So I’ve definitely talked about these cookies before and previously posted them before here. However, I somehow missed posting the recipe way back then and finally decided that it was time to share this magical cookie. I got this recipe from my aunt on a little recipe card that looks like it’s been used and abused because it’s been through so much in the kitchen. It has a vanilla drop in one corner, grease from a cookie dough crumb that fell on it years ago, and smudges here and there. You can always tell the best cookie recipes just by a simple glance at the condition of the recipe card.

My aunt has been making this cookie for years. It’s my dad’s personal favorite cookie and it’s the one that he requests the most. They’re called everything cookies because it really does have everything in it. There is usually coconut included in the batter, but I couldn’t find any on hand to include with this batch so I omitted it. But of course, the moment my dad took one bite out of the cookie, he immediately noticed something was wrong– no coconut! Nothing gets by him.. especially after he’s been eating this cookie for numerous years. Shucks.

The cookie itself has a crumbly texture and tends to fall apart while melting in your mouth. Every add-in is essential for this cookie and I wouldn’t leave anything out of it. It’s different from other cookies because it involves the use of vegetable oil on top of butter. Don’t let the long list of ingredients scare you, they’re really easy and worth every minute to make!

Ingredients

  • 1 cup butter
  • 1 cup white sugar
  • 1 cup brown sugar (unpacked)
  • 3/4 cup vegetable oil
  • 1 egg
  • 1 cup quick quaker oats
  • 1 cup corn flakes
  • 1/2 cup chopped nuts
  • 1/2 cup coconut flakes
  • 3 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1 tsp salt
  • 1 tsp vanilla

Directions

  1. Preheat oven to 325 degrees.
  2. Mix flour, baking soda, cream of tartar, and salt. Set aside.
  3. Cream butter and both sugars. Add oil, mix. Add egg, mix.
  4. Add oatmeal then add dry ingredients to mixture. Blend well. Add coconut flakes, nuts, corn flakes, and vanilla.
  5. Drop by spoonfuls, press slightly with a fork.
  6. Bake for 15-18 minutes or until brown.
** this recipe makes 4 dozen cookies, so feel free to cut it in half!

Texas Governor’s Mansion Cowboy Cookies

As you may or may not know, every First Lady has a unique dessert recipe that they share with the public. At my work, we sell a book called Presidential Cookies. Each page gives a summary about every President and their First Lady, along with one or two of their favorite recipes. Fun, right? The only sucky part about the book is that the pictures included are terrible! No offense, but every picture is taken on the same plate– same scene– same ol’ dim lighting. I especially love cookbooks with great pictures of each recipe, so I wasn’t a fan of the visuals in this one.

It’s funny because you can tell how much the cookies have improved from the 1700’s. They start out with three ingredients and gradually increase as time goes on. I chose to try one a bit closer to our time period, one from Laura Bush. To be honest, a coworker baked them and brought them into work. They were so good that I had to bake some for myself. I opted to make them smaller rather than putting 1/4 cup of dough into each cookie. I also omitted the coconut, because I can always do without that. These cookies would be easy to sub some ingredients into depending on your liking.. Just take out one and replace with another! Try them for yourself!

Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1 1/2 cups (3 sticks) butter, at room temperature
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups packed light-brown sugar
  • 3 eggs
  • 1 tablespoon vanilla
  • 3 cups semisweet chocolate chips
  • 3 cups old-fashioned rolled oats
  • 2 cups sweetened flake coconut
  • 2 cups chopped pecans (8 ounces)
  • Directions

    Prep Time: 25 minutes
    Bake Time: 17 to 29 minutes
    Yield: About 3 dozen cookies (see note below)

    1. Heat oven to 350 F.
    2. Mix flour, baking soda, cinnamon and salt in bowl.
    3. In 8-quart bowl, beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars; beat to combine, 2 minutes.
    4. Add eggs, one at a time, beating after each. Beat in vanilla.
    5. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.
    6. For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
    7. Bake in 350 F oven 17 to 29 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies from rack to cool.

    Note: For 6 dozen small cookies, use 2 tablespoons dough for each. Bake at 350 F for 15 to 18 minutes.

    Samoas

    Mmm my favorite. So I’m going to another one of my bf’s sister’s baby shower and was trying to figure out what kind of cookie to bake to bring with me. When I went grocery shopping yesterday, there were girl scouts in front of Pavillions. I got really excited in hopes that they were selling girl scout cookies, but thought to myself… girl scout cookie season only happens once a year! One of the girls standing in front of the door from the troop happened to be one of the kids that went to the Boys & Girls Club, so I knew her (Hah, it’s hard to go anywhere in my town without knowing one of the kids now after working at the BGC for 5 years). I asked her what they were selling and she responded with, “Gifts.. for teachers.” Interesting. They should sell girl scout cookies year round, I’m sure they’d make more money that way.

    Anyways, since I saw the girl scouts, I decided to make girl scout cookies because they surely weren’t selling any. Homemade Samoas it is!
