Day 2: Triple Chocolate Toffee Bars

Day 2 of my 12 days of cookies: Triple Chocolate Toffee Bars. You know how I like to mix things up with some cookie bars in my countdown. This was made especially for National Cookie Day, December 4th!

Krusteaz helped me celebrate this wonderful day with some cookie mixes. I used one of the recipes on their site to spruce it up a bit and added some chopped toffee chocolate bars.

Easy peasy. I also added some chocolate sprinkles on top for good measure. img_6197

This recipe is a good one for the kiddos to help out with and get in the holiday spirit since it’s made using a pre-made package. fullsizeoutput_44ad

If you think forming cookies is too much work from a boxed mix, you could follow these directions and omit the toffee to make triple chocolate chunk bars. It’s easier to throw the entire batter into one pan than roll balls of dough, right? But c’mon, that’s just too easy.

Triple Chocolate Toffee Bars

Ingredients

  • 2 (1.4 oz each) milk chocolate English toffee bars
  • 1 package Krusteaz Triple Chocolate Chunk Cookie Mix
  • 1 egg
  • 1/2 cup butter, softened

Directions

  1. Preheat oven to 350°F.
  2. Chop English toffee bars into approximately 1/4-inch pieces. Place in medium bowl. Add Krusteaz Triple Chocolate Chunk Cookie Mix, egg and butter. Stir together until dough forms, hand kneading if necessary. Press dough into a lightly greased, 8x8x2-inch pan.
  3. Bake 23-28 minutes or until light golden brown. Cool completely and cut into bars.

Day 1: Lemon Sugar Cookies

Hurrah! It’s time to kick off my 12 days of cookies! I’ve been doing it every year for a while now, and it’s not about to stop any time soon. I may not get through all 12 cookies by Christmas (helloooo mom world), but I’ll definitely make it by the end of the year.

Lemon desserts are slowly growing on me. They have to be really, really good for me to like it, though. I liked this cookie because the lemon flavor isn’t overpowering. It’s subtle, but there. You could definitely up the amount of lemon extract/juice or even add some zest into the mix if you want a more powerful flavor. IMG_8753

After all, it’s hard to not like a sugar cookie. How can you go wrong with something so simple?

Lemon Sugar Cookies

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Zest of 2 large lemons
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, at room temperature
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 2 tablespoons fresh lemon juice
  • 1/2 cup granulated sugar for rolling cookies

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter and sugar. Mix in the zest, egg, vanilla extract, lemon extract, and lemon juice until smooth.
  3. Gradually stir in the flour, baking soda, baking powder and salt.
  4. Roll rounded tablespoons of dough into balls and roll in sugar. Place on baking sheets two inches apart.
  5. Bake 8 to 10 minutes or until cookies are slightly brown around the edges and set.

Cake Mix Cranberry White Chocolate Cookies

fullsizeoutput_41ecAre you sweating over dessert for Thanksgiving? Well, look no further. Since there are so many dishes to worry about as is, why not let a cake mix do the work for you? You only need five ingredients to make these cake mix cranberry white chocolate cookies. Count them on your hand.

img_5767Yes, you read that correctly. Pillsbury does all the work for you with their Purely Simple White Cake & Cupcake Mix. Add a little bit of love and ten minutes later, you’ve got yourself a homemade dessert to bring to the table. From beginning to finish, this takes less than half an hour to prepare, bake, and serve. Thanksgiving is all about spending the day with your family, so why not do that instead of spending all day in the kitchen?

fullsizeoutput_420bIf you have kids helping you bake, you can mix the dough by hand instead of using an electric mixer because the dough comes together quite easily. I’ve never met a kid that didn’t like mixing the dough! Put those little arms to work.

I always have plenty of white and chocolate cake mix readily available in my pantry because of how versatile and quick they are. I can turn the prepared mix into cupcakes, bundt cakes, bread, cookies, or even bars. It’s like a one stop shop for baking. You don’t need to have a million ingredients on hand, so it’s wonderful for the occasional baker.

After you make these cookies, you’re going to realize just how easy it is and wonder why you don’t bake at home more often. Seriously! There’s no excuse not to make desserts from home if you have access to Pillsbury’s products.

The base of this cookie is easy to change up. You can use Pillsbury’s Purely Simple Chocolate Cake & Cupcake Mix and change the add-ins. All you have to do is keep the ratio of eggs and oil the same.

Cake Mix Cranberry White Chocolate Cookies

Ingredients

  • 1 box Pillsbury™ Purely Simple™ White Cake & Cupcake Mix
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup white chocolate chips
  • 1 cup dried cranberries

Directions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, mix together the cake mix, vegetable oil, and eggs until combined.
  3. Slowly stir in the white chocolate chips and dried cranberries.
  4. Form the dough into two inch balls and place onto lined baking sheet.
  5. Bake for 10 minutes.
