Apple Dapple Cake

I’ve been a blogging addict as of late. With this one and my other one, I have the need to update one or the other every day. When I’m not updating, I’m always thinking of what I could bake/what outfit I could put together to update. It’s terrible with finals just around the corner. Just think.. I graduate IN A WEEK! Oh my goodness.


By the way, has anyone seen the movie UP? Umm best pixar movie ever! (actually I love monsters inc and toy story a heck of a lot). But UP was amazing! I’m a sucker for old people and old people love just makes my heart melt. I was crying within the first 5 minutes of the movie. Sad, I know… but if you haven’t seen it yet, I’d highly recommend it for all ages.


Yup, I’m still on that apple kick, getting rid of all the apples in my house. When I saw this cake, I knew I had to make it because 1.) there are apples in the recipe and 2.) just look how moist it is! I actually LOVED this cake. My dad thought it was best warm, right out of the oven and I thought it was the best after it had cooled for a couple of hours. It wasn’t very sweet, even with the glaze, which makes it perfect for an afternoon/morning snack. Original recipe can be found from A Southern Grace HERE.


Cake:
3 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 large eggs, beaten
1/2 cup vegetable oil
1 cup applesauce
2 teaspoons vanilla
2 teaspoons cinnamon
3 cups finely chopped apples

Glaze:
1 cup brown sugar
1/2 cup butter
1/4 cup milk

1.) In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt. Make a well in the center and set aside.
2.) In a medium bowl, combine eggs, oil, applesauce, and vanilla. Add the wet mixture to dry ingredients and stir just until moistened. Stir in apples.
3.) Spread the batter in a greased and floured 9 x 13-inch pan. Bake at 350°F for 45-50 minutes.
4.) For the glaze, combine the brown sugar, butter, and milk in a small saucepan. Cook and stir until bubbly and all of the sugar is dissolved. Cool slightly. Drizzle warm over cake when it has cooled for 5 minutes, so it can seep into the cake and keep it moist and completely irresistible.

Another Apple Crisp

It feels as if summer is coming faster than ever… why? Well, the number of bbq’s we’ve been having, the 80+ degree weather, the ice cream trucks, and oh yeah, the number of apples in my house! My mom buys our apples from Costco, the huge premium fuji ones that come in a pack of like 24. That means I have plenty of apples to bake and experiment with.

My little sister is an apple-dessert-eating fiend, so I told her I’d make her something as long as she peeled, cored, and sliced the apples. She agreed and peeled 7 apples for me! It’s just as good as having one of those apple cutting/corer/peeler devices (which I need to get my hands on soon). This apple crisp was quite delicious, but a little on the sweet side. I’d recommend toning down the amount of sugar next time. Other than that, how can you go wrong with baked apples? You can find the recipe on allrecipes HERE.

  • 4 apples – peeled, cored and sliced
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 2 tablespoons butter, melted
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a 9 inch square baking pan, mix sliced apples with brown sugar. In a large bowl, mix together flour, white sugar, cinnamon and salt. In a small bowl, beat together egg and melted butter. Stir into flour mixture. Spread evenly over apples.
  3. Bake in preheated oven for 30 to 40 minutes, or until topping is golden and crisp.

Chocolate Chip Walnut Cookies

Lately I’ve been baking for people, so I usually turn to recipes that are tried and true instead of trying new ones and risking the chance that they turn out bad. This one is Martha’s Stewart’s chocolate chip cookies recipe found at my previous post HERE. The only difference is that I threw in some walnuts this time around and they made it twice as good! Man, I totally sucked at posting for the month of May. You’ll have to excuse me for that… 🙁 I promise I’ll be better when June rolls around! There are so many occasions coming up in that month that I’ll be sure to be busy baking with baby showers, weddings, bbq’s, and graduation parties. I’m also in the works of starting a fashion blog with my sister just for kicks, so I’ve been busy designing/figuring out the layout for a new site. I’ll keep you posted once it’s up and running!

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 cup packed light-brown sugar
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 2 cups (about 12 ounces) semisweet and/or milk chocolate chips
  • 1/2 cup walnut pieces
  1. Preheat oven to 350 degrees. In a small bowl, whisk together the flour and baking soda; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with both sugars; beat on medium speed until light and fluffy. Reduce speed to low; add the salt, vanilla, and eggs. Beat until well mixed, about 1 minute. Add flour mixture; mix until just combined. Stir in the chocolate chips & walnut pieces.
  2. Drop heaping tablespoon-size balls of dough about 2 inches apart on baking sheets lined with parchment paper.
  3. Bake until cookies are golden around the edges, but still soft in the center, 8 to 10 minutes. Remove from oven, and let cool on baking sheet 1 to 2 minutes. Transfer to a wire rack, and let cool completely. Store cookies in an airtight container at room temperature up to 1 week.
