The Best Lactation Cookies

April 28, 2016 by kim 1 Comment

IMG_1442This recipe is a little different, but they’re just as good as any other cookie. They’re different because they have ingredients that will help promote milk production in breastfeeding moms (that’s me!). I’ve always been curious about lactation cookies and wonder if they really work.

For me, I did see an increase in production overnight, but it could have also been the fenugreek or brewers yeast pills that I was also taking that day. Who knows.

Honestly, no one would be able to tell any difference in these cookies vs chocolate chip oatmeal cookies. They taste great, have a wonderful consistency, and don’t have any weird aftertastes. My DH didn’t dare try them, though, because he doesn’t like oatmeal. Shame, shame.

This recipe makes a lot for one person, so I froze some and bake a dozen a week so I can munch on them whenever I please. They bake wonderfully out of the freezer. Thanks How Sweet Eats for the great recipe!

I bought this brewers yeast powder for the recipe.

Porcupines in a Skillet

April 21, 2016 by kim Leave a Comment

IMG_3608

My life revolves around Ellie’s napping schedule. When she’s out, I catch up on on errands around the house and try to make lunch/dinner as fast as I can. You never know when she’s going to wake up! With this dish, it saves me a lot of time since everything is done in one pot. Easy as can be.

IMG_3602

Instead of having to watch two or three different pots, I only have to keep my eye on one (that also makes cleaning up a lot easier). Not only that, but the whole meal can be served straight out of the pot. I don’t have to do anything additional once it’s done cooking.

You can your carbs, veggies, and protein, all in one dish. If you ask me, I’d say it’s a great deal.

Monster Oreo Chunk Cookies

April 15, 2016 by kim Leave a Comment

IMG_3516

I feel like there are a million different kinds of Oreos on the shelves right now. Have you visited Target recently? There’s like an entire aisle dedicated to Oreo!

IMG_3522

Not only are Oreos good on their own, but they’re even better baked into a cookie. Yessss, please.

IMG_3524

These cookies are a little drier than I would have liked, but that could easily be remedied by reducing the baking time.
