The holidays and food come hand in hand. I mean, who can you blame? Food is always available and the center of attention when it comes to family and friend gatherings. There’s endless appetizers, a variety of main courses, and desserts for people that don’t even like sweets. It brings people together and puts a smile on everyone’s face because let’s face it, who doesn’t love food? Sometimes, however, it can be a little too much.

That’s where di∑gel comes in. di∙gel is an all in one solution for people in need of digestive relief. It acts as both an anti-gas and antacid in one, so you don’t have to worry about the other. Do you suffer from indigestion or heartburn a lot? I’ve never really had any problems with any of that until I started flying. Man, does flying mess up your schedule and your body. Ask any flight attendant, I’m sure they can relate (although they might not admit it).
This milanesa (also known as breaded chicken) may be pan fried, but it’s so delicious that it doesn’t matter. Keep some di∙gel on hand if you don’t do well with fried things. That way, you can eat and not worry about how you’re feeling after.

Milanesa and a Special Appearance by di∙gel

Ingredients

  • 4 chicken breasts, pounded thin (I didn't do this due to lack of time and tools, but it cooks a lot faster when it's done)
  • 2 eggs, scrambled in a bowl
  • 1 cup italian bread crumbs
  • enough oil to cover the bottom of a pan

Directions

  1. Heat the oil in the pan over medium heat.
  2. Dip the chicken breasts in the egg and then evenly coat with the bread crumbs. Repeat for all chicken breasts.
  3. Pan fry the chicken for about 3-4 minutes on each side. The thicker they are, the longer they'll take to cook.
  4. Remove and place on a plate lined with paper towels to drain the excess oil.
  5. Optional: Serve with lemon squeezed on top. It's the best!

Crockpot Honey Chicken

On my flight the other day, I had two active military men sitting in main cabin. One was in full uniform and the other was wearing a military t-shirt. We got everyone boarded pretty quickly, and we still had four open seats in first class.

One of the men sitting in first class asked us if we could move the two military men from main cabin to first class and he’d pay for their upgrade fee to thank them for their service. I just about died from the sweetness. There are still good people out in the world!

When we went to go tell the military men that another passenger wanted to upgrade them to first class, you can tell by their immediate reaction that they were shocked. We even had to repeat it twice before it really hit them. They were so grateful and thankful for the random act of kindness that it made me really appreciate the goodness in the world. As cheesy as that may sound, I will admit I even got a little teary eyed when it happened.
Ah yes, another crockpot recipe for me. Can I be a lazier cook? I blame it on my in-the-middle-of-the-day work schedule. I normally don’t get off work until 6PM, meaning that leaves about five minutes for me to make and get dinner ready from the time I get home. Crockpots make my life so. much. easier. I get to cook while being away from home! Low maintenance, carefree recipes are my achilles heel. This recipe comes from Table for Two Blog and tastes great over white rice.

Crockpot Honey Chicken

Ingredients

  • 1 lb. boneless chicken breasts
  • Salt and pepper
  • 1 cup of honey
  • 1/2 cup of low sodium soy sauce
  • 1/4 cup ketchup
  • 2 tbsp. vegetable oil
  • 2 cloves of garlic, minced
  • 1/2 cup diced onion
  • 1/4 tsp. red pepper flakes
  • Cornstarch

Directions

  1. Place the chicken breasts into the bottom of the crockpot. Sprinkle salt and pepper on top.
  2. In a separate bowl, mix together the honey, soy sauce, ketchup, oil, garlic, onion, and red pepper flakes. Evenly pour over the chicken in the crockpot.
  3. Cook on low for 3-4 hours or high for 1 1/2-2 1/2 hours. When done, remove chicken and cut into chunks. Before putting the chicken back, whisk the cornstarch with some water and whisk it into the sauce to thicken it up. Put the chicken back in and evenly coat with the sauce.

Crockpot Chicken Barbeque

You know how there are some things that you can’t do, no matter how hard you try? Well, for me, it’s putting in eyedrops. I recently went to the optometrist and she asked me if I noticed that the inside of my eyes were yellow. What? No. She then told me the name of the condition, something with three or four syllables and ends in a “-tion.” Don’t quote me, I could be wrong with that. I was too busy focusing on the “yellow eyes” part.

She went on further and explained to me that it wasn’t anything serious, just a side effect from flying. Apparently, the air and being in a plane a lot causes my eyes to dry out. Of course, I’m freaking out because I have dehydrated eyeballs. There are a lot of side effects of flying frequently and I need to do everything I can do minimize the harm.

My optometrist then recommend using certain eyedrops while in the air, which would prevent my eyes from turning yellow. I immediately went straight to Target and bought some eyedrops.

I brought them along on my next trip and tried to use them. Boy, was that a disaster. I learned that I’m the worst at putting eyedrops in. After eight failed attempts, a wet forehead, and waterfalls streaming down my cheeks, I gave up.

How in the world do people do it so easily? I have terrible aim and immediately shut my eye if I know a drop is on its way down. When I got home, I was determined to put eyedrops in by myself.

… and guess what? I did it!! The bad news is that I can only do it laying down. Putting in eyedrops while standing up is nearly impossible for me. I guess I’ll just have to keep working on it and keep my fingers crossed.

Here’s another simple as a pimple crockpot recipe. I served it with broccoli cheese orzo casserole bake, but it’d be great with plain ol’ rice. I also used frozen chicken breasts and they turned out fine, so feel free to use them if that’s all you have on hand. From Stick a Fork In It.

Crockpot Chicken Barbeque

Ingredients

  • 4-6 pieces boneless skinless chicken breasts
  • 1 bottle BBQ sauce (sweet baby ray's all the way!)
  • 1/4 c vinegar
  • 1 tsp. red pepper flakes
  • 1/4 c brown sugar
  • 1/2 - 1 tsp. garlic powder

Directions

  1. Place chicken into the crockpot.
  2. Mix the BBQ sauce with all of the other ingredients. Pour evenly over the chicken.
  3. Cook on LOW for 4-6 hours.
