Peeps Rice Krispies Cake

Happy Easter! I hope you all celebrated with plenty of Peeps marshmallows! I know I did. I made a faux cake with rice krispies because I was never a fan of “real” cake as it is. It’s so easy, too! I used a variety of bunny and peeps marshmallows to add some color into the cake.

I think there’s just as much candy for Easter as there is for Halloween. Seriously! All the kids will crash from their sugar rush during the day.

These aren’t as colorful as I would have hoped, but I think that if I used more marshmallows then it would have been better. Or, perhaps I stirred the batter too much. Either way, they still taste delicious.

Peeps Rice Crispies Cake

Ingredients

  • 1 tsp butter
  • 12 Peeps Marshmallows
  • 4 cups rice crispies cereal
  • Extra Peeps and sprinkles for decoration.

Directions

  1. Melt the butter in a large pot over low heat. Spread the butter so it covers the entire bottom of the pot.
  2. Place your Peeps and let them melt. Don't stir! That'll help keep the color in the final product.
  3. Once the marshmallows have melted, turn off the heat and stir in the cereal until evenly coated.
  4. Press the mixture into a 9" cake pan and put sprinkles on top.

Chewy Coconut White Chocolate Chip Cookies

My DH has a problem… an Amiibo addiction. Do you know what those things are?  They’re little figurines that Nintendo created for the Wii. Problem is, my DH just collects them. He doesn’t care much for actually playing with them.

I guess there could be worse things that he’s into, but man, Nintendo created some monsters! They’re so good at it, too. I don’t get the appeal over these things.

What I do get, however, is chewy cookies! White chocolate and coconut go so well together.

These cookies are about as soft as it gets. Just look at the inside!:

Recipe slightly adapted from Tracey’s Culinary Adventures (the only thing I did differently was omit the coconut extract since I didn’t have any on hand and increase the amount of white chocolate chips).

Chewy Coconut White Chocolate Chip Cookies

Serving Size: a little over 2 dozen

Ingredients

  • 1 1/2 cups plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 1/2 teaspoon vanilla extract
  • 3/4 cup white chocolate chips
  • 1/2 cup sweetened shredded coconut

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter and both sugars. Mix in the egg and vanilla.
  3. Gradually stir in the flour, baking powder, baking soda, and salt until just combined.
  4. Add in the white chocolate chips and coconut.
  5. Roll the dough into tablespoon sized balls and drop onto baking sheet, at least two inches apart.
  6. Bake for 9-11 minutes.

The American Kitchen

I lust over kitchens all day long online. I look at pictures on Instagram, home blogs, and especially Pinterest. I keep hoping to myself that one day, I’ll be able to create my very own American Kitchen. It seems as if that day might be a while for my DH and me, but hey, a girl can dream. Everyone has their own idea of an American Kitchen, but mine would definitely be functional and sleek. I want it to be clean with splashes of color, inviting to the eye, and up to date with the most modern appliances. GE Appliances creates products that suit everyone’s dream, whether they want something more vintage looking or something more industrial.  Since 1905, they have understood that creating a kitchen is about customization because no two families are the same. They’ve been doing this for 110 years, so must be doing it right! The kitchen is the heart of the home. I spend most of my time in there, so I want it to be as comfortable as possible. That’s actually why I’m considering moving in May when our lease is up. I need a bigger kitchen! Our current kitchen is teeny and I just can’t deal with it anymore. I’m running out of counter space and I dream of having an open layout, where I can be included with our guests while preparing food at the same time. I would rather live in a place where the kitchen takes up the entire downstairs. How fabulous would that be? There is a documentary series called Our American Kitchen that explores how real GE Appliance owners are living their lives. What common themes are found in the kitchen that we all want? Are there a lot of differences between the needs in a kitchen? How do families vary with their kitchen space? People use their kitchens for all sorts of things, from work to leisure. Some use it to escape from their troubles (That’s me! My kitchen is my stress reliever!), while others use the kitchen to bring their family closer together through sharing recipes and meals.
