Since my DB works at Apple, I dropped by the mall on his lunch break to keep him company. There always has to be at least one good place in a food court, right? My DB chose Greek food and we both went for the combination plate. I got beef and the DB got chicken.
All the plates come with a side salad, vegetables, rice, pita bread, and a roasted tomato. We also paid a little extra to get a side of hummus. The meat was grilled right there in front of you while you wait, so it was steaming hot and fresh! The salad was nothing special, neither were the vegetables… But they did accompany the plate quite well.
All in all, a good price for a ton of good food. The owner was extremely nice and even gave us extra vegetables on the side. Score!

Cinnamon Roll Cake

Sorry I’ve been MIA for a while.. the 12 days of cookies really wore me out! I even took a mini break to Las Vegas to relax. I’m addicted to the “Deal or No Deal” slot machine. By addicted, I mean putting a dollar in and freaking out if I lose it or not. Don’t worry, I won it back on the “Goldfish” slot machine. Haha, I’m quite the high roller, don’t you know.
Here’s a quick little post on a cake that people loved. My DB and his sister in law even claimed it to be the best thing I’ve baked so far. That’s quite a statement! The cake is basically a lighter version of a cinnamon roll. Soft, just the right amount of sweetness, and not so messy to eat. I didn’t add in nuts, but I’m sure they’d make a great addition. Cake:

  • 3 cups flour
  • ¼ teaspoon salt
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1 ½ cups milk
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 cup (1 stick) real butter, melted

Topping:

  • 1 cup (2 sticks) real butter, softened
  • 1 cup brown sugar
  • 2 tablespoons flour
  • 1 tablespoon cinnamon
  • 3/4 cup chopped pecans, (optional) (always measure the nuts first then chop them)

Glaze:

  • 2 cups powdered sugar
  • 5 tablespoons milk
  • 1 teaspoon vanilla
  1. Preheat oven to 350 degrees.
  2. Mix together the flour, salt, sugar, baking powder, milk, eggs and vanilla. Next, stir in the 1/2 cup melted butter. Pour batter into a greased 9 x 13 inch baking pan.
  3. Next, for the topping, mix the 2 sticks of softened butter, brown sugar, flour, cinnamon and pecans until well combined. Drop evenly over cake batter by spoonfuls and use a knife to marble/swirl through the cake.
  4. Bake at 350 degrees for 25-30 minutes or until toothpick comes out clean from center.
  5. For the glaze, mix powdered sugar, milk and vanilla in a large bowl. Whisk until smooth and pour over warm cake. Serve warm or at room temperature.

Nutella Swirled Banana Bread

The grand opening weekend at work is finally over! It has seriously been one hectic work week. I even managed to sleep 12 hours one night after working for 12. I didn’t even know that I was capable of sleeping for that long!
Exciting news… I’ll be visiting Paris in April with my family! Finally, I’ll be able to eat macaroons and bread and butter, galore. I cannot wait! Anyone have any recommendations for must sees/go to places in Paris?
This bread came out a bit dry, but the taste was all there. I’d add an extra banana or some yogurt to the batter next time. It sure did turn out looking beautiful, though! Usually in Nutella baked goods, you can never taste the Nutella. But you can definitely taste them in this bread! The recipe comes from recipe girl.
  • 2 cups all-purpose flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups mashed ripe banana
  • 1/3 cup plain low fat yogurt
  • 1 tsp. vanilla extract
  • 3/4 cup Nutella (chocolate-hazelnut spread)
  1. Preheat oven to 350 degrees F. Grease an 8×4 inch loaf pan.
  2. Whisk together flour, baking soda & salt. Set aside.
  3. In a mixing bowl, beat together the sugar and butter. Add the eggs and mix well. Add banana, yogurt and vanilla; beat until blended. Next, blend in the flour mixture until just incorporated.
  4. Microwave the Nutella for about 15 seconds until soft. Add 1 cup of the banana bread batter to the Nutella and stir together.
  5. Take turns spooning the nutella batter and the plain banana batter into the loaf pan. Swirl the batters with a knife.
  6. Bake the batter for 60 minutes, or until toothpick inserted into the center comes out clean.
