Day 12: Sugar Coated Nutella Cookies

Day 12 of my 12 days of cookies:  I’ve saved the best for last… sugar coated Nutella cookies! We all know how popular the chocolate-hazelnut spread has gotten over the past couple of years. I’m definitely on that bandwagon. My fiancé still eats it by the spoonful out of the jar when he thinks I’m not looking.

These cookies are light, buttery soft, and sweet. Unlike most Nutella cookie recipes, you can actually taste the chocolate hazelnut with every bite. If you don’t like your cookies as sweet, then I’d forgo rolling the dough in sugar and baking them as is. Recipe from Living Eventfully.

Day 12: Sugar Coated Nutella Cookies

Ingredients

  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup Nutella
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • sugar for rolling cookies in

Directions

  1. Preheat the oven to 375 degrees F.
  2. Cream together the butter, both sugars, and Nutella. Add the egg and vanilla.
  3. Gradually mix in the flour, baking soda, and salt.
  4. Chill dough in refrigerator for 30 minutes.
  5. Shape the cookie dough into 1 inch round balls. Rolls the dough balls in sugar and place the cookies 2 inches apart on the cookie sheet.
  6. Bake for 8-9 minutes. Remove from oven and allow to cool on cookies sheet for about 5 minutes.

Day 11: Chocolate Chip Cornflake Cookies with Marshmallows

Day 11 of my 12 days of cookies: Chocolate Chip Cornflake Cookies With Marshmallows. Could the cookie name be any longer? Sorry, guys. I’m just not very creative when it comes to naming cookies.

These are pretty much s’mores cookies without the graham cracker. I used cornflakes in them instead because of how wonderful they are in my everything cookies.

This cookie is a bit out of the ordinary and may through people off at first glance, but they are truly wonderful cookies. It has a lot of texture going on, giving it a different dynamic than an ordinary chocolate chip cookie.

They’re a bit thinner and a little more crisp, making them a perfect cookie to pack this holiday season. Enjoy!

Chocolate Chip Cornflake Cookies with Marshmallows

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cup AP flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup cornflakes (I used Frosted Flakes)
  • 1/2 cup mini chocolate chips
  • 1 cup mallow bits

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter and both sugars.
  3. Beat in the egg and vanilla.
  4. Gradually mix in the flour, baking powder, baking soda, and salt until just combined. Stir in the cornflakes, chocolate chips, and mallow bits.
  5. Form into tablespoon sized balls and drop onto baking sheet.
  6. Bake for 12-14 minutes.

Day 10: Chocolate Cherry Chip Cookies

Day 10 of my 12 days of cookies: Chocolate Cherry Chip Cookies. Cherry chips are kind of hard to come by, but I found mine at Target during Valentine’s day. I bought a couple of bags to last me throughout the year. In case you can’t find it anywhere by you, you can also buy them online at Amazon.

I love how festive these cookies look. The white and red chips remind me of a candy cane, without the peppermint taste. Just like ninety percent of cookies on my blog, they’re extremely soft and chewy. I’m all about getting that perfect cookie wrinkle on top.

Wouldn’t these cookies look great on a plate for Santa this Christmas?

I won’t tell the kids if you sneak a couple of bites in during the night.

I don’t have to tell you again that this is my favorite cocoa powder. This is the Costco-sized jar now, folks. Things are getting serious.

Day 10: Chocolate Cherry Chip Cookies

Yield: 3 dozen

Ingredients

  • 1 cup butter
  • 1 cup white sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 3/4 cups flour
  • 1 1/4 cups cocoa powder (I used Rodelle)
  • 2 tsps. baking soda
  • 1/4 tsp. salt
  • 1 bag of Log House Cherry Chips
  • 1 1/2 cups white chocolate chips

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter and sugars until light and fluffy. Slowly add eggs and vanilla until well combined.
  3. Gradually mix in the flour, cocoa, baking soda and salt.
  4. Fold in white chips and cherry chips.
  5. Using a medium cookie scoop, drop by rounded spoonfuls onto the prepared cookie sheet.
  6. Bake for 9-11 minutes.
