The Best Lactation Cookies

IMG_1442This recipe is a little different, but they’re just as good as any other cookie. They’re different because they have ingredients that will help promote milk production in breastfeeding moms (that’s me!). I’ve always been curious about lactation cookies and wonder if they really work.

For me, I did see an increase in production overnight, but it could have also been the fenugreek or brewers yeast pills that I was also taking that day. Who knows.

Honestly, no one would be able to tell any difference in these cookies vs chocolate chip oatmeal cookies. They taste great, have a wonderful consistency, and don’t have any weird aftertastes. My DH didn’t dare try them, though, because he doesn’t like oatmeal. Shame, shame.

This recipe makes a lot for one person, so I froze some and bake a dozen a week so I can munch on them whenever I please. They bake wonderfully out of the freezer. Thanks How Sweet Eats for the great recipe!

The Best Lactation Cookies

Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 6 tablespoons brewers yeast
  • 3 tablespoons ground flaxseed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 4 tablespoons unrefined organic virgin coconut oil
  • 1 1/2 cups sugar
  • 2 tablespoons almond butter
  • 1 large egg + 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups dark chocolate chips/chunks

Directions

  1. Preheat oven to 350 degrees F.
  2. Cream together the butter, sugar, and coconut oil. Mix in the almond butter, egg, egg yolk, and vanilla until well combined.
  3. Gradually stir in the oats, flour, brewers yeast, flaxseed, baking powder, baking soda, cinnamon, and salt until just combined.
  4. Mix in the dark chocolate chips.
  5. On a lined baking sheet, drop dough by 1 inch rounds. Bake for 10-11 minutes.

Day 9: Cranberry Delight Cookies

Day 9: Cranberry Delight Cookies. I actually made these for my DH’s work because they were doing an event to make cookie mix jars and needed someone to bake the actual recipe so people could test the cookie before they made the jar. I was actually very impressed with this recipe and am probably adding these to my cookie gifts this Christmas.

My DH even enjoyed them even though they have oats! Shhhhhh no one tell him there are oats in the cookie. He won’t eat it if he knows.

I made them bite-sized and I think they’re perfect like that.

Cranberry Delight Cookies

Ingredients

  • 1/2 cup softened butter
  • 1/3 cup packed brown sugar
  • 1/3 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter and both sugars. Mix in egg and vanilla.
  3. Gradually stir in the flour, baking soda, and salt until just combined.
  4. Mix in the oats, cranberries, white chocolate chips, and walnuts.
  5. Drop by rounded tablespoons onto your baking sheet.
  6. Bake for 8-10 minutes.

Day 4: Oatmeal Cookies

We’re keeping it simple for day 4 with these oatmeal cookies. Nothing fancy here… just oatmeal and no extra add-ins. That’s the way you have to do it sometimes. Return to basics!

These cookies are so so good. I know I say a lot of cookies are good, but these really are. They’re not very sweet, soft, and chewy.

I feel a little behind on my Christmas shopping this year. Well, I got all of the kiddos done, but I still have some more to do. Thank goodness for the internet and online shopping! I’ve been busy working with the nursery. I know it’s still early, but I can’t help feeling antsy with a disorganized room.

I spent the whole week putting together a dresser, which was a complete pain in the butt. I’d highly recommend buying a dresser that’s already put together or hiring someone to put it together for you (especially if you’re almost 30 weeks preggers!). My DH works all day and can’t lift heavy things because of his back surgery a couple of months ago, so it was up to me to get things done.

I’m already starting to feel quite large and in charge, getting out of breath over little things, so I figured the sooner the better. All of the big stuff for the nursery is complete and I couldn’t be happier! Now it’s just a matter of nesting whenever the time comes.

For plain cookies, these turned out beautifully. The ridges on top, the browned edges, the way they perfectly spread out… These would be great in a cookie basket or gift bag for the holidays. If you reallllly want, you can add some chocolate chips or toffee to the mix. Trust me, it’s not necessary. Whatever you do, don’t skimp on the cinnamon! That’s the most important part.

Oatmeal Cookies

Ingredients

  • 1/2 cup butter, room temperature
  • 1/2 cup shortening
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 tsp cinnamon
  • 1 tablespoon vanilla
  • 2 1/4 cup all-purpose flour
  • 2 cups old fashioned oats

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together sugars, butter, and shortening. Beat in the eggs and vanilla.
  3. Add baking soda, salt, baking powder, and cinnamon. Add flour and oats and mix until just combined.
  4. Roll dough into balls and bake for 10-12 minutes.
