Planning a Disney World trip is by far harder than any other trip I’ve planned. New York, I can do. Seattle, a breeze… but out of all the options in Orlando? Whoa mama! Talk about overload. I’ve already spent hours researching different hotels around the area in a budget price range. I have yet to find one that has it all. Bummer. Until then, I’ll catch up on my Desperate Housewives; I’m only on season three!

How cute is this cake? I love the look of the marshmallow topping with the light fudge layer on top. Heck, I could eat the chocolate-y topped marshmallows on its own. Overall, the cake is extremely moist and very sweet. I’m talking overload sweet. If you can’t handle eating spoonfuls of sugar, then I’d only recommend eating a bite instead of a whole piece. Chocolate Marshmallow Cake

Ingredients

  • 1 cup boiling water
  • 2 cups sugar
  • 1 3/4 cups flour
  • 3/4 cup cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 cup oil
  • 1 tsp vanilla
  • Chocolate Satin Frosting (see recipe below)

Directions

  1. Preheat the oven to 350 degrees.
  2. Boil the water and keep it simmering.
  3. Mix the sugar, flour, cocoa, baking soda, baking powder, and salt. Add the eggs, buttermilk, oil and vanilla and beat together.
  4. Add the 1 cup boiling water and carefully stir until the water is mixed in; beat for 1 1/2 minutes.
  5. Pour the batter into the 13x9 pan. Bake at 350 for 35-38 minutes.
  6. Make the frosting while the cake is baking. When the cake is done, pour the warm frosting over the hot cake.

CHOCOLATE SATIN FROSTING

Ingredients

  • 1/2 cup butter
  • 6 Tbl buttermilk (or use 6 Tbl milk mixed with 1 tsp vinegar)
  • 4 Tbl cocoa powder 1 (16 oz) box powdered sugar
  • 1 tsp vanilla
  • 2 cups marshmallows (optional)

Directions

  1. Cook the butter, buttermilk, and cocoa in a medium saucepan. Stir constantly, just until it comes to a boil. Remove the pan from the heat.
  2. Add the powdered sugar and vanilla, and beat with a wooden spoon until frosting is nearly smooth (remember to stir every now and then while the cake bakes).
  3. Put the marshmallows on top, then evenly pour the warm frosting over everything. Cool to room temperature before serving

    Ah! I see you’re heading to the fantasy world ! I was there three years ago and found a fairly price hotel @ http://www.hotels.com –
    If you’re willing to rent a car and stay at a place where there is some distance it should save you some dough… I’m guessing if its a must to stay at the resort… can’t help you there!

    im a disney pro, i HIGHLY suggest staying on Disney property ! it adds SO much to the vacation. They have hotels at 3 levels, the budget level hotels are not too pricey. Its SO much more fun to have the disney theme even at the hotel, plus the bus transportation system rocks, its so easy to get from the parks to the hotel and back, and they also include the free shuttle from the airport to the hotel and back. its a LOT of work the first time, but its well worth it. If you have the time, you will want 2 days for epcot, 2 days for the magic kingdom and 1 day each for Animal Kingdom and Hollywood studios. Even then you wont see it all, its impossible. you could honestly stay for 3 weeks and not see it all. Have fun !!!

    Went to Orlando in 2009 and had so much fun! I was there in August though so the weather was so humid! May seems like it would be better weather. Anyway I recommend staying at a hotel at International Drive (http://www.internationaldriveorlando.com/)
    Most of the hotels have free shuttles to go to Universal Studios and Disneyworld. And there are these trolleys called I-Ride Trolleys that take you up and down the International Drive Resort Area. It only costs $1.25 to ride! Took those trolleys to explore Orlando, went to their malls and Premium Outlets! There are also cute local shops and flea markets that are easy to get to by the I-Ride Trolley. Our family saved lots of money this way because International Drive is central to everything and transportation to get to anywhere is either free or really cheap. We stayed at the Ramanda Inn, and to be honest, I wasn’t expecting much but it was not bad. Free breakfast, and the rooms, although not fancy, were spacious and comfortable, staff was friendly, the lobby is beautiful too. The views from inside the hotel is quite nice because it’s by the lake! Anyway, i hope I somewhat helped. Check out the site I linked and it’ll give you more details. You’re going to have lots of fun in Orlando! Make sure you check out Epcot because their food is delicious – particularly liked the sushi at “Japan” Pavilion!

    very chocolate with some rought textures of peanuts in the middle of the brownies, plus the mallows completes the package. It’s great, kids will be loving it.

    That looks so good!
    Being from Orlando I would definitely recommend the Buena Vista Palace. It is on Disney property, so you can get a free shuttle anywhere in the area. Also, they frequently have deals that combine a free buffet breakfast. I;ve stayed there many many times and every time was perfect! Hope that helps if you havent gone yet…
