Crockpot Caramel Apple Crumble

This is a going to be a quick post since I’m currently on a trip and really should be sleeping right now, but I had the need to blog. Don’t you just love when that happens? I’m missing sleep to talk to myself. That’s probably not normal, but who am I to say what’s normal or not.

This recipe from How Sweet Eats is a dessert in a crockpot. Winner! Can you tell how much I love my crockpot? I use it for everything. I should probably keep more crockpots around so that I can have them all going at the same time. Instead of being the crazy cat lady, I’ll be the crazy crockpot lady.

It’s a tad bit on the sweet side, but that wasn’t a problem for me. You can also choose to peel your apple prior to throwing them in the crockpot, but that was too much work for me so I left the skin on. Serve it with some vanilla bean ice cream and you’ve got yourself heaven in a bowl.

Crockpot Caramel Apple Crumble

Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 5 large apples, cut into chunks
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • Topping
  • 2/3 cup oats
  • 2/3 cup loosely packed brown sugar
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon
  • 3-4 tablespoons softened butter
  • 1 teaspoon vanilla extract

Directions

  1. Mix both sugars and spread at the bottom of your crockpot.
  2. Toss your apples with the salt and cinnamon, then throw them on top of the sugar in a single layer.
  3. Mix your crumble topping ingredients until it comes together. Evenly sprinkle it over top of the apples. Cook on low for 4 hours, or high for 2 hours.
  4. Turn off heat, unplug, and let sit, covered, for one hour to let the caramel thicken.

Baked Apples

After a day of long flight delays, all I want to do is eat a bowl of ice cream topped with warm baked apples. Something about freshly baked apples just comforts the soul– and that’s exactly what I need. San Francisco’s weather has been kicking my butt lately. All I wanted to do was get home in time so that I can visit my bestie tomorrow, but nope… apparently mother nature had other plans for me.

I’m really bummed that I won’t be going to Utah since I’m long overdue for a visit and I miss my BFF so  darn much. Plus, I had a bunch of baked goods to bring with me. Bahhh excuse my ranting. A 5 hour work day turned into 16 and I’m a bit tired.

I’ll get right to the point: Baked Apples. Warm. Cinnamon-y. Simple. Just as good eaten with a fork as it is served with ice cream. Bam.

Ingredients

  • 3 fuji apples, peeled and thinly sliced
  • 2 1/2 tsp cinnamon
  • 1 tsp cornstarch
  • juice of half a lemon
  • 3 tablespoons brown sugar
  • 2 tablespoons butter

Directions

  1. Preheat oven to 420 degrees.
  2. Mix all of the ingredients (except for the last) together in a bowl until apples are evenly coated. Cube the butter and scatter on top of the apples.
  3. Bake for 25-30 minutes.

Betty Crocker’s Apple Crisp

My DB and I decided to make a surprise visit back home this past weekend because I didn’t know when I’d be able to come home next with my busy schedule coming up. It was a wonderful weekend filled with family, eating (LOTS of it), and getting my fix of the cutest nieces and nephew in the world. It was my DB’s nephew’s first birthday party and I just couldn’t miss it. I’m so glad that we didn’t because kids grow up so darn fast! The next time we come home, they’ll be taller than me!

It may officially be fall, but it sure doesn’t feel like it yet– up north or back home. I made an apple crisp to kick off the season and I ate it while watching my favorite shows start back up: Dexter, The Walking Dead, and Fringe.

I may or may not have been a little lazy and left the peel on, but I would never ever do that again. DEFINITELY PEEL YOUR APPLES BEFORE BAKING! I cannot stress that enough in an apple crisp. This recipe is your standard apple crisp, but it always hits the spot. I love the topping to apple ratio in this…. plenty of topping and just enough apples! From Betty Crocker.

Betty Crocker’s Apple Crisp

Ingredients

  • 4 medium tart cooking apples, sliced (4 cups) 
  • 3/4 cup packed brown sugar 
  • 1/2 cup all-purpose flour 
  • 1/2 cup quick-cooking or old-fashioned oats 
  • 1/3 cup butter, softened 
  • 3/4 teaspoon ground cinnamon 
  • 3/4 teaspoon ground nutmeg 
  • Ice cream, if desired 

Directions

  1. Heat oven to 375ºF. 
  2. Spread apples in an 8×8 pan. In medium bowl, stir remaining ingredients except for the ice cream until well mixed; sprinkle over apples. 
  3. Bake about 30 minutes or until topping is golden brown and apples are tender when pierced with a fork. Serve warm with ice cream.
