Campbell’s One Dish Chicken and Rice Bake

campbell-3   There’s no soup aisle in the grocery store without those red and white cans. My mom has used them, my neighbors have used them, my friends have used them, and I’m no different. I’m a fan of the red and white. After all, they have been around for 144 years! If you haven’t figured it out yet, I’m talking about Campbell’s condensed soups. My personal favorites are Cream of Chicken and Cream of Mushroom since you can do so much with them. Plus, my DF will still eat food that I make with Cream of Mushroom even though he despises mushrooms! Did you know that Campbell’s chicken noodle soup has 32 feet of noodles in every single can? That equals to about six of me! campbell   I found a quick and easy recipe on their website, Campbell’s Kitchen. There, you can find fresh ways to make your everyday meals and even convince your family to eat the impossible! There’s a lot of inspiration just waiting to be found. This dish that I chose is great because you literally only need one pan. You stir all the ingredients in one, bake it, and serve it! How easy can cleanup get? Not only that, but you get a side and a main dish as well. You’re preparing two different parts of the meal in the oven at the same time. The recipes on Campbell’s Kitchen are time friendly and simple.

We all know how kids can be– they’ll eat nothing but chicken nuggets and ketchup for one week and then pizza the next. Sometimes, they’ll avoid sauces at all costs. Other times, they’ll drench everything in ranch dressing. Campbell’s One Dish Chicken and Rice Bake

Ingredients

  • 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
  • 1 cup water
  • 3/4 cup uncooked regular long-grain white rice
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 1 1/4 pounds skinless, boneless chicken breast halves

Directions

  1. Stir the soup, water, rice, paprika and black pepper in a 2-quart shallow baking dish. Top with the chicken. Season with additional paprika and black pepper. Cover the baking dish.
  2. 2 Bake at 375°F. for 45 minutes or until the chicken is cooked through and the rice is tender. Let stand for 10 minutes. Stir the rice before serving.

Parmesan and Garlic Roasted Brussels Sprouts

Sorry for the use of so many exclamation marks. I’m determined and hopeful! I’ve also been up since 3:30 AM for no reason, so I’m a little delirious and groggy.

It’s the worst waking up in the middle of the night and not being able to go back to sleep. There’s nothing to do and no one to keep you company. I’m sure I’ll pass out the moment I finish this post.

How was your Thanksgiving? Mine was spent with my DF’s family and as every other holiday, we spent the whole day feasting. It was glorious.

A new dish on the table this year were brussels sprouts. I never ate them when I was little (I’m pretty sure they don’t exist in Asian dishes) and still rarely eat them now unless it’s prepared for me by someone else. They’re a foreign vegetable to me. I have no idea what to do with them or how to serve them.

I thought to myself, “how hard can it be to cook them in the oven?” As it turns out, it’s pretty darn simple. Toss a little olive oil on any vegetable with a little bit of seasoning and you can bake your way to roasted goodness.

Do you cook brussels sprouts at home? How do you prepare it?

Parmesan and Garlic Roasted Brussels Sprouts

Ingredients

  • 12 oz brussels sprouts, trimmed and cut in half
  • 2 tbsp olive oil
  • 2 1/2 tsp parmesan cheese
  • 1 tsp minced garlic
  • salt and peper, to taste

Directions

  1. Preheat oven to 350 degrees.
  2. Toss the brussels sprouts with the olive oil, parmesan cheese, garlic, salt, and pepper until evenly coated.
  3. Lay out evenly on lined baking sheet and bake for 20-25 minutes, tossing halfway.

Macaroni and Cheese

They sent me a “mystery ingredient” in the mail to make something with. When I opened the brown package, I found out that it was Colman’s mustard. At first, I panicked a little bit. What on Earth am I supposed to do with mustard? My DF hates it and I only eat it on hot dogs, hamburgers, and sandwiches. Lucky for me, they sent two forms of mustard.. regular mustard and mustard powder.

I used the mustard powder to create a simple dish: mac n’ cheese. It’s such a great comfort dish, especially during the colder months. It’s so easy to make that it’s almost embarrassing to make it from a box!

I made a bread crumb/Cheez-It mixture to add on top for an extra layer of crunch. My DF ate 1/4 of the pan and didn’t even question the ingredients used because of how inviting the dish looked. You can’t go wrong with mac n’cheese, whether you’re six years old or sixty.

Macaroni And Cheese

Ingredients

  • 1 box (I used 13.25 oz) whole wheat elbows
  • 6 tablespoons butter
  • 3 1/2 tablespoons flour
  • 3/4 tsp dry mustard
  • salt and pepper, to taste
  • 2 1/4 cups milk
  • 5 cups cheddar cheese
  • 1 cup cheez-its, crushed
  • 1/2 cup bread crumbs
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper

Directions

  1. Preheat oven to 350 degrees.
  2. In a large saucepan, cool the pasta for 6-8 minutes. Drain and set aside.
  3. Using the same pan over medium-low heat, completely melt your butter. Add in the flour, dry mustard, salt, and pepper and mix well.
  4. Slowly stir in the milk and bring the temperature up to medium high until it begins to bubble. Bring the temperature back down and let simmer together for about a minute.
  5. Remove from heat and stir in 4 cups of cheddar cheese until it is completely melted. Stir in the cooked pasta until it is evenly coated in the cheese mixture. Pour the mixture into a 9x13 pan.
  6. Put the last cup of cheese on top.
  7. Now, make the topping by mixing together the cheez-its and bread crumbs. Pour evenly over the pan.
  8. Top the pan off by sprinkling paprika and cayenne pepper on top. Bake for 15-20 minutes.
