Coffee Ice Cream Float

You guys know how much I love my Nespresso VertuoLine machine, right (and it’s on sale right now for $199!)? It makes coffee for me and espresso for my DH with the touch of a button. It’s just a tad too hot for me to drink coffee these days, so I decided to add a little spin and make it cold! It’s quite simple, really.IMG_7569   All you do is brew a cup, stick it in the fridge, and voi-la! You’re done! If you’re me, though, you know that’s not enough. Three scoops of ice cream should do it.IMG_7584

Yup, that’s good. Reallllllll good. IMG_7586

Mix it up with your straw and you’ll get that frothy goodness on top.IMG_7613There’s nine different coffee flavors and four different espresso flavors to choose from, so don’t let my flavor choice stop you. Mix it up with different coffee and ice cream flavors!

Coffee Ice Cream Float

Ingredients

  • 1 Vanizio pod
  • 3 scoops of coffee chocolate chip ice cream

Directions

  1. Brew your vanizio pod in the Nespresso Vertuoline machine. Refrigerate your cup for at least an hour.
  2. Once the coffee is cold, remove from the fridge and put in the three scoops of ice cream.
  3. Enjoy!

Southern Candied Sweet Potatoes

Have you heard of the TV series, “Southern Uncovered With The Lee Bros?”

“In each episode of Southern Uncovered, Matt and Ted explore a different city in the South, seeking to expose the unique and unexpected sides of Southern cuisine and culture. I’ve never been over there, but I would LOVE to visit one day and eat my heart away!

I imagine southern food tastes ten times better when you’re actually in the south. I’ve had my fair share of “southern food,” but I don’t think it’s truly authentic. IMG_7424

I tried to recreate some southern loving in my own kitchen with these candied sweet potatoes. They’re a little healthier than normal since I used coconut oil, but they’re just as scrumptious. IMG_7430

The brand that I used was Nutiva Organic Virgin Coconut Oil. It was a clean, rich taste with minimal processing, which is something I’m always looking for in coconut oil. Did I mention it’s also cold pressed AND organic? Winner, winner chicken dinner.

The sweet potatoes came out soft, sweet, and tasted the best warm.IMG_7451

Southern Candied Sweet Potatoes

Ingredients

  • 3 cups cubed sweet potatoes
  • 2 tbsp coconut oil (I used Nutiva)
  • 2 tbsp dark brown sugar
  • 1 tsp cinnamon
  • pinch of nutmeg

Directions

  1. Preheat oven to 350 degrees. Line an 8x8 pan with foil. Set aside.
  2. Steam your cubed sweet potatoes until bright orange.
  3. Place them in a large mixing bowl. Toss with the remaining ingredients.
  4. Spread the potatoes out in the pan and bake for 30 minutes.

Soft Malted Chocolate Chip Cookies

I love summer and all, but there’s one thing that I cannot stand: ants! Summer always brings around ants, especially here in Southern California. We were pretty lucky with our last apartment. They came once through the patio door. Nothing a little cinnamon trail couldn’t fix.

At our current place, however, they’re coming out of every crack imaginable! There should be some disclosure about that when you rent a place. Beware: ants errrrrywhere when the temperature rises!

We’ve tried every home remedy, but we finally resulted to Terro liquid ant baits. It’s the most entertaining thing ever. I spent 30 minutes just watching the ants go into the trap, suck their little brains away, and then go back to the opening they came from. Maybe I just need a more entertaining life.

I’m crossing my fingers that the traps work. At least they haven’t invaded the kitchen yet! That’s where all the good stuff is.

The worst three insects/bugs on my list would definitely be ants, flies, and mosquitoes. Who needs them, anyways?IMG_2856

These cookies are more cake like than the cookies I prefer. The malted flavor underlies the buttery dough. No one could guess what the secret ingredient was, but they all did taste something a little different from a normal chocolate chip cookie. Recipe from Cookies and Cups.

Soft Malted Chocolate Chip Cookies

Ingredients

  • 2½ cups flour
  • ½ cup malted milk powder
  • 1 tsp baking powder
  • 1¼ tsp kosher salt
  • 2 tsp cornstarch
  • 1 cup butter, melted
  • 1½ cups light brown sugar
  • 2 eggs
  • 1 Tbsp vanilla
  • 2 cups chocolate chips

Directions

  1. Cream together the butter and brown sugar. Add in the eggs and vanilla.
  2. Gradually stir in the flour, malted milk powder, baking powder, salt, and cornstarch until just combined.
  3. Fold in chocolate chips.
  4. Refrigerate dough for at least two hours.
  5. Preheat oven to 350°
  6. Line baking sheet with Silpat sheet.
  7. Roll dough into balls and bake for 11-12 minutes.
