Happy Easter! I hope you all celebrated with plenty of Peeps marshmallows! I know I did. I made a faux cake with rice krispies because I was never a fan of “real” cake as it is. It’s so easy, too! I used a variety of bunny and peeps marshmallows to add some color into the cake.
I think there’s just as much candy for Easter as there is for Halloween. Seriously! All the kids will crash from their sugar rush during the day.
You can check out all of the different Peeps flavors and colors on their website here.
These aren’t as colorful as I would have hoped, but I think that if I used more marshmallows then it would have been better. Or, perhaps I stirred the batter too much. Either way, they still taste delicious.
Ingredients
- 1 tsp butter
- 12 Peeps Marshmallows
- 4 cups rice crispies cereal
- Extra Peeps and sprinkles for decoration.
Directions
- Melt the butter in a large pot over low heat. Spread the butter so it covers the entire bottom of the pot.
- Place your Peeps and let them melt. Don't stir! That'll help keep the color in the final product.
- Once the marshmallows have melted, turn off the heat and stir in the cereal until evenly coated.
- Press the mixture into a 9" cake pan and put sprinkles on top.
