Day 10: Pumpkin Snickerdoodles

pumpkin snickerdoodles

Day 10: Pumpkin Snickerdoodles. I made these for Thanksgiving and these were probably my favorite out of my Thanksgiving batch. I think I left them in the oven just a minute too long because they were a little tougher than I would have liked the day after. Under-baking is the key to these cookies.pumpkin snickerdoodles

Pumpkin is not just for the fall and Halloween. It’s available year round so take advantage of it!

Ingredients

  • ½ cup unsalted butter
  • ⅓ cup lightly packed brown sugar
  • ½ cup white sugar
  • ½ teaspoon vanilla extract
  • ⅓ cup canned pumpkin
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon each nutmeg and ground cloves
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ¼ teaspoon cream of tartar
  • 1 and ½ cups white all-purpose flour
  • Rolling the cookies
  • 4 tablespoons white sugar
  • ¾ teaspoon ground cinnamon

Directions

  1. Preheat the oven to 350 degrees F.
  2. Cream together the butter and both sugars. Add in the vanilla, pumpkin, cinnamon, nutmeg, cloves, and salt.
  3. Gradually mix in the baking soda, cream of tartar, and flour until just combined.
  4. Roll out balls of dough and then roll in a bowl that has the white sugar + ground cinnamon.
  5. Place on a cookie sheet and bake 13-15 minutes. Slightly under-baking these cookies yields soft and tender cookies.

Day 9: Cranberry Delight Cookies

Day 9: Cranberry Delight Cookies. I actually made these for my DH’s work because they were doing an event to make cookie mix jars and needed someone to bake the actual recipe so people could test the cookie before they made the jar. I was actually very impressed with this recipe and am probably adding these to my cookie gifts this Christmas.

My DH even enjoyed them even though they have oats! Shhhhhh no one tell him there are oats in the cookie. He won’t eat it if he knows.

I made them bite-sized and I think they’re perfect like that.

Day 7: Jumbo Dark Chocolate Cookies…. except not really jumbo. I made mine normal sized since I was bringing these to Thanksgiving dinner and wanted more to share. Whatever size you want to make, they taste just as good.

Dark chocolate with dark chocolate chips? Yes, please! We’re big fans of dark chocolate in this household. Thank goodness Nestle started making dark chocolate morsels because it makes my life a lot easier. I can find them anywhere.

I can’t believe next week is already Christmas. I’m going to start making my dough this week so I don’t have to do as much next week. Prepping is the key to success, friends.

These cookies are wonderful. I would recommend even underbaking them just a tad so they finish baking outside of the oven for that chewy texture. Recipe from Nestle.

  • 1 cup all-purpose flour

  4. Mix in the egg and vanilla. Gradually add in the flour, baking cocoa, baking soda, and salt.
  5. Stir in the remaining 1 cup of morsels.
