Oreo Chunk Cookies

My kids are obsessed with Oreos. Obsessed as in they’ll open up every cookie and eat all the frosting before giving me back the broken chocolate cookie parts.

I don’t blame them. I would’ve done the same thing if I was four years old. Now, I know better. The crispy chocolate cookie part is my jam. Put us together and we’ll finish an entire Oreo cookie. That’s what parents are for– to eat all the things their kids don’t eat.

These were a teeny tiny bit sweet for me, but I don’t think you can do much about that making a cookie with cookies in it. The texture was great. The edges were crispy with a chewy center. I’d make them again!

Soft Peanut Butter Cookies

For some reason, I’ve been craving peanut butter cookies for a while. I wanted something that I can whip up in ten minutes while the kids were occupied in the play room and not fighting over Rapunzel. Success! I finished making the dough before I heard a peep from the girls.

I didn’t chill the dough and these turned out just fine. I normally ALWAYS chill the dough. I had these in the oven so quick that Thea came out of the play room asking, “Mama, what’s that smell?”

I made half rolled in sugar and put M&M’s on the other half because…. kids. Of course, Thea just picked all the M&M’s out as she ate the cookie and was done after there were no more M&M’s.

This is a great, solid recipe from Live Well Bake Often. These cookies are soft, hold together well, and light. I actually like them as is– no sugar or candy. They’re pretty sweet so you can omit rolling them in sugar if you want.

Day 12: Flourless Chocolate S’mores Cookies

Day 12 of my 12 days of cookies; Flourless chocolate s’more cookies. I’m squeezing this last cookie in right in the nick of time. I made these today, but I was a little short on powdered sugar so my cookies didn’t come out quite as tall.

The taste was all there, though. I have to add confectioners sugar to my grocery list and remake these cookies ASAP.

Day 12: Flourless Chocolate S’mores Cookies

Ingredients

  • 3 cups confectioners' sugar
  • 2/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 2 to 4 large egg whites, at room temperature
  • 1 tablespoon vanilla extract
  • 1 1/2 cups bittersweet chocolate chips
  • 1/4 cup graham crackers, broken into pieces plus extra for topping cookies
  • 1/4 cup mini marshmallows, cut in half plus extra for topping cookies (I didn't cut mine)

Directions

  1. Preheat oven to 350 degrees F. Line two baking sheets with Silpats.
  2. Using a stand mixer, whisk together confectioners' sugar, cocoa powder and salt. Add two egg whites and vanilla. If batter seems too thick, add another egg white until batter is thick, but moist. If it's too runny, add more powdered sugar.
  3. Gently fold in chocolate chips, graham cracker pieces, and mini marshmallows.
  4. Place about 1 1/2 tablespoons of batter per cookie on the prepared baking sheet. Top each cookie with additional graham cracker pieces and marshmallows.
  5. Bake for 10 minutes. Let cookies cool completely before removing from the cookie sheet.
