Blue Velvet Cake Mix Cookies

It’s almost been two hours since Ellie has gone down for her morning nap, so I’m here updating the blog! She’s been taking longer morning naps recently and I’m alllllll about it. Now that she’s consistent with her bedtime, I finally have a little down time to bake in the evenings when I still have the energy.

Even still, these are quick cookies to make because they’re from a box. Sometimes you just need a quick sweet treat, ya know? Plus, I love the fun colors from using blue velvet cake mix and the added large sprinkles.

I love that the nights are finally starting to cool down in Southern California and we don’t have to sleep with the air conditioning on any more. Hallelujah for saving a little on our electric bill! We’ve pretty much been running it straight since June. With the end of summer, I’m ready for all of the fall flavors coming up. Holiday baking is just around the corner!

Blue Velvet Cake Mix Cookies

Ingredients

  • 1 box blue velvet cake mix (16.5 oz)
  • 1/2 cup softened butter
  • 2 eggs
  • 1 tsp vanilla
  • sprinkles (optional)

Directions

  1. Preheat oven to 350 degrees.
  2. In a mixer, cream together the butter and cake mix.
  3. Add in the eggs and vanilla until just combined.
  4. Scoop dough into rounded tablespoons and top with sprinkles (if using). Place at least two inches apart on baking sheet.
  5. Bake for 9-10 minutes.

Mint Chocolate Chip Cookies

I feel like the baking bug hasn’t bitten me in a while. It’s amazing what having a baby can do to you. They’ll take over your entire world. It’s like everything just takes the backseat all of a sudden. The days go by fast now, and I wouldn’t have it any other way.

Here’s a quick recipe for those in a rush or short on time. It’s a spruced up box mix, which is never a bad idea in my book. Plus, it’s mint and chocolate.

Recipe from Betty Crocker

Mint Chocolate Chip Cookies

Ingredients

  • 1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
  • 1/2 cup butter or margarine, softened
  • 1/4 to 1/2 teaspoon mint extract
  • 6 to 8 drops green food color
  • 1 egg
  • 1 cup creme de menthe baking chips
  • 1 cup semisweet chocolate chunks

Directions

  1. Heat oven to 350°F. In large bowl, stir cookie mix, butter, extract, food color and egg until soft dough forms.
  2. Stir in creme de menthe baking chips and chocolate chunks.
  3. Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet.
  4. Bake 8 to 10 minutes or until set. Cool 3 minutes; remove from cookie sheet to wire rack.

Mini M&M and Dark Chocolate Chip Cookies

I’m a simple girl. I love chocolate chip cookies and snickerdoodles. I don’t need a bunch of add-ins or fancy mixers. Sure, I’ll eat other cookies, but when it comes down to it, I’ll always pick the simple ones. This cookie is on the list.

M&M’s are pretty much the simplest candy that comes to mind. They’re just little bite-sized pieces of chocolate covered in a candy coating. Add them to a cookie base and you’ve got a simple, delicious cookie.

Don’t they just look dreamy? The cream cheese, bread flour, and corn starch in the batter really make a difference. `

Mini M&M and Dark Chocolate Chip Cookies

Yield: 3 dozen

Ingredients

  • 2 sticks of butter, softened
  • 4 oz. softened cream cheese
  • 1 1/4 cups brown sugar
  • 1/4 cup white sugar
  • 2 teaspoon vanilla
  • 1 egg
  • 2 cups all-purpose flour
  • 1/2 cup corn starch
  • 1/2 cup bread flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup mini m&ms
  • 1/2 cup dark chocolate chips

Directions

  1. Preheat oven to 375 degrees.
  2. Cream together the butter, cream cheese, and sugars until smooth. Add in the vanilla and egg and beat until well combined.
  3. Gradually add in the flours, starch, salt, and soda until just combined. Fold in the m&ms and chocolate chips.
  4. Roll the dough into balls and place on baking sheet.
  5. Bake for about 10-11 minutes.
