugar is dissolved. Cool slightly. Drizzle warm over cake when it has cooled for 5 minutes, so it can seep into the cake and keep it moist and completely irresistible.
