Day 4: Double Chocolate Chip Cookies, because one chocolate is never good enough. It’s truly Christmas over at my house.. the Christmas tree is lit, I’m bundled up in blankets, and “Love Actually” is playing on my T.V. Oh, I’m such a sucker for this movie. The people, the love stories, the scandalousness, the heartbreaks… I can’t handle it. I’ve seen it at least twenty times and it’s still good.

A plate of cookies and a tall glass of milk are the perfect addition to Christmas movie watching. I ate a cookie the size of my face yesterday and couldn’t have been happier. Cookies can do that to you, you know. Calories don’t count in December (or the end of November).

I admit that I cheated a bit on these cookies because I used the recipe from my favorite chocolate chip cookies and added white chocolate chips to the mix. A brand new cookie with an old recipe, so you know these are already good.

You could sub all of the milk chocolate for white for those that are anti-chocolate. Yes, those people exist and I totally don’t judge! There are a lot more white chocolate lovers out there than you think.

Day 4: Double Chocolate Chip Cookies

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 1 cup semisweet chocolate chips
  • 1 cup white chocolate chips

Directions

  1. Sift together the flour, baking soda and salt; set aside.
  2. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon.
  3. Refrigerate the dough for at least an hour. When it’s time, Preheat the oven to 325 degrees F (165 degrees C).
  4. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
  5. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Day 1: Turtle Chip Cookies

Did you think for a moment that I forgot about my usual 12 days of cookies? Because I did. How can it be December already? I feel like we barely finished last year’s 12 days of cookies!

This one’s a great one to start with… caramel, pecans, and chocolate all wrapped up in one buttery dough. This is one rich cookie.

Usually, turtle chip cookies and ice cream tend to have a chocolate base. Since I prefer vanilla over chocolate, these cookies won me over. The chocolate chips was enough chocolate for this gal.

These cookies have the perfect crinkle on top and turn a gorgeous shade of golden brown.

Turtle Chip Cookies

Ingredients

  • 3/4 cup (1 1/2 sticks) butter softened
  • 1¼ cups brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2¼ cups all purpose flour
  • ¾ cup chocolate chips
  • ½ cup caramel bits
  • ½ cup pecan pieces

Directions

  1. Preheat oven to 375˚
  2. Beat together butter with sugars until fluffy. Add vanilla, egg and egg yolk.
  3. Gradually mix in the baking powder, baking soda, salt, and flour.
  4. Add flour and mix until dough comes together and everything is well incorporated. Stir in chocolate chips, caramel bits, and pecan pieces.
  5. Scoop cookie dough onto baking sheets and bake for about 12 minutes or until edges are lightly brown. Let cool for about 5 minutes on tray and then move to cooling rack.

Double Chocolate Cake Mix Cookies

It’s officially time for holiday baking! I la-la-love all of the extra holiday items that pop up on the shelves at the end of the year. There are so may desserts just begging to be made. I’ve always been a fan of the Pillsbury® products and they certainly don’t disappoint in the holiday department.

Just look at their adorable sprinkles from the Funfetti Vanilla Frosting. The red and green are vibrant, wonderfully shaped, and hold up well in a 350 degree oven. I love the contrast that the bright colors bring against the Devil’s Food Cake Mix. Wouldn’t they look great on a plate for Santa?

You can doctor up this cake mix into cookies and no one will ever know that they’re not 100% homemade! It’ll be our little secret. After all, we need all the time we can get during the holiday season.

These cookies are full of chocolate flavor. I’d recommend using an oil that you like the taste of. I used extra virgin olive oil and the taste came through pretty easily. Perhaps a vegetable oil would be more tame? Or a coconut oil if you’re a fan of coconut flavor?

I just rolled the tops in the sprinkles since decorating the bottom of a cookie seemed pointless to me. Who looks at the bottom of a cookie? I’m too busy gobbling it down. Here are some of the other Pillsbury products that you can find this holiday season:

Double Chocolate Cake Mix Cookies

Ingredients

  • ½ cup butter
  • 1 egg
  • 1 packet instant coffee dissolved in 2 tablespoons water
  • 1 tablespoons oil
  • ½ teaspoon vanilla
  • 1 box Pillsbury Devil's Food cake mix
  • 1 cup chocolate chips
  • 1 cup white chocolate chips
  • sprinkles (optional)

Directions

  1. Preheat the oven to 350 degrees.
  2. Beat the butter until smooth. Add the egg and beat again until incorporated. Add the coffee, oil, and vanilla and beat until combined.
  3. Add the cake mix in batches and beat slowly after each addition until just combined.
  4. Stir in the chocolate chips and white chocolate chips. Roll into balls and roll the top into the sprinkles, if using.
  5. Place on a baking sheet and bake for 7-10 minutes,
