Oh, the dreaded couples’ holiday is coming up. That means lots of cheesy cards, heart shaped everything, and men scrambling trying to find the perfect throw-away gift for his girl. I don’t mind the holiday, though. Actually, I don’t mind any of the holidays. Every holiday means specialized items in the baking aisle!
For that, I am a sucker. I will mindlessly fill my cart with every heart shaped, red, and pink chocolate there is. I know it all tastes the same, but seeing chocolate chips a tad different than the normal shapes and colors of what I’m used to brings joy to my baker heart.
Nestle can do no wrong in my book.
These s’mores cookies from Chelsea’s Messy Apron are wonderfully soft and chewy. They’re packed with flavor and remind me of camping. I love the touch of Nestle’s Valentine chips.
Ingredients
- ½ cup unsalted butter at room temperature
- ½ cup white sugar
- ¼ cup + 1 tbsp. brown sugar, lightly packed
- 1 large egg, at room temperature
- 1 tsp. vanilla extract
- 1 cup + 7 tbsp. all-purpose flour
- ½ tsp. baking soda
- 1 tsp. baking powder
- ¼ tsp. salt
- ½ cup (2 sheets) graham cracker, coarsely broken up
- 1 cup Nestle Valentine's dark chocolate chips
- ½ cup Jet-Puffed mallow-bits
Directions
- Preheat the oven to 350 degrees F.
- Cream the butter and both sugars. Mix in the egg and vanilla and beat until just incorporated.
- Gradually stir in the flour, baking soda, baking powder, and salt until just combined.
- With a wooden spoon, stir in the M&M’s, graham crackers, chocolate chips, and mallow-bits.
- Pack a cookie scoop completely full with the dough.
- Shape into 2-3 tablespoon sized balls and place on baking sheet.
- Bake for about 10-12 minutes.
