Pillsbury Funfetti Chocolate Chip Scones and a Giveaway

We’ve got a birthday in the house… Funfetti is celebrating its 25th birthday this year and they’ve released a festive line to celebrate their special day!

There are four new frosting colors introduced: aqua blue, bold purple, hot pink, and vibrant green vanilla. Each come with their own unique sprinkles to accommodate the fun colors.

Opening a can, you immediately notice just how bright the color is. There’s nothing faint about it. The bright color would be great for celebrating kids’ birthdays.

One way of incorporating Funfetti into your daily routine is by making breakfast instead of dessert from the mix. You don’t have to eat dessert every day, but you do have to eat breakfast. Can you imagine waking up to these scones in the morning? I’d wish it was my birthday every day!

The Funfetti line will bring out the kid at heart in every adult. It’s a great reminder of how we should celebrate every birthday, regardless of age. A couple of easy ways to do that are:

  1. Add color! With bold and festive colors, your mood is instantly lifted.
  2. Embrace your birthday. Never be ashamed of how old you’re getting, but be proud for another year of goals accomplished.
  3. Say yes to dessert. There’s no such thing as people who don’t like dessert. They’ve just never tried the right sweets.

These scones came out perfect. My boyfriend preferred them without the frosting, but I’m all about the frosting and extra sprinkles on top. The extra crunchiness of chewing on sanding sugar is what I long for. As for the scone itself, it’s the moistest scone I’ve ever had. It’s not overwhelming sweet and can be eaten bare if desired.

I’ve used Pillsbury cake mixes and frostings for as long as I’ve lived, so this special birthday line doesn’t disappoint. The sprinkles always come out just as bold and colorful after being baked, which is an important trait when it comes to presentation.

Pillsbury Funfetti Chocolate Chip Scones

Ingredients

  • 1 1/4 cup Pillsbury Funfetti cake mix
  • 1 1/4 cup AP flour (plus some for dusting)
  • 1 stick of butter, cubed
  • 1 cup non fat milk
  • 1/4-1/2 cup chocolate chips, depending on your preference
  • 1 can of Pillsbury Bold Funfetti frosting

Directions

  1. Preheat oven to 400 degrees. Line a baking pan with parchment paper or silpat.
  2. In a mixing bowl, mix together the cake mix, flour, and cubed butter until crumbly.
  3. With the mixer on low, slowly pour in the milk until the dough comes together. Immediately turn off the mixer once it does. You don't want to over mix!
  4. Dust a small handful of flour over the dough, and with well floured hands, form the dough into a ball and remove it to the prepared baking sheet.
  5. Gently flatten the dough to about an 8" diameter and use a greased knife to cut the circle into 8 wedges. (If this is too much work, you can also just form your own shaped scones on the pan. That's what I did... way less time consuming!)
  6. Make sure you leave enough room between the wedges for them to rise and spread-- they puff up quite a bit.
  7. Bake for 20 minutes.
  8. Let completely cool and frost with Funfetti frosting.

Balsamic Roast Beef and RiceSelect™

Let’s talk about rice for a second. Growing up in a Vietnamese household, I ate rice every. single. day. I didn’t even know that not eating rice for meals was an option. Even if we had a noodle dish prepared for dinner, there was cooked rice waiting just in case any of us wanted to eat it instead. I remember my dad even putting scoopfuls of rice into the broth after he finished eating all the noodles. rice-8

I never paid much attention to the brand or kind of rice we ate at our house. We always had 25 pound bags in our pantry so we’d never run out and my parents always bought the same kind. I guess they already figured out the best brand and became very loyal to it. It was the only rice we knew and loved. As I grew older, I branched out and ate out more. I was introduced to Indian rice, Thai rice, Spanish rice, and my personal favorite: Japanese rice. I saw how it was served with main dishes, in a thick soup such as curry, and even rolled up to make sushi.

Rice is a versatile grain that comes in many different forms, textures, and tastes. It’s a staple in many cultures. Now that I’ve had to start buying and cooking my own rice, I’ve been open to more types and brands. I’ve also been experimenting more, seeing how I can add rice differently into dishes.

Balsamic Roast Beef

Ingredients

  • 1 3-4 pound boneless roast beef (chuck or round roast)
  • 1 cup beef broth
  • ½ cup balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • ½ teaspoon red pepper flakes
  • 4 cloves garlic, chopped
  • 3 cups of cooked RiceSelect Jasmati rice

Directions

  1. Place beef at the bottom of your slow cooker.
  2. Mix the rest of the ingredients in a measuring cup. Pour over the beef.
  3. Cook on high for 4-5 hours or low for 6-8 hours.
  4. Once done cooking, shred the beef with two forks and serve with some sauce on top.
  5. Serve with cooked rice.

Basil Pesto

Pesto. It’s a staple in my kitchen at all times. I put it on everything: sandwiches, tortillas, pasta, and bread. I don’t know how people ever live without it. It’s one of the few things that are green, but my DB will still eat.

I got a great deal on this KitchenAid food chopper a while ago. I posted the deal on my FB fan page, so hopefully you got to snatch it when the deal was live. I’ve never owned a food chopper in my life, so this little gadget really blew my mind when I first used it. It makes mashing and pulverizing ingredients so. dang. easy. Make your own pesto? Done. Make your own hummus? Without a sweat.

It even has a spot on the bottom where you can wrap your cord and tuck it away. No messes in my cabinets!

Making your own pesto is all about personal preference. Some like it really cheesy, others like it really garlic-y. Toss more of what you want and taste as you go. When you’ve hit that sweet spot, stop!

Basil Pesto

Ingredients

  • 2 cups basil
  • 1 tablespoon minced garlic
  • 1/2 cup grated parmesan cheese
  • 1/3 cup olive oil
  • 1 tablespoon pine nuts

Directions

  1. Pulse all of your ingredients in a food chopper until smooth. Store in an airtight container in the refrigerator.
