Cheesy Spinach Crescent Rolls

I have strange phases that I go through where I’m obsessed with Craigslist. Sometimes, I like to hunt for vintage furniture, look for random jobs, or in this case, look at every listing possible for apartments and homes for rent. I guess it’s not out of the ordinary since our lease for our current place is up in May. Although I love our location, price, and size of our current town home, the kitchen is just not doing it for me anymore.

So, I’ve started browsing for a new possible place to call home. My DH and I have moved 3 times in the last 4 years, so moving isn’t new to us. We’ve constantly been “upgrading” every time we moved. We went from a 450 square foot apartment with absolutely no light to a 750 square foot apartment in a high rise building. From there, we moved to a 1190 square foot, 2 bedroom town home and that’s currently where we are now. Even though the space is big, it’s just not big in the right places.

Instead of having a long living room, I would have preferred the kitchen to take up the majority of the space. When you rent, you have the flexibility of moving to something better when it comes along. That’s the nice thing about it.

I’m not sure yet if we’ll be moving again this year, but I would say that it’s highly likely. My top three priorities in a living place are: the kitchen, lots of natural light, and a washer/dryer. For my DH, it’s his commute to work, the garage, and having dual paned windows (our currently place definitely does not have that).

We’ll be looking at a number of places this weekend. I can’t wait!

Maybe I should get my real estate license so I can be doing this all day and actually get paid for it.

I’ve always loved looking at houses. Model homes are my jam! I’ll pull over for a chance to walk through a model home any day.

These cheesy spinach crescent rolls are a quick and easy snack whenever you need a pick me up throughout the day. They’re best warm, straight from the oven. They’re also great for parties!

Cheesy Spinach Crescent Rolls

Ingredients

  • 1 tube Pillsbury crescent rolls
  • 1/4 bag of spinach, chopped
  • 1/4 cup feta cheese
  • 1/4 cup light shredded mozzarella cheese
  • salt and pepper, to taste

Directions

  1. Preheat oven to 350 degrees.
  2. Unroll the crescents and separate into triangles.
  3. In a bowl, mix together the spinach, both cheeses, and salt and pepper.
  4. Place about 2 teaspoons of the mixture onto the wide end of each triangle. Roll from the fat end to the skinny end.
  5. Place on baking sheets and bake for 13-15 minutes.

Salmon Patties

On Tuesday, March 10th, it’s National Pack Your Own Lunch Day! I know, I know, there’s literally a day for everything, but it keeps my calendar fun. I try to pack my lunch as often as I can in order to save money and eat a little healthier. I know that whenever I buy my lunch, I don’t always choose the healthiest option.

Now, Chicken of the Sea® has created flavored salmon pouches to make packing your lunches that much easier. I’ve always been a fan of the tuna pouches, but salmon is a game changer! They’re shelf-stable and naturally high in protein and Omega-3 fatty acids. My doctor just told me that I need to eat more of that in order to lower my cholesterol.

The pouches come in a variety of flavors and are light, a cinch to open, and compact. They’ll fit in any lunchbox. I always take a couple on my work trips because they’re great to keep in my bag and easy to eat in a hotel room. Plus, I’ll actually feel full after eating it and stop my mindless snacking!

In this case, I actually used the pouches to bake with. There’s a ton of recipe ideas on Chicken of the Sea’s website!

The original recipe said to bake for 45 minutes, but I thought that was a little long. I think 30-35 minutes would have been more appropriate. It could have been my oven, though. Just keep an eye on your patties and make sure they don’t over bake!

Recipe slightly adapted from Chicken of the Sea. I didn’t do the lemon sauce, but I did serve mine with a bit of tzatziki sauce on the side.

Salmon Patties

Ingredients

  • 1 pouch (5 oz) Chicken of the Sea Premium Skinless/Boneless Pink Salmon
  • 3/4 cup milk
  • 1 cup soft bread crumbs
  • 1 egg, beaten
  • 1/4 cup finely chopped spinach
  • 1 tsp minced onion
  • 1/2 tsp Worcestershire sauce
  • 1/4 tsp salt
  • 1/9 tsp pepper

Directions

  1. Preheat oven to 350.
  2. Combine salmon, milk, bread crumbs, egg, spinach, onion, Worcestershire sauce, salt, and pepper. Mix well.
  3. Spoon into eight greased muffin cups.
  4. Bake for 35 minutes, or until browned.

Garlic Cauliflower Breadsticks

I’m always looking for quick and semi-healthy snacks to make. Snacking is probably my favorite activity of the day. These garlic cauliflower breadsticks fit the bill.

People use cauliflower to make pizza crust all of the time, so why not turn it into breadsticks? It only makes sense.

These tasted so good that my DH actually ate a couple without complaining about vegetables. Hallelujah!cauliflowerbreadsticks-3

Garlic Cauliflower Breadsticks

Ingredients

  • 1 cup cooked, riced cauliflower
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup bread crumbs
  • 1 egg, beaten
  • 1 tsp dried oregano
  • 1/2 tsp crushed garlic
  • 1/2 tsp garlic salt
  • For Topping:
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely minced
  • 1/2 cup Mexican blend cheese
  • *Optional Marinara sauce for dipping

Directions

  1. Preheat oven to 450 degrees. Line baking sheet with parchment paper.
  2. Mix together cauliflower, cheese, bread crumbs, and egg. Stir in the oregano, crushed garlic and garlic salt.
  3. Transfer to baking sheet, and using your hands, pat out into a large rectangle.
  4. Bake for 15 minutes. Remove from oven.
  5. Mix olive oil and garlic in a small bowl and spread the mixture over baked cauliflower. Top with cheese blend.
  6. Place back into the oven until all of the cheese has melted.
