My blog queue has quite a bit of recipes in it, which means I should probably post more often. I made these donuts oh-so-long ago that I almost forgot I had them. With only a total of seven ingredients in the donut AND the glaze, it’s about as simple as it gets.

These taste pretty much the same as a funfetti cupcake, except they’re in a more fun form, don’t you think? They’re festive and a great excuse to eat sweets for breakfast. They’d also be great for birthday mornings. Who wouldn’t want to wake up to a plate full of confetti sprinkles?

Recipe from Cookies & Cups (adapted from Wilton) and makes 12 donuts.

Double Glazed Baked Funfetti Donuts

Ingredients

  • 2 3/4 cups Funfetti Cake Mix
  • 3/4 cup buttermilk
  • 2 eggs
  • 2 Tbsp melted butter

Directions

  1. Preheat oven to 425° and lightly grease a donut pan with cooking spray.
  2. Beat all ingredients together for thirty seconds. Transfer batter to a ziploc bag and snip the corner. Fill the donut molds 2/3 full.
  3. Bake for 7-9 minutes. Let cool for 5 minutes before turning the pan upside down to remove and let cool completely.

Ingredients

  • 1/4 cup milk
  • 2 cups powdered sugar
  • 1 tsp vanilla

Directions

  1. Pour all the ingredients in a saucepan over medium heat. Stir constantly until everything dissolves and the mixture is nice and smooth. Quickly dip both sides of the donut in the glaze and let them cool on a cooling rack. You can keep the heat on low if you'd like, but I just turned mine off and stirred when I needed the glaze to break down.

Ingredients

  • 1 cup of powdered sugar
  • 1 tbsp milk
  • Sprinkles (the more variety, the more fun!)

Directions

  1. Stir the powdered sugar and milk until smooth. Spread approx 1 tsp of frosting on top of each donut and immediately coat with sprinkles.

Red Velvet Cookies

You know what I just realized? I spend 1/3 of each month living in different hotels. This month, it’s more like 2/3 because of this extra week I’ll be spending in downtown LA. How crazy is that? Even though I’ve been doing this for almost a year, staying at a hotel still feels like a mini vacation to me. I love having a freshly made bed with tucked corners every morning. I love leaving the room and coming back to a clean bathroom and bedroom. I love being able to walk downstairs to a gym 24 hours. I love having more pillows than I could possibly need.

But you know what makes this week extra special? My DB is staying here with me the entire time. He’s actually the reason why we’re here this week. Sure, the hotels are nice to stay in, but it’s even nicer having someone staying with you.

Just sayin’.

Alright, now onto the cookies. Can you believe these were from a box? They’re just doctored up cake mixes turned into cookies. I love using the red velvet box mixes when baking because that means I don’t have to deal with never ending bottles of red dye. I can keep my hands and kitchen red-free. I also think that there’s a stronger red velvet taste when you use the boxed mix. If you’re in a rush to bake dessert, I’d make these. They’re one of the softest and chewiest cookies I’ve ever made, and they were a hit with the crowd. Recipe adapted from the Duncan Hines Box.

Red Velvet Cookies

Ingredients

  • 6 tablespoons butter
  • 1 cup powdered sugar
  • 1 teaspoon cornstarch
  • 1 box Red Velvet Cake Mix
  • 2 large eggs

Directions

  1. Preheat oven to 375°F. Melt butter; set aside to cool.
  2. Mix the powdered sugar and the cornstarch together in a shallow bowl.
  3. In a separate bowl, stir together the cake mix, butter, and eggs until well blended. It should have the same consistency as cookie dough.
  4. Form dough balls and roll in powdered sugar mix. Drop onto an ungreased baking sheet.
  5. Bake for 9 to 11 minutes or until set.
  6. I sprinkled some extra powdered sugar onto the cookies when they came out of the oven, but you can omit that if you'd like.

Easy Turtle Brownies

I got to spend all day today out and about in downtown San Diego. I forgot how beautiful this city was. There’s so much to do and eat, including hole in the wall burrito places that need to be discovered. As much as I indulged in all of the savory food down here, I didn’t manage to get any sweets. Oh how I could go for one of these brownies right now!
These brownies are an easy way to impress guests without too much effort. They’re “simply homemade!” The brownies came from a box mix, but those caramels are surely time consuming to melt down. A touch of pecans and you’re good to go!

Easy Turtle Brownies

Ingredients

  • 1 box of brownie mix and the ingredients needed on the back of the box
  • 16 oz of caramels, unwrapped
  • 5 tablespoons heavy whipping cream
  • 2/3 cups chopped pecans, divided

Directions

  1. Preheat oven to 350 degrees.
  2. Prepare the brownie batter as advised on the back of the box.
  3. Pour half of the brownie mixture into a greased or lined 8x8 pan and bake for 15 minutes.
  4. While the brownies are cooking, melt the caramels and whipping cream in a double boiler until evenly melted, stirring constantly.
  5. Evenly pour the caramel sauce on top of the brownies and top with 1/3 of the chopped pecans. Top with the rest of the brownie batter and the last 1/3 cup of pecans.
  6. Return the pan to the oven and bake for an additional 35 minutes, or until toothpick comes out clean from the center.
  7. Cool completely before cutting and serving.
